LENTIL SOUP WITH PEAS AND HAM

Steps:
- Heat the olive oil in a large pot over medium-high heat. Add the ham, onion and 2 tablespoons dill; cook, stirring frequently, until the onion is golden, about 5 minutes. Add the celery, carrots, potatoes, 1/2 cup water and 1/4 teaspoon each salt and pepper. Cover and cook, stirring occasionally, until the vegetables are just soft, 8 to 10 minutes.
- Add the chicken broth, 1 1/2 cups water and the lentils; cover and bring to a simmer. Uncover and cook until the potatoes are tender and the lentils begin to fall apart, 12 to 15 more minutes. Stir in the peas, yogurt and the remaining 1 tablespoon dill. Ladle the soup into bowls.
HAM BONE AND GREEN SPLIT PEA SOUP

Steps:
- Melt butter and oil in a Dutch oven over medium-low heat. Add celery, onion, carrot, and salt. Cook and stir until tender, about 5 minutes. Stir in peas and garlic. Nestle ham bone into the pot; add stock and diced ham. Fill pot with water to about 1 1/2 inches from the top. Mix and bring soup to a boil.
- Reduce heat to low and cover. Simmer, scraping the bottom of the pot and stirring every 30 minutes, until peas are mostly disintegrated, about 2 1/2 hours. Turn ham bone and skim surface for fat once every hour. Take bone out, remove any meat, and return meat to the pot. Season with salt and pepper.

Steps:
- Heat olive oil in a large soup pot over medium heat.
- Add onions, celery, carrots, garlic, thyme and oregano.
- Cook and stir until veggies are softened, about 6 minutes.
- Add remaining ingredients, except parsley.
- Bring soup to a boil.
- Reduce heat to low.
- Cover and simmer for 1 hour.
- Remove ham from soup -- and let cool slightly.
- Puree half the soup in a food processor and return to pot with remaining soup.
- Cover to keep hot.
- Cut meat from ham shank and return meat to pot.
- Discard bone.
- Stir in parsley.
- Taste soup and adjust seasonings, if desired.
- If soup is too thick, add water or chicken broth to water it down.

- Stir chicken broth, water, carrots, celery, onion, lentils, garlic, and red wine vinegar together in a large stockpot; bring to a boil, reduce heat to low, and cook at a simmer until the carrots are tender, about 10 minutes.
- Stir ham, mustard, salt, and pepper into the soup; continue cooking until the lentils are tender, 20 to 30 minutes more.

Steps:
- Heat a knob of butter in a saucepan and when lightly foaming gently cook 1 chopped onion until softened, but not coloured.
- Tip in 1 peeled and diced medium potato and stir to coat in butter, then pour over 1l ham or pork stock. Simmer until softened.
- Tip in 500g frozen petit pois and bring back to the boil. Cook for a couple of mins.
- Remove from the heat and blend until smooth. Stir in 300g diced ham and serve.

- Heat the oil in a large saucepan over a medium heat. Add the chopped garlic and chopped spring onions and fry for 3 minutes or so until the onions have started to break down.
- Add the vegetable stock and frozen peas and bring to the boil. Once they have come to the boil, reduce the heat and simmer for 10 minutes. Remove from the heat, season with a little salt and pepper.

- In a large pot, cook bacon until crisp and fat is rendered. Transfer to paper towel to drain. Reserve about a tablespoon or so of fat in the pot.
- Add onion, carrot and leeks to pot. Sprinkle with some salt and cook until vegetables have softened and lightly browned, about 5-10 minutes.
- Stir in bay leaves and thyme, and then add the split peas and lentils, celery and reserved bacon. Cover with the chicken stock. Add the shredded potato and ham hock, season with more salt and some pepper, and bring to a boil. Turn down to a simmer, cover with lid slightly askew.
- Skim any foam that rises to the surface during the first 10-15 minutes. Stir occasionally and simmer for another 45 minutes or until the split peas and lentils are tender. Add more stock if the soup seems too thick.
