AUNT BETTY'S FAMOUS HAM DRESSING CASSEROLE
Y'all will love my Aunt Betty's signature holiday dish of Ham Dressing.

Steps:
- Preheat oven to 400℉. Add bacon fat to a cast iron skillet and place into the oven while it preheats.
- In a mixing bowl combine cornmeal, flour, baking powder, salt, pepper, buttermilk and eggs and stir to combine.
- Remove skillet from oven when it reaches temperature and add the cornbread batter. Bake for 25 minutes until golden brown.
- Combine cornbread, crackers, onion, celery, and seasonings together in a large mixing bowl. Cover and refrigerate overnight. (This can also be done early in the day before baking ham)
- The next day after ham bakes - add the chopped ham, pan juices (if using) ,stock and eggs to the dry mixture stored in the refrigerator. Mix well to combine until everything is moistened. Use additional stock if needed.
- Preheat oven to 375℉.
- Place ham dressing mixture into a casserole dish and place into the oven.
- Bake 30 to 45 minutes until set as desired and slightly browned on top.

- Drain pineapple, reserving juice.
- Set pineapple aside.
- Add enough water to pineapple juice to measure 2 cups.
- Combine margarine, sugar and 2 cups liquid in a large saucepan.
- Cook over medium heat, stirring occasionally, until mixture begins to boil.
- Remove from heat.
- Add croutons all at once, tossing lightly till croutons are thoroughly moistened.
- Add pineapple, nuts and raisins, mixing lightly.
- Spoon into greased 3-quart glass baking dish, pressing into the dish lightly.
- Bake in 350° oven for 25 minutes or till piping hot.
- Serve with ham, baked beans, sweet potatoes, or mashed potatoes and hot bread (if you like).

- Spread bread cubes in a single layer on 2 large baking sheets. Bake at 350° for 10 minutes or until toasted. Let cool, and transfer to a very large bowl.
- Melt 1 Tbsp. butter in a large deep skillet over medium-high heat; add country ham, and sauté 2 to 3 minutes. Add ham to bread in bowl.
- Melt remaining butter in same skillet over medium heat; add onion and celery, and sauté 8 minutes. Add garlic, and sauté 2 minutes. Remove from heat; add to bread in bowl. Combine broth, egg, and pepper. Add broth mixture to bread, tossing well. Stir in fresh herbs. Spoon dressing into a lightly greased 13" x 9" baking dish.
- Bake, covered, at 400° for 30 minutes. Uncover and bake 15 to 20 more minutes or until top is browned and crusty.
