"I like to perk up Halloween -- or any occasion -- by having the grandkids make these special pizzas," relates Flo Burtnett of Gage, Oklahoma.

1 frozen cheese pizza (12 inches)
1 can (6 ounces) pitted ripe olives, drained and halved
1 medium sweet red pepper
1 small green pepper

Steps:

  • Place pizza on a 12-in. pizza pan. Arrange olives in a circle around edge of pizza. Cut a nose, eyes and mouth from red pepper. Cut a stem and eyebrows from green pepper. Make a jack-o'-lantern face on pizza. Bake according to package directions.

PUMPKIN-CRUST HALLOWEEN PIZZA

1 packet (1 1/4 teaspoons) active dry yeast
1 cup warm water
3 1/2 cups bread flour, plus additional for dusting
1 teaspoon fine sea salt
1/2 cup pumpkin puree
2 tablespoons olive oil, plus more for the bowl
1 1/2 tablespoons honey
2 cups whole-milk ricotta
1 cup shredded mozzarella
1/4 cup milk
1/2 teaspoon dried oregano
Kosher salt and freshly ground black pepper
1/2 butternut squash, halved lengthwise and peeled
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
2 cups shredded mozzarella
Sliced pepperoni, optional
4 black olives
Basil, for garnish

Steps:

  • For the crust: Add the yeast to the warm water and let bloom for 10 minutes.
  • Meanwhile, add the flour and salt to the bowl of a food processor and pulse 5 times to mix. Add the pumpkin puree, olive oil and honey to the yeast mixture and whisk to combine. With the food processor running, slowly add the liquid in a thin stream until a ball forms (you won't necessarily add it all before this happens). Once the ball forms, process for 30 seconds to knead. Turn out onto a lightly floured work surface and knead a couple times to form into a tight ball. Place in a lightly oiled bowl and cover with a clean kitchen towel. Set aside at room temperature until doubled in size, 1 1/2 to 2 hours.
  • For the white sauce: Combine the ricotta, mozzarella, milk and oregano in a medium bowl. Season with salt and pepper, and mix until well blended.
  • For the toppings: Preheat the oven to 400 degrees F.
  • Slice the butternut squash crosswise into 1/2-inch slices. Place in a bowl, drizzle with olive oil, sprinkle with salt and pepper, and toss to coat. Transfer the squash to a baking sheet and roast until slightly browned and softened, 30 to 35 minutes. Slice into triangles.
  • Raise the oven temperature to 500 degrees F and set a pizza stone on the top rack.
  • Divide the dough into 2 portions and roll into balls. On a floured work surface, roll out 1 of the dough balls into a 12- to 14-inch circle and place on a well-floured pizza peel. Working quickly, spread with half of the white sauce in a circular pattern, sprinkle with 1 cup of the shredded mozzarella, and arrange some pepperoni if using around the perimeter of the pizza near the crust. Transfer to the pizza stone and bake until the crust is browned, 12 to 15 minutes. Repeat with the remaining dough, white sauce and mozzarella.
  • When the pizzas come out of the oven, arrange the roasted butternut squash on top to look like a jack-o-lantern: Use 2 triangles for eyes and 2 black olives as eyeballs, then use 1 triangle for the nose and more triangles for teeth. Garnish with basil to make the pumpkin stem.

HALLOWEEN PARTY PIZZAS

One 12-ounce package multigrain sandwich thins
1 cup pizza sauce
3 mozzarella string cheese sticks
One 2.25-ounce can sliced black olives, drained
3 deli slices Cheddar
9 pepperoni slices
3 slices provolone
1/2 cup shredded mozzarella
One 2.25-ounce can whole pitted black olives, drained

Steps:

  • Preheat the oven to 375 degrees F.
  • Split the sandwich thins into 2 halves and place 6 on each of 2 baking sheets. Spoon 1 to 2 tablespoons pizza sauce over each sandwich thin, spreading it to the edges. Add the toppings to create each of the monsters.
  • For mummies: Tear the string cheese into thin strips. Arrange the strips horizontally across three pizzas like layers of a mummy. Nestle in two olive slices for eyes.
  • For jack-o'-lanterns: Cut out rounds from the Cheddar slices with a jar lid or 3 1/2-inch cookie cutter. Place the cut rounds on 3 pizzas. Trim pepperoni slices into triangles (3 per pizza; 2 for the eyes and 1 for the nose) and place on the Cheddar rounds. Cut an olive slice in half and use for a smile.
  • For ghosts: Trim the provolone slices along a bottom edge in a zig-zag pattern with kitchen shears. Place 2 black olive slices on each pizza to create the eyes.
  • For spiders: Sprinkle 2 to 3 tablespoons shredded mozzarella over 3 pizzas.
  • While the pizza is baking, cut 2 whole black olives in half for the bodies and cut the remaining olive slices in half for the legs. Assemble the spiders on the cheese once the pizzas come out of the oven and are still hot by inverting an olive half on each for a body, then arranging the legs around the bodies.
  • Bake all the pizzas until the cheese begins to melt, but before it bubbles, 8 to 10 minutes. (Browning or bubbling may ruin your shapes.)

200g strong white flour
200g strong wholewheat flour
1 tsp or 7g sachet easy-blend dried yeast
250ml warm water
300g passata
1 garlic clove , crushed
1 tbsp olive or rapeseed oil
75g grated mozzarella
10 black olives
handful cherry tomatoes , halved
handful basil leaves , to serve

Steps:

  • Mix the flours and yeast with a pinch of salt in a food processor fitted with a dough blade, or combine in a bowl. Pour in the water and mix to a soft dough, then work for 1 min in a processor or 5 mins by hand. Remove the dough, divide into 4 pieces and roll out on a lightly floured surface to rounds about 15cm across. Lift onto heavily oiled baking sheets.
  • Mix the passata with the garlic, oil and a little seasoning. Spread over the dough to within 2cm of the edges. Scatter with the mozzarella. Halve the olives and tomatoes. Place an olive in the centre of each pizza to make the spider's body. Cut the rest into little legs and arrange them around the spider bodies. Dot the tomatoes here and there. Leave to rise for 20 mins. Heat oven to 240C/ fan 220C/gas 9 or the highest setting.
  • Bake the pizza for 10-12 mins until crisp and golden around the edges. Scatter with the basil to serve.
