Hash Browns image

Hash browns are a classic breakfast item for a reason. It benefits here from fresh spices and a shallot.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Number Of Ingredients 5

4 Yukon gold or russet potatoes (2 pounds), peeled
1 large shallot, peeled
3 tablespoons fresh herbs, roughly chopped, such as parsley, thyme, and rosemary
Coarse salt and freshly ground pepper
4 tablespoons canola oil

Steps:

  • Preheat oven to 175 degrees. Have ready a baking sheet lined with paper towels. Grate potatoes and shallots on large holes of a box grater or with a food processor fitted with the grating blade. Transfer to a piece of cheesecloth or clean dishcloth; squeeze out as much liquid as possible. Place in a bowl, add herbs, season with salt and pepper, and stir to combine.
  • Heat 2 tablespoons of oil in a large nonstick skillet over medium-low heat. Drop 1/4 cup of the mixture into the skillet; gently press to form a patty about 2 1/2 inches in diameter. Repeat until there are six patties in the skillet. Cook until deep golden brown, about 8 minutes on each side. Remove from skillet; transfer to prepared baking sheet. Place in oven to keep warm. Wipe out pan; pour in remaining 2 tablespoons oil. Repeat process with remaining potato mixture; serve.

Categories     Side Dish     Potato Side Dish Recipes     Hash Brown Potato Recipes

Time 35m

Yield 4

Number Of Ingredients 6

2 medium russet potatoes, shredded
½ medium onion, finely chopped
¼ cup all-purpose flour
1 egg
1 cup oil for frying, or as needed
salt and pepper to taste

Steps:

  • Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
  • Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
  • Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

  • If you don't have leftover baked potatoes, you can dice your potatoes into 1/2" chunks and cook on the skillet, this will just add about 15-20 minutes to this process. You can also wash, poke holes in your potatoes and cook them in the microwave. Cook until you can poke the potato with a fork, it is soft but not mushy. Let the potato cool enough to handle it, dice it up and continue with the recipe.
  • To make homemade bacon bits, just cut the bacon into 1/2" pieces with kitchen scissors. Cook in a skillet on medium heat and stir occasionally until the bacon is slightly crispy and golden. Using a slotted spoon, take the bacon bits out of the frying pan and let them cool on a plate lined with paper towels.
  • It's best to use a non-stick pan for this recipe because you won't need to use quite as much oil. Dice the onion and cook in 2 Tablespoons of bacon grease, butter, or oil until they are slightly golden. Be sure to cook your onions until they are translucent before adding your potatoes.
  • Add the potatoes, garlic, and diced red pepper too. Mix until the potatoes are coated in the oil. Salt and pepper the potatoes, about 1/2 tsp of each.
