HOMEMADE HASHBROWNS
This recipe is a really nice way to use up leftover mashed potatoes. If you like you could fry the hashbrowns up and then freeze them in airtight bags. You can pop them in the toaster to reheat them! An easy breakfast!

Steps:
- Beat egg in a medium size mixing bowl. Mix egg and onion with mashed potatoes. Add salt and pepper.
- Heat olive oil in a medium size frying pan, over a medium heat. Scoop the potato mixutre into the frying pan in 4 inch circles, pat with a spatula to flatten the mounds to approximately 1/2 to 1 inch thick. Cook until bottom is browned. Flip the patty over and brown on the other side.

HASH BROWNS
Hash browns are a classic breakfast item for a reason. It benefits here from fresh spices and a shallot.

- Preheat oven to 175 degrees. Have ready a baking sheet lined with paper towels. Grate potatoes and shallots on large holes of a box grater or with a food processor fitted with the grating blade. Transfer to a piece of cheesecloth or clean dishcloth; squeeze out as much liquid as possible. Place in a bowl, add herbs, season with salt and pepper, and stir to combine.
- Heat 2 tablespoons of oil in a large nonstick skillet over medium-low heat. Drop 1/4 cup of the mixture into the skillet; gently press to form a patty about 2 1/2 inches in diameter. Repeat until there are six patties in the skillet. Cook until deep golden brown, about 8 minutes on each side. Remove from skillet; transfer to prepared baking sheet. Place in oven to keep warm. Wipe out pan; pour in remaining 2 tablespoons oil. Repeat process with remaining potato mixture; serve.

- Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
- Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
- Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

- Whisk together butter and oil in a small bowl. Reserve 2 teaspoons of butter mixture for later. Heat remaining butter mixture on 1 side of a large nonstick skillet over medium-high. Place hash browns on buttered side of skillet in a round shape about 5 inches wide. Cook, undisturbed, about 5 minutes, until browned and crisp around edges.
- Flip hash browns, and cook, undisturbed 4 to 5 more minutes, until other side is browned and crispy. Meanwhile, add reserved butter mixture to other side of skillet; add onion. Cook, stirring often for 2 minutes. Add ham to onion, and cook 2 minutes. Add onions and ham to top of cooked hash browns. Top with cheese slice; turn off heat. Let stand until cheese is melted; serve immediately.

- If you don't have leftover baked potatoes, you can dice your potatoes into 1/2" chunks and cook on the skillet, this will just add about 15-20 minutes to this process. You can also wash, poke holes in your potatoes and cook them in the microwave. Cook until you can poke the potato with a fork, it is soft but not mushy. Let the potato cool enough to handle it, dice it up and continue with the recipe.
- To make homemade bacon bits, just cut the bacon into 1/2" pieces with kitchen scissors. Cook in a skillet on medium heat and stir occasionally until the bacon is slightly crispy and golden. Using a slotted spoon, take the bacon bits out of the frying pan and let them cool on a plate lined with paper towels.
- It's best to use a non-stick pan for this recipe because you won't need to use quite as much oil. Dice the onion and cook in 2 Tablespoons of bacon grease, butter, or oil until they are slightly golden. Be sure to cook your onions until they are translucent before adding your potatoes.
- Add the potatoes, garlic, and diced red pepper too. Mix until the potatoes are coated in the oil. Salt and pepper the potatoes, about 1/2 tsp of each.
