A twist on the old favorite for those who don't have Thousand Island on hand. You've never had a homemade sandwich quite like this!

4 slices rye bread
2 tablespoons extra-virgin olive oil
4 teaspoons mayonnaise
4 teaspoons hot chicken wing sauce
2 slices Swiss cheese
½ cup sauerkraut
8 slices deli turkey

Steps:

  • Preheat a large skillet over medium heat.
  • Lightly coat one side of each slice of bread with olive oil; lay out the slices, oiled side down, on a plate. Spread 1 teaspoon mayonnaise and 1 teaspoon of hot sauce on each slice. Top two of the slices of bread with a slice of Swiss cheese and 1/4 cup of sauerkraut. Arrange the turkey on the other two slices of bread. Bring the two halves together.
  • Fry the sandwiches in the preheated skillet until the bread is golden brown on both sides and the cheese has melted.

A healthy grilled turkey Reuben sandwich with homemade Thousand Island and purple sauerkraut will shake up your lunch routine with more excitement.

For the Thousand Island Dressing:
1/2 cup mayo
1/2 tablespoon curry ketchup
1 egg (chopped)
1 tablespoon roasted red pepper (chopped)
1/2 teaspoon yellow mustard
1/2 teaspoon Sriracha
1/2 tablespoon sweet pickle relish
1/4 tablespoon garlic
Salt and pepper (to taste)
For the Sandwich:
2 slices marbled rye
1 1/2 tablespoons Thousand Island Dressing
2 slices Swiss cheese
1/4 oven-roasted turkey breast (sliced)
2 tablespoons purple sauerkraut
2 pats salted butter

Steps:

  • Gather the ingredients.
  • In a bowl, combine the mayo, curry ketchup, egg, peppers, mustard, Sriracha, pickle relish, and garlic.
  • Stir until everything is incorporated, season with salt and pepper to your liking, and set aside.
  • Gather the ingredients.
  • Take one slice of marbled rye and smear on some of your homemade Thousand Island dressing.
  • Add a slice of cheese, the turkey, sauerkraut, and a second slice of cheese.
  • On the remaining slice of marbled rye, give it a hearty smear of the Thousand Island.
  • Close the sandwich. Butter both sides with the butter and set aside.
  • Put the sandwich on a medium-sized skillet and turn the heat to medium.
  • Let the sandwich cook for a few minutes on each side until the cheese starts to melt and the bread begins to crisp up.
  • Once both sides are evenly browned, take it off the skillet and set aside for a minute so the cheese doesn't ooze out when you slice it.
  • Slice the sandwich in half.
  • Serve hot with an extra side of Thousand Island dressing.

Great grilled turkey! My grill is an old one that has a hinged top. I open all of the vents and prop the lid open about 2 to 3 inches with a stick...man does it get hot! Do not spill the juices and wine on the coals, as they are extremely flammable.

1 large onion, diced
1 (750 milliliter) bottle red wine
salt and pepper to taste
12 pounds whole turkey

Steps:

  • In a pot style grill, fill the bottom with a 5 pound bag of charcoals. Light the charcoal, and when ready, spread to cover the bottom of grill.
  • Wash the turkey down and stuff with onion. Rub the exterior down with salt and pepper.
  • Place the turkey in a deep aluminum roasting pan. Place the pan on the grill's grate. Pour wine over the turkey. Cover the top of the turkey with foil.
  • Cover the grill with the lid and open the vents. Grill the turkey for 60 to 90 minutes, or until meat is to your liking. Baste frequently. You might need to add water to the pan if the wine evaporates.

These sandwiches are really delicious and easy to make. They are one of my family's fix-it-quick favorites. I like to serve them with big bowls of steaming vegetable soup and dill pickles on the side. Enjoy!

2 tablespoons butter
8 slices rye bread
8 slices deli sliced corned beef
8 slices Swiss cheese
1 cup sauerkraut, drained
½ cup Thousand Island dressing

Steps:

  • Preheat a large skillet or griddle on medium heat.
  • Lightly butter one side of bread slices. Spread non-buttered sides with Thousand Island dressing. On 4 bread slices, layer 1 slice Swiss cheese, 2 slices corned beef, 1/4 cup sauerkraut and second slice of Swiss cheese. Top with remaining bread slices, buttered sides out.

2 tablespoons sliced pickled jalapeños
2 tablespoons Quick Pickles, recipe follows, plus 1 tablespoon Quick Pickle brine
1 cup mayonnaise
1/4 cup ketchup
1 teaspoon Dijon mustard
1/4 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
1 to 2 tablespoons unsalted butter, at room temperature
4 slices marble rye
8 ounces thinly sliced turkey pastrami or thin deli-sliced cracked pepper turkey
1 cup sauerkraut, drained
4 slices Swiss cheese
Cooked sweet potato fries, or your favorite fries, for serving
2 cups white wine or champagne vinegar
1/4 cup sugar
1 tablespoon yellow mustard seeds
1 tablespoon kosher salt
2 cloves garlic, lightly smashed
1 bay leaf
1 English cucumber, sliced into 1/8-inch-thick rounds
1 tablespoon chopped fresh dill

Steps:

  • For the 18,000 Island dressing: Roughly chop the pickled jalapeños and Quick Pickles and add them to the mayonnaise in a large bowl. Add the ketchup, mustard, granulated garlic, salt and pepper to taste. Stir to combine and set aside.
  • For the reubens: Preheat a griddle over low heat. Butter one side of each piece of bread and place butter-side down on the griddle. Toast until browned. Meanwhile, add the turkey to the griddle in piles to warm. Add the sauerkraut in 2 separate bundles to the same griddle. Spoon a generous amount of dressing on top of the sauerkraut and cover each with 2 slices of Swiss cheese. Cover with a lid or large inverted bowl to warm and allow the cheese to melt, about 30 seconds. Add the Quick Pickle brine to the griddle and cover to allow the cheese to steam and fully melt.
  • Place the sauerkraut on top of the turkey, then remove it to a slice of toasted rye. Top with a second piece of toasted rye. Slice in half on the diagonal and plate the sandwich on top of sweet potato fries to prevent the bottom of the sandwich from steaming, and to catch any drippage. Enjoy warm.
  • Add the vinegar, sugar, mustard seeds, salt, garlic, bay leaf and 1/2 cup water to a saucepan and bring to a simmer. Cook until the sugar has dissolved, then add the cucumbers and dill to a heatproof container and pour over the pickling liquid. Let sit for at least 10 minutes.

3/4 cup sauerkraut
8 slices dark pumpernickel bread
1 teaspoon caraway seed
4 slices swiss cheese (I use low fat)
8 ounces turkey breast
cooking spray

Steps:

  • Spread dressing on one side of each slice of the bread.
  • Layer sandwiches:turkey breast, sauerkraut, caraway seeds and cheese.
  • Cover with a second piece of bread.
  • Heat a nonstick skillet to med-high; lightly coat with cooking spray.
  • Place sandwich in pan.
  • Cook 1 minute.
  • Spray top side of sandwich, flip and cook an additional minute until crispy and cheese is melted.
  • Cool slightly and cut in half.
