Ham N Cheese Tortillas image

My family eats these tasty tortillas as fast as I can make them. Good thing they can be made in a hurry! They're a new and flavorful way to serve traditional ham and cheese.-Jamie Whitaker, Aurora, Missouri

Number Of Ingredients 7

Oil for frying
6 flour tortillas (10 inches), quartered
3 packages (6 ounces each) thinly sliced deli ham (24 slices)
4-1/2 cups shredded cheddar cheese
1 cup picante sauce or salsa
Garlic salt
Sour cream and minced chives, optional

Steps:

  • In a electric skillet, heat 2 in. of oil to 375°. Fry tortillas wedges, a few at a time, until lightly browned and crispy. Drain on paper towels. , Place wedges in a single layer on baking sheets. Top each with a folded ham slice, 3 tablespoons cheese and 2 teaspoons picante sauce. Sprinkle with garlic salt. , Broil 4-6 in. from the heat until cheese is melted, about 2 minutes. Serve warm. If desired, top with a dollop of sour cream and sprinkle with chives.

I make these scones as a way to use up leftover ham. The cheesy, savory wonders are a delight as an appetizer or an afternoon snack. -Barbara Lento, Houston, Pennsylvania

Yield 1 dozen (1/2 cup peach sauce)

Number Of Ingredients 17

SAUCE:
1/2 cup peach preserves
1 tablespoon horseradish
1 teaspoon wasabi powder
1/2 teaspoon ground mustard
1/4 teaspoon ground ginger
SCONES:
4 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons salt
2 cups finely chopped fully cooked ham
2 cups shredded cheddar cheese
2 cups heavy whipping cream
TOPPING:
1 large egg
1 tablespoon water
1 tablespoon poppy seeds

Steps:

  • For sauce, combine all ingredients. Refrigerate until serving. Preheat oven to 375°. , For scones, in a large bowl, whisk flour, baking powder and salt. Add ham and cheese; toss to combine. Stir in whipping cream just until moistened., Turn onto a lightly floured surface; knead gently 10 times. Pat dough into two 7-in. circles. Cut each into six wedges. Place wedges on a greased baking sheet. , For topping, whisk egg with water; brush over scones. Sprinkle with poppy seeds. Bake 40-45 minutes or until golden brown. Serve warm with peach sauce.,

Ham and Cheese Frittata image

This recipe is very flexible because it can be served around the clock. In summer, I frequently add a variety of fresh vegetables, including zucchini.

2 tablespoons butter
1/2 cup sliced fresh mushrooms
1/2 cup chopped sweet red or green pepper
1/4 cup sliced green onions
6 large eggs
2 tablespoons water
1/2 cup diced cooked ham
1 cup shredded cheddar cheese

Steps:

  • In a skillet, melt butter over medium heat. Saute mushrooms, pepper and onions until tender. In a bowl, beat eggs until foamy; stir in ham. Pour over the vegetables. Let eggs set on the bottom, then lift the edges to allow any uncooked egg to flow underneath. Cover and cook until the eggs are set, about 3 minutes. Sprinkle with cheese and cut into wedges to serve.

1 tablespoon extra-virgin olive oil
2 cups leftover roasted vegetables, such as potatoes, carrots, parsnips and onions
2 cups leftover cheeses, cut into pieces, such as Brie, Parmesan, and/or Gruyere
1/4 pound Canadian bacon or Black Forest ham, chopped
1/2 cup chopped scallions
12 eggs, at room temperature
2 cups milk, at room temperature
1 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with the olive oil. Spread the vegetables in the bottom, then top with a layer of the cheeses, then the ham, and then the scallions.
  • Whisk together the eggs, milk, salt and red pepper flakes in a medium bowl. Pour the mixture over the layers and bake until lightly golden and the egg is set, about 50 minutes Allow the bake to sit for 5 minutes before cutting and serving.
