WEST AFRICAN BARBECUE SAUCE



West African Barbecue Sauce image

2 tablespoons olive oil
1 medium Spanish onion, diced
5 tomatoes, seeded and chopped (or 2 1/2 cups chopped canned tomatoes)
2 inches ginger, peeled and grated
3 garlic cloves, minced
1 serrano chili, seeds and ribs removed and finely chopped
2 cups water
1/4 cup brewed coffee
1 tablespoon tamarind paste
2 teaspoons berbere or 2 teaspoons chili powder
1/4 teaspoon ground cumin
1/4 teaspoon coriander seed, roughly crushed
1/4 cup honey

Steps:

  • Heat the oil in a large saucepan over high heat. Add the onion and saute for five minutes, or until softened and translucent. Add the tomatoes, ginger and garlic and bring to a simmer. Sir in the chili, water, coffee, tamarind paste, berbere, cumin and coriander seeds and bring to a simmer. Reduce the heat and simmer for 40 minutes.
  • Add the honey and simmer for another 10 minutes, or until the sauce is thick enough to coat the back of a spoon. Let cool.
  • Store in a tightly-covered container in the refrigerator for up to five days.

1 ½ cups brown sugar
1 ½ cups ketchup
½ cup red wine vinegar
½ cup water
1 tablespoon Worcestershire sauce
2 ½ tablespoons dry mustard
2 teaspoons paprika
2 teaspoons salt
1 ½ teaspoons black pepper
2 dashes hot pepper sauce

Steps:

  • In a blender, combine brown sugar, ketchup, vinegar, water and Worcestershire sauce. Season with mustard, paprika, salt, pepper, and hot pepper sauce. Blend until smooth.

This is a great all-purpose barbecue sauce. It's great on any type of meat, but for pork, I would double up on the peppers.

1 cup yellow onion, diced
1/8 cup green bell pepper, diced
1/8 cup red bell pepper, diced
1/4-1/2 teaspoon crushed dried red pepper
1 tablespoon canola oil or 1/4 cup butter
1/2 tablespoon garlic, chopped
1/2 teaspoon chili powder
1/8 cup black pepper
1/4 cup light brown sugar, firmly packed
1/4 cup dark brown sugar, firmly packed
1/2 cup honey
1/8 cup molasses
1/4 cup apple cider vinegar
1/2 cup salt water (1/6 cup salt to 1/2 cup water)
1/2 tablespoon yellow mustard
1/2 lemon, juice of
1/2 tablespoon Worcestershire sauce
3 cups ketchup

Steps:

  • Saute the onions, peppers, and crushed red pepper in the canola oil or butter over medium heat until lightly browned, 5 to 10 minutes. Add the garlic and simmer for 5 minutes more.
  • Add the chili powder, black pepper, brown sugars, honey, and molasses and cook until carmelized. Add the vinegar, salt water, mustard, lemon juice, and Worcestershire sauce and simmer for 15 minutes.
  • Add the ketchup and simmer for 10 minutes. Let cool before storing.

CHICKEN IN BALSAMIC BARBECUE SAUCE

8 chicken breasts, Medium
1 small onion, Finely Chopped
1/4 cup olive oil
3/4 cup balsamic vinegar
3 tablespoons sugar
6 tablespoons ketchup
2 tablespoons Worcestershire sauce
4 green onions, Chopped
1 chicken bouillon cube, Crushed
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dry mustard
3 garlic cloves, Finely Chopped
Tabasco sauce, To Taste

Steps:

  • Combine all ingredients except chicken.
  • Marinate chicken in half the sauce for 3 hours or overnight.
  • Put remaining marinade aside.
  • Remove chicken from marinade, place chicken in foil-lined pan and broil until nicely browned about 10- 20 minutes per side(depending on the size), or grill on the bbq.
  • Heat reserved marinade and pour over chicken. Serve.
