TURKEY SHRIMP GUMBO

Steps:
- In a small bowl, combine salt and peppers; sprinkle over turkey. In a Dutch oven, brown turkey in 2 tablespoons oil; remove with a slotted spoon. Add remaining oil and flour, scraping pan bottom to loosen browned bits. Cook over medium-low heat for 25-30 minutes until dark brown in color, stirring occasionally. , Add the onion, celery, red pepper and garlic. Cook over medium heat until vegetables are crisp-tender, 4-5 minutes. Gradually stir in broth. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Return turkey to pan; cover and simmer for 30-45 minutes or until turkey is tender. Add okra and green onions; simmer 10 minutes. Add shrimp; simmer until shrimp turn pink, 4-5 minutes. Serve over rice.

SHRIMP GUMBO
This spicy Cajun gumbo, a stew originating in Louisiana in the 18th century, gains much of its flavor from the dark roux and its characteristic thickness from file, an herb made from the ground leaves of the sassafras tree. Onions, celery and green peppers, the "holy trinity" of both Creole and Cajun cooking, add flavor and substance to the thick shrimp and sausage stew, which is served over a heaping portion of white rice.

- Preheat the oven to 350 degrees F.
- Place the vegetable oil and flour into a 5 to 6-quart cast iron Dutch oven and whisk together to combine. Place on the middle shelf of the oven, uncovered, and bake for 1 1/2 hours, whisking 2 to 3 times throughout the cooking process.
- While the roux is baking, de-head, peel and devein the shrimp. Place the shrimp in a bowl and set in the refrigerator. Place the heads and shells in a 4-quart saucepan along with the 2 quarts of water, set over high heat and bring to a boil. Decrease the heat to low and simmer for 1 hour or until the liquid has reduced to 1-quart. Remove from the heat and strain the liquid into a container, discarding the solids.
- Once the roux is done, carefully remove it from the oven and set over medium-high heat. Gently add the onions, celery, green peppers and garlic and cook, moving constantly for 7 to 8 minutes or until the onions begin to turn translucent. Add the tomatoes, salt, black pepper, thyme, cayenne pepper, and bay leaves and stir to combine. Gradually add the shrimp broth while whisking continually. Decrease the heat to low, cover and cook for 35 minutes. Turn off the heat, add the shrimp and sausage and stir to combine. Add the file powder while stirring constantly. Cover and allow to sit for 10 minutes prior to serving. Serve over rice.
SHRIMP GUMBO

- In a Dutch oven over medium heat, cook and stir flour and oil until caramel-colored, stirring occasionally, about 12 minutes (do not burn). Add the celery, green pepper and onion; cook and stir until tender, for 5-6 minutes. Stir in the broth, garlic, salt, pepper and cayenne; bring to a boil. Reduce heat; cover and simmer for 30 minutes., Stir in the shrimp, okra, green onions and tomato. Return to a boil. Reduce heat; cover and simmer until shrimp turn pink, 10 minutes. Stir in file powder. Serve with rice.

- Preheat oven to 350 degress F. Place regular size (10"x16"0 Reynolds Oven Cooking Bag in 10x6x2-inch baking dish.
- Saute onion and green pepper in oil and butter; spoon into bag. Add remaining ingredients except bay leaf and rice to bag; turn gently to mix. Add bay leaf.
- Close bag with nylon tie; make 6 half-inch slits near closure.
- Cook 20 to 25 minutes or until hot and bubbly.
- To serve, remove bay leaf; serve with fresh lemon & spoon over rice.
- Makes 2 servings.

TURKEY GUMBO
Had leftovers from a fresh turkey and wanted something with pizazz.I started out with LorenLou's Best Leftover Turkey Gumbo, but changed it so much it became a different recipe.The main diff is using ground chorizo sausage to make mini meatballs, ading tomatoes, shrimp and okra.I also cut out some cooking time cuz DH and kids were hungry and couldn't wait!

- Make a roux by adding the oil, then flour in a large dutch oven.
- Cook over medium heat, stirring constantly until mahogany in color, for about 20-30 minutes.
- Add all of the fresh chopped vegetables and cook for about 15 minutes, until vegetables are soft.
- In the meantime, you can cook the sausage meatballs in a fry pan (I used my micro's sensor cook) until just done, about 5 minutes.
- Add the broth to the vegetable mixture in the dutch oven and stir well.
- Add in the turkey and the drained meatballs.
- Add in the canned tomatoes.
- Add in the hot sauce, salt and pepper.
- Bring to a boil, then reduce to medium heat, for 30 minutes, or longer to develop the flavors.
- Fifteen minutes before you plan to serve, add the shrimp, allow less cooking time if they are already cooked.
- Serve with rice, if desired.

- In a large Dutch oven over medium heat, toast the flour for 5 minutes, until a light brown color. Whisk in 1 cup chicken stock, and then transfer to a small bowl to cool.
- In the same pot, sweat Andouille sausage with 2 tablespoons oil over medium-high heat for 3 minutes. Add onions, peppers, celery, garlic and 1 teaspoon salt and sweat for 5 minutes, stirring frequently. Add spices, stir to combine. Add tomato, okra, and chicken stock and bring to a boil. Reduce heat and simmer for 25 minutes.
- While the gumbo is simmering, prepare the meatballs. In a medium bowl, combine the ground turkey, shrimp, breadcrumbs, salt and pepper. Mix thoroughly and shape into approximately 1 tablespoon-sized balls.
- Add meatballs to the gumbo and simmer for an additional 10 minutes. Season with 1/4 teaspoon Louisiana style hot sauce.
