PIMENTO CHEESE JALAPENO POPPERS



Pimento Cheese Jalapeno Poppers image

12 medium jalapenos
3/4 cup Pimento Cheese, recipe follows
1 cup fine herbed breadcrumbs
1 teaspoon Italian seasoning
3 eggs, beaten
Canola oil, for pan-frying
Kosher salt
4 ounces cream cheese, room temperature
2 ounces sharp Cheddar, shredded
1/2 teaspoon garlic powder
2 tablespoons chopped roasted red pepper
Kosher salt and freshly ground black pepper

Steps:

  • Split the jalapenos lengthwise from the stem to tip, then cut crosswise making a shallow "T" at the top (the stem end). Fold the peppers open and remove the veins and seeds with a paring knife.
  • Put the pimento cheese into a pastry bag or a heavy-duty plastic bag with a corner snipped off. Fill each jalapeno with 1 to 1 1/2 tablespoons pimento cheese, and press closed. In a shallow bowl, mix the breadcrumbs with the Italian seasoning. Dip the poppers first in the eggs and then in the breadcrumb mixture. Repeat, dipping first in egg and again breadcrumbs, for double dredge. Set the breaded poppers on a drying rack.
  • Fill a large cast-iron skillet with 1 inch of oil; heat over medium heat until the oil reaches 325 degrees F. In two batches, add the poppers and cook until golden brown, flipping halfway through, 5 to 6 minutes total. Drain on a wire rack set over a baking sheet and season with salt.
  • Serve immediately, but be careful not to burn your tongue!
  • Mix the cream cheese in a bowl until smooth, about 1 minute. Mix in the Cheddar, garlic powder and roasted red peppers. Add salt and pepper to taste, but do go heavy on the salt; start with 1/4 teaspoon and go from there--this is where all seasoning is coming from for the whole dish!!

After a number of unsatisfactory attempts at making deep-fried poppers, I modified a recipe by Emeril that is much easier than frying and everyone in our family agrees that these are at least as good as -- if not better than -- any fried poppers they have had! We love hot peppers and always make a lot of these from the ones we grow in our garden every year.

8 ounces cream cheese, softened
1 cup finely shredded Cheddar cheese
1 ½ tablespoons taco seasoning mix
12 jalapeno peppers, halved lengthwise and seeded
2 tablespoons fine bread crumbs, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with foil or parchment paper.
  • Blend cream cheese, Cheddar cheese, and taco seasoning together in a bowl; spread into jalapeno halves and arrange onto prepared baking sheet. Sprinkle bread crumbs over the cheese filling.
  • Bake until the peppers are just tender, 20 to 30 minutes.

12 jalapeño peppers
1 block pepper jack cheese
4 eggs
2 cups flour, as needed
2 cups bread crumbs, as needed
24 toothpicks

Steps:

  • Cut the top off each jalapeño and core it, scraping out all the seeds, with the back side of a spoon.
  • Fill the jalapeños with pepper jack cheese, either melted or cubed.
  • Place the top back on the jalapeños and secure with two toothpicks inserted diagonally.
  • NOTE: Be sure each toothpick goes through both the top and the bottom of the jalapeño to secure it.
  • Dredge in flour, eggs, then breadcrumbs. For a thicker breading, double bread the jalapeños by repeating the egg and breadcrumb dredging.
  • Heat oil to 325°F (160°C).
  • Fry each jalapeño popper until golden brown (about 2-3 minutes).
  • Cool and allow extra oil to drip off on a plate lined with paper towels. Remove the toothpicks.
  • Season with salt and serve immediately once cooled enough to handle.
  • Enjoy!

1 (8 ounce) package cream cheese, softened
2 tablespoons prepared horseradish
½ teaspoon garlic powder

⅛ teaspoon garlic powder
⅛ teaspoon red pepper flakes

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Cut each jalapeno lengthwise. Use a spoon to scrape the seeds and membranes out of the halves. Place jalapeno halves on the prepared baking sheet.
  • Combine cream cheese, horseradish, garlic powder, and paprika in a small bowl. Stuff jalapeno halves with the mixture. Wrap each jalapeno with a strip of prosciutto.
  • Bake in the preheated oven until peppers are slightly softened and cheese is lightly browned, 15 to 17 minutes.
  • Meanwhile whisk apricot preserves, water, garlic powder, and red pepper flakes together in a small saucepan over medium heat until thickened. Remove from heat and keep sauce warm.

16 jarred sweet piquante peppers, such as Peppadew
2 Cheddar cheese sticks
2 slices deli ham
About 3 cups canola oil, for frying
1/2 cup all-purpose flour
1 large egg
1 cup panko breadcrumbs
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Pat the peppers dry with a paper towel and set aside.
  • Wrap each cheese stick with a slice of ham, then slice the wrapped sticks into approximately 1/2-inch cubes. Stuff the wrapped cheese cubes into the peppers.
  • Heat the oil in a medium heavy-bottomed pot to 350 degrees F.
  • Set up a breading station using pie pans or plates. Put the flour in the first pie pan, then whisk together the egg and 2 tablespoons water in the second pie pan. In the third, mix together the panko, salt and pepper. Run each stuffed pepper through the breading station: lightly coat in the flour, dip in the egg wash and thoroughly coat in the panko.
  • Fry the peppers in batches in the hot oil until the breading is lightly browned, 1 to 2 minutes. Transfer to a plate lined with a paper towel. Serve hot.

MUMMY JALAPENO POPPERS

This game day favorite takes on a spooky but cute disguise for Halloween. Instead of getting the breaded-and-fried treatment, the poppers are wrapped in strips of crescent rolls to resemble mummy bandages then baked until golden brown and bubbly. Removing the seeds from the jalapeños tames a lot of the heat, but if you're craving a spicy kick, you could use pepper jack cheese instead of Cheddar Jack or add chili powder or hot sauce to the filling. These poppers can be assembled ahead of time and kept in the refrigerator. When ready to serve, just brush with beaten egg and pop them in the oven.

4 slices bacon, chopped into 1/2-inch pieces
6 ounces plus 1 heaping tablespoon cream cheese, at room temperature
1 1/2 cups finely shredded Cheddar Jack cheese
2 scallions, thinly sliced
1 clove garlic, finely grated

10 medium to large jalapeños (each 3 to 4 inches long), halved lengthwise with the stem intact, seeded with a small spoon
One 8-ounce tube refrigerated crescent rolls
1 large egg, beaten
4 to 5 black olives (such as canned or Kalamata), for decorating

Steps:

  • Preheat the oven to 400 degrees F. Line a large baking sheet with parchment.
  • Place the bacon in a medium skillet and set over medium heat. Cook, stirring occasionally, until browned and crisp, about 10 minutes. Remove with a slotted spoon to a paper towel-lined plate. Mix the cooked bacon with the 6 ounces cream cheese, the Cheddar Jack, scallions, garlic and 1/4 teaspoon salt in a medium bowl until well combined.
  • Fill each jalapeño half with the cream cheese mixture, leveling the surface with the back of a spoon or a small offset spatula so it's flush with the edges of the jalapeño.
  • Unroll the crescent rolls onto a cutting board. Separate into 4 rectangles at the perforations. Pinch together the diagonal perforations on each rectangle to seal the holes. Cut each rectangle lengthwise into 10 strips. Wrap each jalapeño half with 2 of the strips to resemble mummy bandages.
  • Arrange the wrapped jalapeños on the prepared baking sheet. Brush the tops of the strips with the beaten egg. Bake until golden brown and the filling is hot, 13 to 18 minutes.
  • Meanwhile, transfer the remaining heaping tablespoon cream cheese to a small resealable plastic bag and snip one of the corners. Slice off thin cheeks from all around the outside of each olive and lay the pieces flat. Punch out 40 tiny rounds using a small round piping tip (about 3/16 inch) - these will be the pupils of the eyes.
  • Let the mummy poppers cool slightly for a few minutes. Pipe 2 small mounds of cream cheese on the head (wider end) of each mummy and press an olive "pupil" onto each mound. Serve right away.
