Horseradish and ham have always been perfect partners. Here they combine in a zesty variation of ham roll-ups.

1 package (8 ounces) cream cheese, softened
2 tablespoons prepared horseradish
1 teaspoon Worcestershire sauce
1/2 teaspoon seasoned salt
1/8 teaspoon pepper
10 square slices deli ham

Steps:

  • In a small bowl, beat the cream cheese, horseradish, Worcestershire sauce, seasoned salt and pepper. , Set aside 2 ham slices; spread about 2 tablespoons cream cheese mixture over each remaining slice. Make two stacks, using four ham slices for each; top each stack with reserved slices. Wrap each stack in plastic wrap; chill for 4 hours. Cut each stack into 1-in. cubes.

1 fully cooked bone-in ham (5 to 6 pounds)
Whole cloves
1 cup packed brown sugar
1/3 cup prepared horseradish
1/4 cup lemon juice

Steps:

  • Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern; insert a clove in each diamond. Bake according to package directions., Meanwhile, mix remaining ingredients. Brush over ham during the last 30 minutes of baking.

1 (5 pound) boneless fully cooked ham
¼ cup honey, warmed
⅛ teaspoon ground cloves
1 cup packed brown sugar
½ cup prepared horseradish
¼ cup lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut ham into 1/4-inch thick slices and tie slices back together in shape of original ham, using kitchen string. Place ham on a rack set in a roasting pan.
  • Stir honey and cloves together in a bowl and drizzle honey mixture over ham.
  • Bake ham in the preheated oven for 1 hour and 15 minutes, basting often with pan drippings.
  • Mix brown sugar, horseradish, and lemon juice together in a bowl. Baste ham with horseradish glaze, allowing glaze to drip between slices.
  • Continue baking until glaze has set, ham has browned, and an instant-read meat thermometer inserted into the center of the sliced ham reads at least 140 degrees F (60 degrees C), 25 to 30 more minutes.

A step up from the usual grilled ham and cheese sandwiches, these are made with ham, cheddar cheese, red onion, horseradish sauce and mayonnaise. You can serve these flavorful sandwiches by themselves for lunch, or a simple dinner. For a heartier meal, serve them with steaming bowls of soup, stew or chili.

8 slices white bread
2 tablespoons mayonnaise
6 ounces thinly sliced deli ham
4 slices cheddar cheese
2 slices red onions, separated into rings
2 tablespoons horseradish sauce
2 tablespoons butter, softened

Steps:

  • Spread four slices of bread with mayonnaise. Layer each with the ham, cheese and onion. Spread horseradish sauce on remaining bread; place bread with horseradish side down over onion. Spread butter on the outside of each sandwich.
  • In a large skillet over medium heat, toast sandwiches for 4 - 5 minutes on each side or until bread is lightly browned and cheese is melted.

This was one of those serendipitous creations I came up with to take to a last minute gathering. It was made with the ingredients I had in the fridge, yet turned out to be a hit. My family loves it, too.

8 ounces softened cream cheese
1/2 cup Miracle Whip (don't sub mayo)
1 cup finely diced ham
5 green onions, finely chopped
3 tablespoons finely chopped green peppers
1 tablespoon Frank's red hot sauce
1 tablespoon prepared horseradish
salt (optional)

Steps:

  • Using an electric mixer, beat the cream cheese, Miracle Whip, Red Hot sauce, and horseradish, until smooth.
  • Stir in the remaining ingredients and taste before adding salt.
  • The ham usually adds enough salt.
  • Chill, covered, until serving.
  • (It's best if allowed to sit a couple of hours, but can be served immediately).
  • NOTE: You need the sweetness that the Miracle Whip adds; that's the reason for not using mayo.
  • Also, if you use a different hot sauce you will want to adjust the amount.
  • Frank's isn't very spicy, but it adds wonderful flavor.
  • Something like Tabasco will add much more heat, but not as much flavor.

The anchor for our sumptuous spread is a glazed bone-in ham. It's basted with a spicy-sweet blend of honey, fresh horseradish, and allspice, which helps burnish and crisp the skin. Horseradish cream amplifies the flavors in the glaze.

1 smoked ham (10 to 14 pounds), bone in and rind on
2/3 cup lightly packed grated fresh horseradish (from a 6-inch piece of peeled horseradish root), divided
1/2 cup honey
1/4 teaspoon ground allspice
Coarse salt and freshly ground pepper
1 cup creme fraiche
1 tablespoon chopped fresh thyme leaves
1 tablespoon finely chopped shallot

Steps:

  • Preheat oven to 350 degrees with rack in lower third. Rinse and dry ham and wrap first in parchment, then in foil, making sure thicker rind faces up. Place on a wire rack set in a rimmed baking sheet or roasting pan and bake 1 1/2 hours.
  • Meanwhile, stir together 1/3 cup horseradish, honey, allspice, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a small bowl and set aside.
  • Remove ham from oven and unwrap. When cool enough to handle, peel rind from ham with a paring knife, trimming fat all over to about 1/2 inch. (It doesn't need to be perfectly even; the bottom will have less fat and more skin.) Pat dry. With the tip of the knife, score the skin with 1/4-inch-deep parallel lines, 1 to 2 inches apart. Then score skin in the opposite direction to create a diamond pattern. Return to oven and bake 30 minutes. Baste with honey-horseradish mixture and continue to bake, basting every 30 minutes, until a thermometer inserted into thickest part of flesh near (but not touching) bone registers 145 degrees, about 2 hours more. If necessary, add water to pan, about 1/4 cup at a time, to prevent pan from scorching, and tent with foil if ham begins to blacken.
  • Meanwhile, stir together creme fraiche, remaining 1/3 cup horseradish, thyme, and shallot. Season with 1 teaspoon salt and 1/2 teaspoon pepper. Transfer ham to a serving platter and let rest at least 20 minutes. Serve with horseradish cream.
