4 cups water
2 teaspoons Alaya Assam Black Tea and Ginger
4 whole cardamom pods, crushed
3 whole cloves
1 cup whole milk
1 ½ teaspoons sugar
cookie, crackers, or samosas, for serving (optional)

Steps:

  • Bring the water to a boil in a medium saucepan over medium-high heat. Once the water is boiling, stir in the Alaya Assam Black Tea and Ginger, cardamom, and cloves.
  • Reduce the heat to medium and add the milk. Cook until it begins to froth, 3-4 minutes.
  • Stir in the sugar until dissolved.
  • Strain the tea into mugs and serve with cookies, crackers, or samosas, if desired.
  • Enjoy!

2 tea bags
1 cinnamon stick
6 cardamom pods, crushed
1 whole clove
1/4 teaspoon ground ginger
2-1/2 cups milk
1/3 cup sugar
Sweetened whipped cream, ground cinnamon and cinnamon sticks, optional

Steps:

  • In a small saucepan, combine the first six ingredients. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. , Stir in milk. Return to a boil; boil for 1 minute, then strain. Stir in sugar until dissolved. Pour into mugs. Top each with whipped cream, cinnamon and a cinnamon stick if desired.

¼ teaspoon ground cardamom
⅛ teaspoon ground black pepper
1 pinch ground ginger
1 pinch ground cloves
1 pinch ground allspice

¾ teaspoon honey, or to taste
⅛ teaspoon vanilla extract

Steps:

  • Whisk turmeric, cardamom, black pepper, ginger, cloves, and allspice together in a small bowl.
  • Heat milk in a small saucepan over medium heat until heated through, 3 to 4 minutes; stir honey and vanilla extract into milk until completely dissolved. Whisk 1 teaspoon turmeric mixture into milk mixture; reduce heat to medium-low and cook until flavors blend, 2 to 3 minutes. Pour mixture through a strainer.

Turmeric milk is a simple infusion of warm milk with turmeric that exists with countless variations in homes across India, where it's known as haldi doodh. The drink might include black pepper, and a touch of jaggery or honey to sweeten it. This hybridized version lies somewhere closer to a masala chai with a dose of black tea and a spoon of fresh grated ginger. The recipe makes two dainty portions, or one robust one, but it's in the spirit of things to play with the ratios to suit your own taste, to use your sweetener of choice and even to replace the milk entirely with almond or cashew milk. Cooking with powdered turmeric is less messy than with fresh, and won't require gloves to keep your fingers from staining.

1/4 cup water
1/2 teaspoon dried turmeric (or a 1/2-inch piece fresh turmeric, peeled and grated)
1 1/2-inch piece ginger, peeled and grated
1 cardamom pod
1 cinnamon stick
3 black peppercorns
1/2 tablespoon honey
1 cup milk (or nut milk)
1 black tea bag

Steps:

  • In a small pan over low heat, add the water, turmeric, ginger, cardamom, cinnamon, peppercorns and honey. Bring to a simmer, then pour in milk, and add the tea bag. When milk is steaming, use a spoon to taste, and add more honey if you like. Pour through a fine-mesh strainer right into a cup, and drink while hot.

9 whole green cardamom pods
1 cup water, room temperature
2 tablespoons kashmiri tea leaves, or any non-bitter green tea
4 whole star anises
4 whole cloves
2 whole cinnamon sticks
¼ teaspoon baking soda
1 cup ice water
¾ cup whole milk, or non-dairy milk of choice
¾ cup half & half, or thick non-dairy creamer of choice
2 tablespoons granulated sugar, to taste
¼ teaspoon kosher salt
1 ½ teaspoons unsalted raw pistachios, crushed with a mortar and pestle
½ tablespoon raw almonds, crushed with a mortar and pestle

Steps:

  • Add the cardamom pods to a mortar and crush with a pestle into small pieces.
  • Add the room temperature water, Kashmiri tea leaves, crushed cardamom, star anise pods, cloves, and cinnamon sticks to a small saucepan. Bring to a boil over medium-high heat. Once boiling, add the baking soda (it will fizz and bubble) and reduce the heat to medium. While boiling, use a ladle to scoop some liquid from the pot and pour it back in from as high as you can without splattering (the aeration of the liquid helps give the tea its pink hue). Continue until the liquid is reduced by half, 7-10 minutes.
  • Add the ice water and continue to aerate the tea with the ladle for another 2 minutes. Add the milk, half-and-half, sugar, and salt and bring to a gentle simmer. Once simmering, remove the pot from the heat and steep for another 3 minutes.
  • Strain the chai through a fine-mesh sieve into a heatproof spouted measuring cup, making sure to squeeze out all the liquid. Discard the solids.
  • Divide the chai between 3 mugs and top with the crushed pistachios and almonds. Serve immediately.
  • Enjoy!
