GREAT GOULASH: GROUND TURKEY PAPRIKASH AND MACARONI



Great Goulash: Ground Turkey Paprikash and Macaroni image

1/2 pound elbow macaroni
Salt
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 tablespoon butter
1 package, 1 1/3 pounds average weight, ground lean white turkey
2 to 3 cloves garlic, chopped
1 medium onion, chopped
1 red bell pepper, seeded and chopped
2 tablespoons sweet paprika
1 teaspoon ground cumin
1 teaspoon dried marjoram
Black pepper
1 cup chicken stock, available in small 8 ounce paper containers on soup aisle of market
1 cup sour cream
2 tablespoons chopped flat-leaf parsley
2 tablespoons chopped dill

Steps:

  • Bring a pot of water to boil for pasta. When it comes to a boil, add pasta and salt to season the cooking water. Cook pasta 6 minutes to al dente.
  • While water comes to a boil and pasta cooks, heat a deep skillet over medium high heat. Add extra-virgin olive oil then butter then ground meat. Break up meat and crumble, 2 to 3 minutes. Add garlic, onions, red bell peppers and seasonings to the turkey. Cook 5 or 6 minutes then add chicken stock and sour cream to the pan. Bring to a bubble and reduce heat to low. Add cooked pasta and stir. Let pasta absorb some sauce, a minute or so. Adjust seasonings and serve. Garnish the prepared dish with chopped parsley and dill.

This is Rachael Ray's recipe, and it is quite tasty! I am posting it the original recipe, but I used a full box of squash for only half the recipe, reduced the oil significantly, used 1% milk, and added sage rather than nutmeg, as I am not a fan of nutmeg. It still has a very creamy texture, without all the cheese of your regular mac and cheese.

1 lb macaroni
2 tablespoons extra virgin olive oil
1 medium onion, finely chopped
3 garlic cloves, finely chopped
2 tablespoons fresh thyme, finely chopped
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup chicken stock
1 1/2 cups whole milk
salt & freshly ground black pepper
nutmeg, grated to taste
1 (10 ounce) box frozen butternut squash, defrosted
2 -3 dashes hot sauce, a few dashes
1 cup parmigiano-reggiano cheese, grated
1 cup cheddar cheese, grated (sharp)
fresh parsley leaves, finely chopped
1 teaspoon sweet paprika

Steps:

  • Bring water to a boil, season with salt and cook macaroni to al dente.
  • Preheat broiler and place rack in middle of the oven.
  • Heat the extra-virgin olive oil in a sauce pot over medium heat, saute onions and garlic until soft, 6 to 7 minutes and stir in the thyme.
  • Scoot onions off to side of pan and melt butter, whisk flour into butter and combine whisk 1 minute then whisk in stock and milk, season sauce with salt, pepper and nutmeg, and cook until thickened, about 3 to 4 minutes.
  • Stir in butternut squash and a few dashes hot sauce. Reduce heat. When sauce comes to a bubble, stir in Parmigiano. Combine the sauce and macaroni, transfer to a casserole dish and top with shredded yellow Cheddar, chopped parsley and paprika. Brown the macaroni under broiler, 4 to 5 minutes until brown and bubbly.

3 tablespoons canola oil
Salt
1 cup cannolicchi pasta
1/4 cup white wine
1/4 cup seafood stock
1 sprig fresh thyme
3/4 cup dry porcini mushrooms, re-hydrated in hot water
1/4 cup shiitake mushrooms
1 to 2 tablespoons butter
1 medium shallot, diced fine
1/2 pint heavy cream
1/2 pound fontina cheese
1/2 pound tomme au marc du jura cheese
1 dash pepper
1 lobster
2 ounces micro-collard greens
6 fresh flat-leaf parsley leaves

Steps:

  • Bring a large pot of water to a boil with the oil and salt. Add pasta and cook until al dente, about 12 minutes. Pour water off pasta into colander and rinse with cool water.
  • Combine white wine, seafood stock, and thyme, reducing in a medium saucepan. Remove thyme and set aside.
  • In medium saucepan, saute porcini and shiitake mushrooms in butter, until soft. Add shallots and cook until translucent, approximately 2 minutes. Add cream and reduce by half. Add the cheeses and cook until just melted. Combine with other sauce. Remove from heat and season with salt and pepper.
  • Bring water to boil and add whole lobster for approximately 12 minutes. Then place in ice water to cool. Remove the lobster from the shell.
  • Add the pasta to sauce, toss to coat and plate. Warm lobster tail in oven and slice over top of pasta. To serve, top with micro collard greens and parsley.

I saw this on the 10/25/08 episode of 30 Minute Meals and just had to try it. It was WONDERFUL! Even my husband who isn't the biggest fan of squash in general really enjoyed this. The recipe calls for a 10oz box of frozen butternut squash, but I couldn't find that ANYWHERE I looked so I just bought a butternut squash, halved it, seeded it, and roasted it in a 350 degree oven for about an hour and a half and then peeled it and pureed it. I used about a quarter of it for this recipe, and the rest I'll reserve for butternut squash soup this fall. I thought about using jars of butternut squash baby food, but thought better about it for my first attmpt at this, but after pureeing the squash with a little bit of water, I'm sure baby food would work out just fine in this if you're okay with that.

1 lb macaroni
2 tablespoons extra virgin olive oil
1 medium yellow onion, finely chopped
3 garlic cloves, finely chopped
2 tablespoons fresh thyme, finely chopped
3 tablespoons butter
3 tablespoons flour
1 cup chicken stock or 1 cup vegetable stock
1 1/2 cups whole milk
salt, to taste
pepper, to taste
nutmeg, to taste
1 (10 ounce) box frozen butternut squash, defrested (see description for details) or 1/4 medium butternut squash, roasted, seeded, and peeled (see description for details)
3 dashes hot sauce
1 cup parmesan cheese, grated
1 cup extra-sharp cheddar cheese, shredded
1 handful fresh parsley leaves, finely chopped
1 teaspoon sweet paprika

Steps:

  • Cook pasta according to package directions.
  • Preheat broiler
  • Heat the olive oil in a sauce pan over medium heat and saute onions and garlic until soft, about 6-7 minutes, stir in the thyme.
  • Scoot the onions off to the side of the pan and melt the butter.
  • Combine the flour and the butter, whisk about a minute in the pan.
  • Whisk in the stock and the milk and season the sauce with salt, pepper and nutmeg, cook until thickened about 3-4 minutes.
  • Stir in the butternut squash and a few dashes of hot sauce.
  • Reduce heat, when the sauce comes to a bubble add in the parmesan cheese and stir to melt.
  • Combine the sauce and the pasta and transfer to a casserole dish (9X13 works well) and top with cheddar cheese.
  • Place the dish under the broiler for about 3 minutes or until cheese is bubbling and browned.
  • Top with the chopped parsley and paprika to garnish.
  • Enjoy!

A variation of Chinese harvest moon cakes, I found this in "China : the culture" book. Very tasty and rich, so be careful! add more vanilla, if you so wish.

1 cup chopped whole almond
1/4 teaspoon salt

Steps:

  • Combine all ingredients in a large bowl. mix well.
  • roll desired sized balls with your palms and press them onto a cookie sheet. they not expand that much, so be specific.
  • bake at 350F for 13 - 15 minutes, depending on your preference.
