1 tablespoon canola oil
1 medium carrot, grated
1 small onion, finely chopped
1 celery rib, finely chopped
1/2 medium green pepper, finely chopped
2 cups soft bread crumbs
1 large egg, lightly beaten
1/2 cup 2% milk
1 teaspoon garlic powder
1/2 teaspoon seasoned salt
1/2 teaspoon pepper
2 pounds ground beef
1 medium carrot, cut into 10 thin slices
2/3 cup ketchup
2 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 350°. In a large skillet, heat oil over medium heat. Add carrot, onion, celery and green pepper; cook and stir 3-4 minutes or until tender. Cool slightly., Line a 15x10x1-in. baking pan with foil; grease foil. Place bread crumbs in a large bowl. Stir in egg, milk, seasonings and carrot mixture. Add beef; mix lightly but thoroughly. Shape into two feet with indentations for toes., Transfer to prepared pan. Bake, uncovered, 30 minutes. Position carrot slices on loaves for toenails. In a small bowl, mix ketchup and vinegar; brush half over meat loaf. Bake 20 minutes longer or until a thermometer reads 160°. Brush with remaining mixture; bake 5 minutes longer.

4 pounds lean ground beef
3 cups Italian bread crumbs
4 eggs
1 large onion, chopped
¼ cup spaghetti sauce
¼ cup grated Parmesan cheese
1 pinch garlic salt, or to taste
¼ cup spaghetti sauce
1 tablespoon Italian seasoning
3 drops orange food coloring, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine beef, bread crumbs, eggs, onion, spaghetti sauce, Parmesan cheese, and garlic salt in a large bowl. Push mixture down into the bottom of the bowl and smooth the top. Flip bowl over into a large cake pan with sides to hold drippings. Use fingers to mold a stem shape at the top and make a happy or scary pumpkin face in the meat.
  • Combine spaghetti sauce and orange food coloring in a small bowl. Paint the meat loaf surface with the sauce mixture and sprinkle Italian seasoning on the stem.
  • Bake in the preheated oven until inside is no longer pink, 1 1/2 to 2 hours.
  • Drain grease from cake pan or transfer loaf to a serving plate.

3 lb ground beef
1 tablespoon salt
1 teaspoon pepper
2 tablespoons garlic powder
1 teaspoon dry mustard powder
½ teaspoon cayenne
1 large white onion, minced, 10 small slivers reserved
1 medium onion, halved
4 large eggs, beaten
2 cups panko breadcrumbs
½ cup milk
½ cup fresh parsley
2 tablespoons worcestershire sauce
½ cup ketchup

Steps:

  • Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the beef, salt, pepper, garlic powder, mustard powder, cayenne, minced onion, eggs, bread crumbs, milk, parsley, and Worcestershire sauce. Mix well until evenly combined.
  • Split the meat mixture in half and place on the baking sheet. Shape each half into a "foot."
  • Press up to form an ankle and hollow out the top to make room for "ankle bones." Add the halved onion, cut side up, to each divot. Cut 5 toes on each foot and add the reserved slivers of onion to make "toenails."
  • Brush around the ankles with ketchup to look like "blood."
  • Bake for 1 hour, until the meat is cooked through.
  • Serve warm.

What's better than gooey warm rat guts on Halloween? A quick and easy meatloaf that the youngsters can eat on the run! I've included a basic recipe, but feel free to use your family's favorite. Use pearl onions in place of the olives for a different look. The layer of crushed French-fried onions will resemble burnt fur! When you slice it, the 'guts' should ooze out and make quite an impression.

3 pounds ground beef
2 eggs
1 onion, chopped
2 cups milk
2 cups dry bread crumbs
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese
¾ (12 ounce) bottle barbeque sauce
1 cup French-fried onions
3 large black olives
3 spaghetti noodles, broken into halves
2 slices red potato
2 cups crushed French-fried onions, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix ground beef, eggs, onion, milk, bread crumbs, salt, and black pepper in a large bowl until completely combined to make the rat body mixture.
  • Mix Cheddar cheese, 3/4 bottle of barbeque sauce, and 1 cup French-fried onions together gently in a separate bowl to make the rat guts.
  • Put about half the rat body mixture onto a sheet of waxed paper and form it into the shape of a rat body. Spread a thick layer of the cheese mixture on top of the body leaving 1/2 inch of space along the outer edge.
  • Put remaining rat body mixture on top, forming the body and creating a solid seal around the edges so the guts don't ooze out while baking.
  • Place the top part of a broiler pan on the rat and carefully flip it over. Reshape rat body as needed. Place olives onto the rat body for the eyes and nose, potato slices for the ears, and spaghetti for the whiskers. Spread 1/4 bottle barbeque sauce over the body of the rat and sprinkle with crushed French-fried onions. Set the broiler rack atop the broiler pan.
  • Bake in preheated oven until the cheese is melted, about 1 hour. Allow ratloaf to cool 5 minutes before slicing to serve.

This is a great tasting and scary meatloaf. Our guests got a big kick out of it. I prefer to bake my meatloaf on a slotted broiler pan to let the grease drip off. You can use spicy sausage but I prefer a mild sausage.

2 pounds ground beef chuck
1 pound bulk pork sausage
1 large onion, chopped
1 cup crushed saltine crackers
2 eggs, beaten
3 tablespoons Cajun seasoning
1 tablespoon corn kernels
2 pickle slices
3 black olives, halved
2 small slices of green bell pepper
2 cups ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together the ground beef, sausage, onion, saltine cracker crumbs, beaten eggs, and cajun seasoning in a bowl until well combined. In a large baking dish, form the meat loaf mixture into a Halfling shape, with a large head, 2 stubby legs, and 2 upraised arms.
  • Bake in the preheated oven until the meatloaf is no longer pink inside and just starting to turn brown, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (70 degrees C).
  • To decorate the meatloaf's head, pick out about 14 corn kernels, and arrange them into teeth. Place 1 small green pepper slice on each side of the creature's head for ears; place two pickle slices on the face for eyes, then place 2 black olive halves, cut sides down, in the pickle slices to finish the eyes. One more olive half forms the nose. Surround the monster with a background of ketchup "blood," and bake until browned, about 10 more minutes.
  • Let the meatloaf rest for 10 minutes before serving. Just before serving, stick a paring knife in the meatloaf's body, and decorate it with a little ketchup blood.

1 ½ pounds ground beef
1 small onion, finely chopped
¾ cup buttery round crackers, crushed
⅔ cup milk
½ cup finely shredded sharp Cheddar cheese
2 eggs
1 tablespoon Worcestershire sauce
1 teaspoon seasoned salt (such as Morton® Nature's Seasons® Seasoning Blend), or to taste
1 hard-boiled egg, cut in half
½ cup ketchup
¼ cup brown sugar
2 tablespoons barbeque sauce (such as Stubb's®)
5 cloves garlic, cut into small pieces

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and grease the foil.
  • Mix ground beef, onion, crackers, milk, Cheddar cheese, eggs, Worcestershire sauce, and seasoned salt together in a bowl. Transfer beef mixture to the prepared baking sheet and form into a skull-shape, leaving holes for "eye sockets" and a "mouth". Place hard boiled egg halves into the "eye sockets", shaping the beef mixture around them to hold in place.
  • Mix ketchup, brown sugar, and barbeque sauce together in a bowl until sauce is smooth. Spread 1/2 of the sauce onto the entire beef mixture, including the "eyes" and "mouth".
  • Bake in preheated oven until no longer pink in the center, about 50 to 60. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Arrange the garlic pieces in the mouth for the "teeth". Brush the remaining sauce over the meatloaf or serve on the side.

1/2 cup quick-cooking oats (I used crushed ritz crackers)
1/2 cup milk
1 small carrot, grated
1 small onion, grated
1 garlic clove, minced
1 large egg
1 tablespoon Worcestershire sauce
2 teaspoons salt (garlic salt or smoked sea salt are good here)
1/2 teaspoon ground black pepper
1 lb ground beef (90/10)
1 lb ground pork
1 very small onion, peeled (I diced and added to the ankle part)
3/4 cup ketchup
3 tablespoons dark brown sugar
1 tablespoon white wine vinegar
1 teaspoon smoked paprika

Steps:

  • Preheat oven to 350° F. Line a baking sheet with foil.
  • Combine the first 9 ingredients (oats through pepper) in a large bowl and mix until combined. Add the beef and the pork and use your hands to squish and mix everything together until thoroughly combined.
  • Turn mixture out onto the prepared baking sheet and form it into the shape of a foot with an ankle. Make shallow indents on the toes where the nails should be and a deeper indent the width of your onion in the ankle spot.
  • * Remove the very out layer of the onion and cut it into 5 craggly toe nails. I like to make then a little long so that I can push them into the "nail bed", which helps keep them in place. Add them to the toe indents.
  • Use your knife to "roughen" up one cut end of the whole onion, so that it sort of looks like a broken off bone. Nestle it into the ankle indent that you made, rough side up. Press the meatloaf up and around the edges a bit.
  • Slide into the preheated oven and bake for 20 minutes. Stir together all of the glaze ingredients until smooth.
  • Pour or brush 1/3 of the glaze over the foot and return to oven for 10 more minutes. Brush another 1/3 of the glaze onto the foot and return to oven until a thermometer inserted in the center registers 165° F, about 5-10 minutes longer (35-40 minutes or so total cooking time).
  • Heat the remaining glaze until it bubbles, then drizzle it around the edge of your serving plate. Carefully slide the foot onto the plate and serve.
  • When you're ready to slice, just slice off the individual toes, then slice the rest of the foot like a loaf.
