A spin on a classic meat loaf, I love this because I can sneak spinach in on my meat-and-potatoes family. Serve it with Greek-style potatoes or a Greek salad. I also get to make a whole other meal the next night with the leftovers-gyros. -Mandy Rivers, Lexington, South Carolina

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup dry bread crumbs
1 small onion, finely chopped
2 large eggs, lightly beaten
1/4 cup grated Romano cheese
2 teaspoons dried oregano
1-1/2 teaspoons garlic powder
1/2 teaspoon salt
2 pounds ground lamb or beef
1 cup refrigerated tzatziki sauce

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first eight ingredients. Crumble lamb over mixture and mix well. Shape into a loaf and place in a greased 11x7-in. baking dish., Bake, uncovered, 55-60 minutes or until no pink remains and a thermometer reads 160°. Let stand 15 minutes before slicing. Serve with tzatziki sauce. Freeze option: Securely wrap and freeze cooled meat loaf in plastic wrap and foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaf; reheat on a greased shallow baking pan in a preheated 350° oven until a thermometer inserted in center reads 165°.

I confess, my husband is a gyro junkie. I had never had the ethereal pleasure of a gyro until he introduced me to the wickedly intoxicating Greek concoction a few years ago. The trouble you ask? We were low-carbers for about two years running and it was not cost-effective to make special trips out for a couple of paper-thin slices of meat and some sauce. I developed this recipe out of pure desperation by combining several different recipes (found online) and then adding some of my own ideas and spice.

1 lb ground lamb
1 lb ground beef
1 teaspoon oregano
1 1/2 tablespoons onion powder
1 tablespoon garlic powder
3/4 tablespoon ground pepper
1 teaspoon thyme
3/4 teaspoon salt
1/8 teaspoon cinnamon
1/8 teaspoon allspice
1 cup sour cream
1 medium cucumber, grated & squeezed dry
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 tablespoon parsley
1/4 teaspoon dill

Steps:

  • Mix loaf ingredients together and shape into a freeform loaf in a baking pan.
  • Bake at 375°F for about 1 hour 15 minutes.
  • Once loaf has cooled to room temperature or has chilled in the refrigerator, slice it as thin as possible (maximum of 1/4 inch).
  • Serve it warm or at room temperature.
  • Can be served in pitas, flatbreads or tortillas with lettuce, tomato, black olives, feta cheese and Tsatziki Sauce or as a main course with a Greek salad, pasta salad or potato salad.

I found this in a cooking magazine and it was submitted by Mandy Rivers from Lexington, SC. I've also added Greek seasoning. For the suggested tzatziki sauce, I would recommend using Recipe #83189.

1 cup dry breadcrumbs
1 small onion, finely chopped
2 eggs, lightly beaten
1/4 cup romano cheese, grated
2 teaspoons dried oregano

1 teaspoon all purpose Greek seasoning (I found mine at Walmart)
2 lbs ground lamb or 2 lbs ground beef
tzatziki, sauce (for a really good one, use Tzatziki Cucumber Dipping Sauce )

Steps:

  • If making your own sauce, prepare it the day before you are planning to make the meatloaf.
  • In a large bowl, combine the first nine ingredients (everything but the lamb/beef and tzatziki sauce).
  • Crumble lamb or beef over the mixture and combine well.
  • Shape into a loaf and place in a greased 11x7" baking dish.
  • Bake uncovered at 350 for 55-60 minutes or until no pink remains and a thermostat reads 160.
  • Let stand for 15 minutes before slicing.
  • Drizzle with tzatziki sauce.

Follow Alton Brown's Food Network recipe to make Gyro Meat with Tzatziki Sauce at home; the creamy cucumber-yogurt sauce goes perfectly with ground lamb.

1 medium onion, finely chopped or shredded
2 pounds ground lamb
1 tablespoon finely minced garlic
1 tablespoon dried marjoram
1 tablespoon dried ground rosemary
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Tzatziki Sauce, recipe follows
16 ounces plain yogurt
1 medium cucumber, peeled, seeded, and finely chopped
Pinch kosher salt
4 cloves garlic, finely minced
1 tablespoon olive oil
2 teaspoons red wine vinegar
5 to 6 mint leaves, finely minced

Steps:

  • Process the onion in a food processor for 10 to 15 seconds and turn out into the center of a tea towel. Gather up the ends of the towel and squeeze until almost all of the juice is removed. Discard juice.
  • Return the onion to the food processor and add the lamb, garlic, marjoram, rosemary, salt, and pepper and process until it is a fine paste, approximately 1 minute. Stop the processor as needed to scrape down sides of bowl.
  • To cook in the oven as a meatloaf, proceed as follows:
  • Preheat the oven to 325 degrees F.
  • Place the mixture into a loaf pan, making sure to press into the sides of the pan. Place the loaf pan into a water bath and bake for 60 to 75 minutes or until the mixture reaches 165 to 170 degrees F. Remove from the oven and drain off any fat. Place the loaf pan on a cooling rack and place a brick wrapped in aluminum foil directly on the surface of the meat and allow to sit for 15 to 20 minutes, until the internal temperature reaches 175 degrees F. Slice and serve on pita bread with tzatziki sauce, chopped onion, tomatoes and feta cheese.
  • To cook on a rotisserie, proceed as follows:
  • Form the meat mixture into a loaf shape and place on top of 2 overlapping pieces of plastic wrap that are at least 18 inches long. Roll the mixture in the plastic wrap tightly, making sure to remove any air pockets. Once the meat is completely rolled in the wrap, twist the ends of the plastic wrap until the surface of the wrap is tight. Store in the refrigerator for at least 2 hours or up to overnight, to allow the mixture to firm up.
  • Preheat the grill to high.
  • Place the meat onto the rotisserie skewer. Place a double-thick piece of aluminum foil folded into a tray directly under the meat to catch any drippings. Cook on high for 15 minutes. Decrease the heat to medium and continue to cook for another 20 to 30 minutes or until the internal temperature of the meat reaches 165 degrees F. Turn off the heat and allow to continue to spin for another 10 to 15 minutes or until the internal temperature reaches 175 degrees. Slice and serve on pita bread with tzatziki sauce, chopped onion, tomatoes, and feta cheese.
  • Place the yogurt in a tea towel, gather up the edges, suspend over a bowl, and drain for 2 hours in the refrigerator.
  • Place the chopped cucumber in a tea towel and squeeze to remove the liquid; discard liquid. In a medium mixing bowl, combine the drained yogurt, cucumber, salt, garlic, olive oil, vinegar, and mint. Serve as a sauce for gyros. Store in the refrigerator in an airtight container for up to a week.
  • Yield: 1 1/2 cups

I found this on the internet somewhere and it said you could wrap the loaf tightly in plastic wrap and chill it overnight. Then you could actually cook it in your rotisserie. I tried that and it didn't work lol. So I followed their directions for making a loaf. It was delicious. I will include the directions for rotisserie but don't holler if it doesn't work. Time does not include draining yogurt, or chilling loaf overnight.

  • Return onion to food processor and add lamb, garlic, marjoram, rosemary, salt, and pepper.
  • Process about 1 minute until it becomes a fine paste.
  • Scrape sides occasionally.
  • TO COOK IN ROTISSERIE:.
  • Form the meat mixture into a loaf.
  • Roll tightly in plastic wrap removing all air pockets.
  • Twist ends so wrap is tight.
  • Refrigerate at least 2 hours or overnight.
  • Place meat on rotisserie skewer.
  • Place aluminum foil, shaped like a bowl, underneath to catch drippings.
  • Cook on high for 15 minutes.
  • Reduce to medium and cook 30-45 minutes, until inside temp is 175.
  • TO COOK IN OVEN AS LOAF:.
  • Preheat oven to 325.
  • Place mixture in loaf pan.
  • Place loaf pan in water bath and bake for 60-75 minutes.
  • Temp should reach 165-170.
  • Remove from oven and drain off fat.
  • Place loaf pan on cooling rack.
  • Place something heavy (such as a brick wrapped in aluminum foil) directly on top of meat fof 15-20 minutes.
  • TZATZIKI SAUCE:.
  • Place yogurt in a tea towel, suspend over a bowl and drain for 2 hours in refrigerator.
  • Place the chopped cucumber in a tea towel and squeeze to remove the liquid.
  • Discard liquid.
  • Combine drained yogurt with all other sauce ingredients.
  • Store in refrigerator in air tight container up to a week.
  • TO SERVE:.
  • Slice lamb and serve on pita bread with tzatziki sauce, chopped onion, tomatoes, and feta cheese.

  • Chop onion up in a food processor for 15 seconds. Remove and drain the juice in a strainer or towel. Dump the juice. Put the onion back in the processor and add the ground lamb,garlic,marjoram,rosemary,salt and the pepper.
  • Process for about 1-2 minutes until it looks like paste.Scrape out the bowl into a loaf pan.Preheat oven to 325. Place the meatloaf pan in a water bath. (That means setting the loaf pan another baking dish so the water is about half way up the side of the loaf dish).Bake for 60 minutes or until the meat reaches 165-170.
  • Remove from the oven and take the meat out of the loaf pan. Let it cool on a cooling rack for a few minutes.Slice and serve on a pita with the Tzatziki sauce. Also top with onion,tomato and feta cheese.
