GRILLED HALIBUT
This grilled halibut is a great way to enjoy fish any day of the week. Topped with my garlic thyme butter, this seafood is perfectly tender and flaky without coming off the grill dry and bland. Bonus level? It's ready in less than 30 minutes.

- Preheat. Preheat your grill 375 degrees F.
- Prep the fish. Place the halibut fillet in a shallow baking dish. Combine all of the ingredients for the butter in a small bowl and pour over your halibut fillets.
- Season. Gently toss the fillet to ensure all sides are evenly coated in the butter. Season all sides with freshly cracked pepper and salt.
- Oil the grill. Moisten a paper towel with cooking oil. Pinch the paper towel between tongs and wipe it on the grates of your grill to prevent the halibut from sticking while it grills.
- Grill the halibut. Place the seasoned halibut directly on the grill grates. Close the lid and grill for 5-7 minutes. Flip them, close the lid, and grill until the internal temperature of the halibut reads 145 degrees F. You want your fish to be opaque and just start to flake.
- Serve. Remove the grilled halibut from the grill. Serve hot with lemon wedges.

HALIBUT, GRILLED, WITH RED CURRANT GARLIC SAUCE
This is my original recipe. It is so easy you won't believe how good it is. Beautiful white halibut, lightly smoky from the BBQ, with a sauce of red currant jelly and garlic. Feel free to add a bit of finly chopped jalapino if more heat is your taste. If you can't find red currant jelly, seedless red raspberry works well, but will be sweeter. You can easilly substitute Orange Roughy. Cod is much cheaper, and will work, but use a fish basket to grill it, as it will fall apart.

Steps:
- Prepare BBQ. Preheat if using a gas BBQ. Or prepare charcoal with some mesquite chunks.
- Place jelly, garlic slices, and jalapino if desired, into a microwave safe cup. Microwave 30 sec, leave in microwave.
- Rinse and completely dry fish fillets, brush with EVOO on both sides.
- Place the fish on your grill. It should cook about 5-7 minutes on each side.
- Halibut and Orange Roughy won't exactly "flake", but if you can pull the grain apart with a fork, it is done. If using Cod, it will flake easily when done.
- Place fish on plates, remove your sauce from microwave, remove the garlic slices, and drizzle sauce over and around fish.
- NOTE: This is very nice served on a bed of rice pilaf, drizzling the sauce over all.

- Preheat oven to 450°F with rack in middle.
- Put fish in an oiled shallow baking dish and sprinkle with teaspoon each of salt and pepper.
- Force garlic through a garlic press into a bowl, then whisk in oil and 1/8 teaspoon salt. Whisk in mayonnaise and spread over fish.
- Bake, uncovered, until fish is just cooked through, 10 to 15 minutes.

- Preheat a grill for high heat. Squeeze the juice from the lime wedges over fish fillets, then season them with salt and pepper.
- Grill fish fillets for about 5 minutes on each side, until browned and fish can be flaked with a fork. Remove to a warm serving plate.

- Preheat oven to 350 degrees F (175 degrees C). Grease a shallow baking dish.
- Rub the halibut fillets with 1 tablespoon of lemon juice, then season with salt and pepper. Place the fillets into the prepared baking dish, then press the cilantro leaves onto the top of the halibut. Bake the halibut in the preheated oven until the fish flakes easily with a fork, 15 to 20 minutes.
- Meanwhile, melt the butter in a skillet over medium heat. Stir in the green onions, red bell pepper, garlic, and red pepper flakes until the vegetables have softened, about 5 minutes. - Preheat a grill or broiler to very hot.
- Press the pepper into the surface of the fish. Brush the fish with all but one tablespoon of the oil.
- Grill or broil the fish, turning it once, until it is just cooked, 6 to 10 minutes, depending on the thickness of the fish and the heat of the grill or broiler.
