Chicken Muffins image

Low carb Chicken Muffins are here! This easy to make and high protein muffin recipe is great for meal prep and absolutely delicious.

Number Of Ingredients 10

12.5 Ounces Chicken (or Any Cooked Protein)
2 Large Whole Eggs
½ Cup Celery (Chopped )
¼ Cup Red Onion (Chopped )
½ Teaspoon Lemon Pepper
2 Tablespoons Bacon Bits
¼ Cup Cheddar Cheese (Fat Free)
1 Teaspoon Crushed Red Pepper
½ Teaspoon Garlic Powder
¼ Teaspoon Salt

Steps:

  • Drain your Canned Chicken
  • Chop up your Celery and Red Onion
  • Add all of your ingredients into a bowl
  • Mix everything together
  • Take out a muffin pan and coat it with non-stick cooking spray
  • Evenly distribute your mix into the muffin spots
  • Bake on 350F/176C for 30-35 minutes or until they start to brown

Number Of Ingredients 16

2 lbs. Tyson ground chicken
3 egg whites
2 cups quick cooking oats
1/2 tsp ground cumin
1/2 tsp dried thyme
1 tsp paprika
2 tsp dry yellow mustard
2 tsp black pepper
2 tsp chili powder
2 tbsp garlic powder
2 tbsp no salt seasoning (we use Kirkland from Costco)
2 tbsp minced garlic
1 diced onion
3 diced celery stalks
Diced Tomatoes
fresh ground Himalayan salt and pepper

Steps:

  • Pre heat oven to 375. Lightly coat the muffin pans with a little olive oil or spray with cooking spray. Once you gather all your tasty ingredients you put the chicken, egg whites, seasonings, garlic, and oats in the bowl and mash together. Add the veggies in, mash and mix around some more, and break out your cookie scoop or meatballer. I find these make each of the muffins pretty evenly proportioned. Bake for 40 minutes, or until a thermometer reads 180 degrees.

  • In a small pan, heat 1 tsp oil over medium heat. Add onion and garlic and lightly sauté for 1-2 minutes. Allow to cool for 5 minutes.
  • In a large bowl, mix ground chicken, egg yolk, breadcrumbs, onion mixture, dried herbs, salt, pepper and 1/2 cup grated Parmesan together. Gently mix with hands. {You can use a spoon but, honestly, hands work the best}
  • Fill each muffin cup about 1/3 full with meat mixture. Place one cube of fresh mozzarella one top of meat mixture in each muffin cup. Then, evenly divide the remaining meat mixture on top of the mozzarella.
