TACO HAMBURGER HELPER
This easy skillet meal is a healthy copycat of the box you can find at the grocery store! Taco Hamburger Helper recipe made with ground beef, brown rice, peppers, onions, salsa... the low carb way to enjoy your favorite taco dinner!

Steps:
- Saute ground beef, peppers, and onions in skillet until brown. Drain off fat and return to pan.
- Add in taco seasoning, water, and brown rice. Bring to a boil, then cover and simmer 5 minutes or until rice is tender.
- Top with salsa and shredded cheese, cover again and cook 2 minutes or until cheese is melted.
- Remove from heat and top with sour cream and crumbled chips.

Steps:
- 1. In a large skillet over medium-high heat, add beef and break it down into small pieces; season with salt and pepper. When half way cooked, add onions and continue cooking until meat is no longer pink and onions are softened, about 2 ½ to 3 minutes. Add garlic and sauté for 1 minute.
- 2. Add ketchup, tomato paste, mustard, hot sauce, taco seasoning, and re-season with salt and freshly ground black pepper; stir well. Add macaroni and pour in broth; stir well. Bring to a boil then reduce to medium-low, cover and simmer for 15 minutes or until macaroni is cooked through.
- 3. Add sour cream and stir well. Add cheese and stir until melted. Sprinkle on some chopped parsley and serve immediately. Serves 4

- In a large skillet cook the ground beef over medium heat until it's no longer pink and starts to brown. Drain off any excess fat, if needed. If using extra lean ground beef there won't be any excess fat to drain.
- Add the ketchup, mustard, hot sauce, onion powder, garlic, salt, pepper and stir everything together.
- Stir in the pasta and beef broth. Bring to a boil then turn the heat down. Cook for about 15 to 20 minutes or until the pasta is cooked through. Most of the sauce should have been absorbed as well.
- Stir in the sour cream then the cheeses and cook for another 30 seconds to a minute until the cheese melts.
