CHEESEBURGER-STUFFED ONION RINGS
Doughnut + cheeseburger + onion ring. With special sauce for dipping. Make so many people happy with these puffy golden cheeseburger-surprise onion rings.

Steps:
- Whisk together the ketchup, mayonnaise, mustard and pickle in a small bowl (this is the special sauce).
- Cut a 3/4-inch-thick slice off the ends of each onion. Peel and slice the onions into 1/2-inch-thick rounds. Separate the rings and set aside the 8 largest rings. Set aside another 8 rings that are about 1 inch smaller in diameter. (Reserve the remaining onion for another use.) Mix together the beef, cheese, 1/4 cup special sauce, 1 1/2 teaspoons salt and 1/4 teaspoon pepper in a medium bowl until combined.
- Put the large onion rings on a parchment-lined baking sheet. Pack a teaspoon of the meat mixture evenly around the inside of each ring, leaving a hole in the middle. Nest a smaller ring in the middle of each to create the shape of a doughnut. Freeze until completely hard, about 1 hour.
- Whisk together the milk, oil, baking powder, onion powder, egg, 1 cup flour and 1/2 teaspoon salt in a small bowl until smooth. Put the remaining 1/2 cup flour in another small bowl.
- Fill a large pot with 3 inches of oil and attach a deep-frying thermometer to the side. Heat the oil to 375 degrees F. Working in batches, dredge each stuffed ring into the flour, shaking off the excess. Then dip into the batter, letting any excess drip back into the bowl. Sprinkle with sesame seeds and carefully slip into the hot oil. Fry, turning once, until the crust is golden brown, puffed and crisp, 2 to 3 minutes per side. Return the oil to 375 degrees F after each batch.
- Transfer the cheeseburger onion rings to a paper towel-lined baking sheet. Serve with the remaining special sauce for dipping.
EASY BACON, ONION AND CHEESE STUFFED BURGERS
Wonderful stuffed burger that can be easily changed to suit different tastes. My kids who normally don't have onions on their burgers REALLY enjoyed these. We served with french fries and root beer floats!

- In a large mixing bowl, mix together the ground beef, salt, black pepper, barbeque sauce and garlic powder using your hands. Taking a small handful at a time (approximately 1/4 pound), shape into 12 patties. Lay patties out on a cookie sheet and cover with plastic wrap; place patties in the refrigerator.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown, about 5 minutes. Remove bacon from skillet with a slotted spoon and drain on paper towels. Turn the heat down to medium and pan fry the onions in the remaining bacon drippings until soft and translucent and just beginning to brown. Mix together onions and bacon in a small bowl.
- Prepare a grill or large skillet for medium heat.
- As the grill heats, pull beef patties out of the refrigerator; top 6 of the patties with 1- 1/2 tablespoons of the bacon and onion mixture each, and sprinkle with shredded cheese. Top each with one of the remaining patties and press the edges together to seal.
- Grill or pan fry the stuffed and sealed patties until cooked through, 2 to 3 minutes per side. Serve on hamburger buns with condiments of your choice.

This is a big hit with everyone in my family! My brother beggs me to come over and make it for him often. It is very filling and the leftovers heat up well wrapped in tin foil and heated in the oven.

Steps:
- Cut loaf of bread in half, lenghtwise and hollow it out, (save the crumbs).
- Brown hamburger and drain.
- Mix all ingredients except cheese slices in a LARGE frying pan.
- Simmer for 5 minutes.
- Stir in bread crumbs and fill shell with mixture.
- Cut cheese slices in half to make triangles and put on top.
- Bake for 5-8 minutes at 350 degrees to melt cheese.
BACON, ONION AND CHEESE STUFFED BURGER
Steps:
- Preheat grill to medium.
- In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.
ONION BURGERS
Early in the writing of this book, I struggled to get my ruminations on paper. Although I hesitate to call my temporary impasse writer's block, I can't imagine much worse. Words wouldn't come. And the ones that did weren't smart or engaging or funny. After an eternity of fretting, I began making burgers for lunch. My intent was to cook my way through the recipes I planned for the book. This onion burger was the first thing I tried. After 2 days of oniony repasts, the dark cloud lifted and the words came.

- Place a heavy skillet over medium-high heat. Leave it there for 5 minutes. Loosely gather a handful of ground beef and slip it into the pan. Repeat 6 times. The burgers should be freeform lumps.
- With the side of a spatula, push the burgers into a semblance of a round. After about a minute, pile on all the onions and then, with as much force as you can manage, smash the onions into the meat. Again, work the sides of the patties into a semblance of a round. Cook another minute and then flip. Season with salt. Smash the burgers again, hard.
- Place burger on bottom half of the bun and spread with mustard. Spread the cheese on top half of the bun and place on the burger.
ONION STUFFED HAMBURGERS
Hamburger pattie surrounding a slab of uncooked onion. Oh, by the way, the onion will cook inside the burger, mellowing the flavor of the onion and keeping the burger moist. Each pattie is about 1/4 pound of meat surrounding a 2 inch diameter 1/4 inch thick slab of onion. Even my kids love these.

- Cook hamburger and onion, drain grease.
- Add soup and spices, simmer 5-10 minutes.
- Meanwhile, slice top third off bread, hollow out bottom half of loaf, leaving a 3/4-inch shell, save bread chunks, or feed to the birds!
- Spread top slice of bread (cut side), with butter.
- Place hollowed out bread on cookie sheet and broil till lightly browned.
- Take out of oven and fill with meat mixture, top with cheese slices.
- Place buttered top next to it, put back in oven at 350º; bake till heated through and top is toasted a little.
- Put the top on, slice into wide slices for sandwiches, about 4-5 inches wide.
- 4-6 servings.
