1 fully-cooked ham steak (approximately 1 pound)
4 Tablespoons butter
2 Tablespoons flour
3/4 cup water
4 Tablespoons real maple syrup
2 teaspoons Dijon mustard
1/2 teaspoon soy sauce

Steps:

  • In a large frying pan, heat butter over medium heat until hot.
  • Add ham steak, and heat for 4 to 5 minutes on the first side; flip and heat for 2 to 3 minutes on second side.
  • Remove ham steak from pan; put on a plate and cover with foil to keep warm.
  • Lower heat to low; add flour to butter and stir for 1 minute.
  • Add water, maple syrup, Dijon mustard and soy sauce. Stir constantly, scraping up the bits from the bottom of the pan. Stir for 2-3 minutes or until gravy is thick and smooth,
  • Add ham steak to gravy, and heat until desired temperature (approximately 2 to 3 minutes).
  • Serve with warm biscuits.

Ham Steaks with Asparagus-Rice Salad image

1/3 cup mayonnaise
1/3 cup sour cream
1/4 cup finely chopped fresh chives
1 tablespoon whole-grain mustard
1 cup long-grain white rice
Kosher salt and freshly ground pepper
2 bunches asparagus, trimmed and cut into 1-inch pieces
Juice of 1 lemon, plus wedges for serving
1 tablespoon unsalted butter
4 6-ounce ham steaks
2 tablespoons packed light brown sugar

Steps:

  • Mix the mayonnaise, sour cream, chives and mustard in a bowl.
  • Bring a saucepan of water to a boil. Add the rice, 1/2 teaspoon salt and a few grinds of pepper; reduce the heat to low and simmer until almost tender, about 15 minutes. Add the asparagus and simmer until the rice and asparagus are tender, about 3 more minutes. Drain in a fine-mesh sieve and rinse under cold water, stirring gently to remove excess water. Transfer to a large bowl and stir in the lemon juice and half of the prepared chive sauce; season with salt and pepper.
  • Heat the butter in a large nonstick skillet over medium-high heat. Add the ham steaks, overlapping as necessary, and cook, flipping occasionally, until golden, about 5 minutes. Sprinkle the brown sugar over the ham and cook, flipping often, until the sugar melts. Season with pepper. Serve with the rice salad, the remaining chive sauce and lemon wedges.

1- 1 1/2 lb ham steak
1 bunch fresh asparagus
1 large can of sliced pinapple rings in its own juice. (will be grilling so don't want the kind in syrup)
2 Tbsp balsamic vinegar
2 Tbsp maple syrup (the real stuff really makes a difference here)
2 Tbsp dijon mustard
3 Tbsp olive oil
salt and pepper

Steps:

  • 1. Pre heat your indoor grill pan and coat with olive oil before preheating.(can use outdoor grill as well) Use Med high heat
  • 2. Pat dry Ham Steak with paper towel and place on grill for 7 to 8 minutes per side depending on thickness
  • 3. Place pineapple on grill with steak and turn same timing as ham steak. Preheat oven on broil
  • 4. The last 8 minutes of the ham cooking in a small saute pan place balsamic vinegar and cook on med high heat for several minutes to cook down. Add Maple syrup and dijon mustard and mix in mustard well cook another 3 min to thicken a bit
  • 5. Take ham and pineaple off grill put in serving dish and cover ham with glaze and let rest while asparagus is cooking
  • 6. bend one asparagus stalk until it breaks and cut other stalks to same length. Place on baking sheet and drizzle with olive oil salt and pepper. Place under broiler for 5 minutes and serve

  • Preheat oven to 350°F. Place bay leaves in 15x10x2-inch glass baking dish. Place ham steaks side by side in dish, overlapping slightly if necessary. Pour 1 1/2 cups apple cider over ham steaks (cider will not cover steaks). Whisk 2 tablespoons maple syrup and mustard in small bowl to blend; spread over top of ham steaks, dividing equally.
