Hawaiian cheesecake salad is a delightful way to enjoy fresh fruits like pineapples and mangos all rolled into a creamy cheesecake filling. Nothing says summer salad quite like a tropical fruit side dish so get out your fork and let's dig in to today's recipe.

1-8 oz package cream cheese (softened)
1 package cheesecake pudding (substitute vanilla if unavailable)
1 cup vanilla creamer
2 cups mango (approximately 2)
2 cups mandarin slices
1-15 oz can pineapple tidbits (drained)
2 cups kiwi slices (approximately 5)
2 cups strawberries (1lb package)
2 bananas (chopped)
1 tablespoon lemon juice

Steps:

  • Place the softened cream cheese in a bowl and mix until smooth with a hand or stand mixer.
  • Add the pudding mix and combine fully.
  • Add the creamer to the cream cheese mixture approximately 1-2 Tablespoons at a time to ensure a smooth consistency. (Adding it all at once will cause the mixture to be lumpy.)
  • Clean and cut all fruit except the bananas into small, bite-sized pieces.
  • Combine the fruit with the cream cheese mixture.
  • Cut up the bananas and toss with the lemon juice to prevent browning. Gently add to the fruit salad.
  • Chill until ready to serve.

30 oz can fruit cocktail, drained
20 oz can pineapple tidbits or chunks, drained
8 oz can mandarin oranges, drained
10.5 oz package miniature marshmallows
16 oz Cool Whip
8 oz Cream Cheese, room temperature

Steps:

  • Drain your fruit cocktail, pineapple chunks, and mandarin oranges thoroughly (We drain ours hours before or take a few paper towels to get the juice to a minimum)
  • With a hand mixer, mix your Cool Whip and room temperature cream cheese together in a large mixing bowl until it makes a smooth mixture.
  • Combine the cream cheese mix with the canned fruit you've drained.
  • Fold in your mini marshmallows into the whipped topping and fruit.

1/3 cup fresh lime juice
1 1/2 tablespoons honey
3/4 teaspoon ground ginger or minced fresh ginger
6 cups of your favorite fresh fruits, such as:
Bananas, peeled and sliced
Blueberries
Pineapple, cut into bite-size pieces
Blackberries
Raspberries
Mango, peeled and cubed
Strawberries, stems removed and berries cut into halves
Kiwi, peeled, sliced, and each slice cut in half
Oranges, peeled and cut into chunks

Steps:

  • For the dressing: Mix the lime juice, honey and ginger in a small bowl.
  • For the fruit salad: Mix the fruit in a large salad bowl. Pour the dressing over the fruit and stir. Serve immediately if you use bananas.
