Iowa Ham Balls with Sweet Sour Glaze image

This recipe will make 18 good-sized ham balls, allow 2 to 3 per person.

Number Of Ingredients 10

1 pound ground ham
1 pound ground pork
1 3/4 cups fresh breadcrumbs
2 eggs, beaten
scant cup milk
pinch ground allspice
pinch ground cloves
1 cup brown sugar
1 1/2 cups cider vinegar
2 teaspoons dry mustard powder

Steps:

  • To make the glaze, mix the brown sugar with the mustard powder. Slowly add the vinegar, whisking well as you pour it in. Set aside & whisk again before using.

I CAME UP with this recipe several summers ago. I had a ham in the refrigerator and was trying to avoid heating up the kitchen by preparing it in the oven. The stovetop was the solution. 1 can (8 ounces) pineapple chunks
1/4 cup ketchup
2 teaspoons soy sauce
2 teaspoons sugar
2 cups cubed fully cooked ham
2/3 cup chopped green or sweet red pepper
1 tablespoon cornstarch
2 tablespoons cold water
Hot cooked rice, optional

Steps:

  • Drain pineapple, reserving 1/3 cup of juice; set pineapple aside. In a large bowl, combine the reserved juice, ketchup, soy sauce and sugar. Add ham and green pepper., In a large skillet, cook and stir ham mixture over medium heat for 5-7 minutes or until pepper is tender. Combine cornstarch and water until smooth; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in pineapple and heat through. Serve with rice if desired.

4 eggs, lightly beaten
1/4 cup chopped onion
1-1/2 cups soft bread crumbs
2 pounds ground ham
1 pound ground pork
2 cans (8 ounces each) crushed pineapple, undrained
1 cup packed brown sugar
1/4 cup prepared mustard
2 tablespoons cider vinegar

Steps:

  • In a large bowl, combine the eggs, onion and bread crumbs. Crumble meat over mixture and mix well. Shape into 1-1/2-in. balls. Place in two greased 13-in. x 9-in. baking dishes., In a blender, combine the pineapple, brown sugar, mustard and vinegar; cover and process until smooth. Pour over ham balls. Transfer to freezer bags; seal and freeze. Or, bake, uncovered, at 350° for 45-50 minutes or until a thermometer reads 160°, basting occasionally with sauce. , To use frozen ham balls: Completely thaw uncooked ham balls with sauce in the refrigerator. Bake as directed in recipe.

I have made these for the past 6 years for Christmas and each time have been asked for the recipe. Its easy to make and sooooooooooo good. The sweet and sour sauce, and trust me there is plenty of it, makes the meatballs perfectly tender. Can be frozen

1 lb ground ham
1/2 lb ground lean pork
1 cup breadcrumbs
1 egg, slightly beaten
1/2 cup milk
1 pinch salt
3 cups brown sugar
1 cup white vinegar
1 1/2 cups water
2 teaspoons dry mustard

Steps:

  • Preaheat oven to 350°F.
  • Mix first 6 ingredients together in a large bowl.
  • Shape meat mixture into small meatballs (about the size of a golf ball) and put in a deep oven safe pot.
  • Mix remaining ingredients and pour over the meatballs. Do not cover.
  • Cook for 1 hour turning once.

1 egg lightly beaten
3/4 cup milk
dash hot sauce

2 pineapple tidbits (reserve syrup)
2 cups pineapple juice canned
1/2 cup brown sugar
6 tablespoons cornstarch
1/2 cup cider vinegar
6 tablespoons soy sauce
1 teaspoon salt
1 1/2 cups green bell peppers thinly sliced strips
1/2 cup onion thinly sliced

Steps:

  • Heat oven to 350° F. Combine meat and remaining ingredients roll into balls about walnut-size. Place in 9 x 13-inch baking dish and cover. Bake for 45 minutes. Prepare the following sauce.Sweet and Sour Sauce:*In a medium-size saucepan, combine reserved pineapple syrup, pineapple juice, brown sugar, cornstarch, vinegar, soy sauce, and salt. Bring to a boil and stir with a whisk for 3 to 5 minutes until thickened. Add pepper strips and onion simmer for 2 minutes. Add pineapple tidbits and remove from heat. Pour sauce over meatballs. Return to oven and bake for 10 minutes or until sauce is hot and bubbly.Note: This is delicious served over rice.
