GRILLED SWAI AND ASPARAGUS PACKETS
I love making foil packet dinners. Who wouldn't love a full dinner with virtually no dishes to wash afterwards? This flavorful packet has tender, moist fish, and seasoned vegetables. It is incredibly versatile!

- Preheat an outdoor grill for medium heat. Tear off 4 large squares of aluminum foil and spray with cooking spray.
- Melt 1/3 of the butter in a skillet over medium heat. Toss asparagus, onion, dill, and seasoning blend with butter. Divide among the foil squares.
- Top vegetables with swai fillets. Place small pats of remaining butter over each fish fillet. Sprinkle liberally with seasoning blend. Place lemon slices on top. Fold up foil into packets, sealing seams tightly but leaving room inside for steam to circulate.
- Place packets directly on the grill and cook until swai flakes easily with a fork, 20 to 25 minutes. Open packets carefully and squeeze lemon juice over swai and vegetables.

GRILLED POTATO AND ASPARAGUS FOIL PACK

- Heat gas or charcoal grill. Tear off 12-inch length of heavy-duty foil to make packet. Lightly spray 1 side of foil (side that will be inside of packet) with canola oil cooking spray.
- Place potatoes in 2-quart saucepan; cover potatoes with water. Heat to boiling. Reduce heat; cook until potatoes are just tender, about 10 minutes. Drain potatoes; return to saucepan. Add remaining ingredients; toss gently.
- Place mixture in center of foil. Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space on sides for heat circulation and expansion. Fold other sides to seal.
- Place foil packet on grill. Cover grill; cook 12 to 15 minutes, turning packet once. Cooking times are approximate and depend on the heat of your grill.

- Place catfish in a shallow baking dish; set aside. Combine Worcestershire sauce, lemon juice, garlic, paprika, pepper, and butter in large bowl; mix well. Pour over catfish and marinate in refrigerator for up to 2 hours.
- Preheat grill to 350-400 degrees.
- Use large pan, cover with aluminum foil. Fold up sides to form a rim; pour marinade over the catfish. Grill in pan for 20-25 min, flipping at halfway through. Once cooked then transfer to grill for a 1 minute on each side. Take off grill and enjoy!

GRILLED ASPARAGUS WITH LEMON DRESSING
This preparation favors thick spears of asparagus, which become tender and remain moist inside while their exteriors char. Those that weigh an ounce or two each-that is, eight to sixteen per pound are the best. The only difference between thick and pencil asparagus is that thick asparagus must be peeled before cooking to remove the relatively tough skin; use a vegetable peeler or paring knife.

- Snap off the woody ends of the asparagus; most spears will break naturally an inch or two above the bottom. Peel the stalks up to the flower bud. Meanwhile, start a grill or preheat a cast-iron or other heavy skillet over medium-high heat until it smokes.
- To grill the asparagus, toss them with about 1 tablespoon of the oil, mixing with your hands until they're coated. Season well with salt and pepper to taste. Grill until tender and browned in spots, turning once or twice, a total of 5 to 10 minutes.
- To pan-grill the asparagus, do not oil or season them. Just toss them in the hot skillet and cook, turning the individual spears as they brown, until tender, 5 to 10 minutes. Remove as they finish and season with salt and pepper.
- Mix together the lemon juice and shallot, then stir in enough olive oil to add a little body and take the edge off the sharpness of the lemon; the mixture should still be quite strong. Season it with salt and plenty of black pepper and stir in the parsley. Serve the asparagus hot or at room temperature with grilled or broiled swordfish, monkfish, or other sturdy fish. Spoon the sauce over all.
- You could serve these grilled asparagus with any of the vinaigrettes on page 304 in lieu of the lemon-shallot-parsley mixture here. If you were serving them as part of an Asian-themed meal, you might swap out the dressing in this recipe for Soy-Ginger Dressing: Combine 1/4 cup soy sauce with 1/2 teaspoon minced garlic, 1 teaspoon minced peeled fresh ginger, 1/2 teaspoon sugar, 2 teaspoons rice or other mild vinegar, and a few drops of sesame oil. Serve over the asparagus.

- Preheat grill to medium-high (350°-400°). For the pepper rub, combine dry mustard, garlic powder, chipolte, black and red peppers, and salt in a small bowl. Set aside.
- Cut four 12x16-inch sheets of heavy-duty aluminum foil, and place 1 fillet in the center of each sheet. Sprinkle evenly with pepper rub. Fold sides of foil up and over fillets to form packets, crimping edges to seal.
- Grill packets 10 minutes or until fish flakes with a fork. Carefully open packets, and serve.

- Preheat grill.
- Thaw shrimp (if frozen), peel and devein shrmp, removing tails if desired.
- Rinse shrimp and pat dry with paper towels, set aside.
- Snap off and discard woody bases from asparagus.
- Cut asparagus diagonally into 2-inch pieces.
- In a small bowl, stir together the butter, dill, wine, lemon zest, salt and pepper; set aside.
- Fold a 36x18-inch piece of heavy duty foil in half to make an 18-inch square.
- Place shrimp, asparagus, and leek in center of foil and top with dill butter mixture.
- Bring up opposite edges of foil and seal with a double fold.
- Fold remaining edges together to completely enclose shrimp mixture, leaving space for steam to build.
- Grill covered over medium heat 15 minutes or until shrimp are opaque, turning packet once.
- Serve over pasta or rice, drizzle with juices from foil packet.
