GRILLED STEAK SANDWICH

- Mix all of the marinade ingredients together in a bowl and pour it into a large gallon-sized resealable plastic bag. Add the steak and turn to make sure it is completely covered by the marinade. Refrigerate for at least 2 hours and up to 12, turning the bag occasionally.
- Melt the butter in a heavy bottomed saucepan over medium heat. Once melted add the flour and stir until it becomes a light blonde color. Slowly whisk in milk. Bring the milk up to a simmer while stirring. Once at a simmer, stir in the cheese, a handful at a time. Season with salt and pepper, to taste. Keep warm until ready to use.
- Preheat the grill to medium-high heat.
- Toss green onions in a bowl with olive oil, and salt and pepper, to taste.
- Remove the steak from the marinade and let the excess drain off. Grill the steak for 5 to 7 minutes per side for medium-rare and about 8 to 10 minutes for medium. Remove the steak from the grill to a cutting board and allow it to rest for 10 minutes before slicing.
- While the steak rests, put the green onions and baguettes on the grill. Cook the green onions until charred and soft, about 4 minutes, and toast the bread until golden.
- To assemble, slice the steak, at a 45 degree angle, into very thin slices across the grain. Put some of the steak on the bottom of each roll, top with some grilled green onions, and smother with provolone cheese sauce. Cover with the top of the roll and serve.
AWESOME APPLE CRANBERRY CHUTNEY
This is an incredibly delicious recipe I got from one of the chefs at school. It goes well with smoked, roasted, or grilled pork as well as smoked turkey and even ham. It is good enough to eat with a spoon! If you don't like this stuff, seek medical attention as you may have a mysterious disorder!

Steps:
- Combine the first seven ingredients in a 2-quart saucepan and bring to a gentle boil over medium-high heat.
- Reduce heat to medium-low and simmer, uncovered, until the mixture has reduced to a thick syrup, being careful NOT to caramelize the sugar.
- Heat the butter in a large skillet over medium-high heat and saute the apples until they are a light golden color.
- Add the apples to the chutney reduction, remove from heat, cover, and let stand 10 minutes before serving, removing the cinnamon stick.
SPICY CRANBERRY CHUTNEY
What could be better with a simple roast or grilled vegetables than a spicy fruit chutney? Nothing, except knowing it was a gift from someone you cherish. Consider including a decorative serving spoon, tied to the side of the jar with raffia.

CHIPOTLE GRILLED STEAK SANDWICH

This is the ORIGINAL RECIPE, so what you order at the restaurant is actually their adaptation of the original chefs sandwich. The tender steak with the yummy plantains makes this sandwich addictive. Both versions are FANTASTICO!

- Peel plantains, and cut in half widthwise, then cut in half lengthwise.
- In a large pot or deep-fryer, preheat vegetable oil to 325°F.
- Add the plaintains to the oil, and fry for 5 minutes.
- Remove them and place on a flat surface.
- Increase heat to 375°F.
- With a metal flat spatula, press down onto the plantains until they are flat, less than 1/4 of an inch.
- Using a knife to help scrape the plantain off the spatula, deep-fry the plantains again for 3 minutes.
- Pull them out and season with salt and pepper.
- Combine the breadcrumbs, cayenne pepper, black pepper, salt, paprika, oregano, thyme, garlic powder, onion powder to create Cajun spice.
- Dip each piece of steak into 4 ounces melted butter and then into the Cajun spice, covering both sides of the steak.
- Spread the remaining melted butter onto a flat top or metal skillet, place the steak on top and cook on both sides until medium or preferred degree of doneness.
- After the steak is done, slice it thinly against the grain.
- Combine the mayonnaise and chipotle sauce to make the Chipotle Mayonnaise.
- Onions: In a mixing bowl, combine flour, salt, pepper, garlic powder, onion powder, and a pinch of cayenne pepper.
- Slice the onion very thinly.
- Place in the flour mixture. Squeeze the slices of onion as you are mixing them with the flour mixture. Shake off the excess flour.
- Drop a little bit of onions into 375 F oil at a time to prevent sticking together. Cook for 1 minute and 30 seconds or until golden brown. Drain on paper towels.
- Build a sandwich by layering 1 fried plantain, 1 tbsp chipotle mayonnaise (spread coast to coast on bottom plantain), sliced steak, and 1/3 cup of shredded cheese. Place under the broiler for 1 or 2 minutes or use the microwave to melt the cheese. Then continue layering 1/2 cup of fried onion, 1 more tbsp chipotle mayonnaise, spread coast to coast on top plantain.
- Cut sandwich in half before serving.

- Combine dried cranberries, water, sugar, and ginger in a small saucepan.
- Bring to boiling.
- Cover and remove from heat.
- Let stand for 15 minutes.
- Snip any large pieces of mango chutney.
- Stir chutney into cranberry mixture.
- Cover and chill at least 2 hours (overnight recommended).
- Serve cranberry chutney with soft cheese or cream cheese, apple slices, and crackers, or with toasted baguette slices.

- Combine sauce ingredients; set aside. Preheat grill 5 minutes.

GRILLED STEAK SANDWICH WITH POBLANO CRANBERRY CHUTNEY
This is the ultimate grilled sandwich. Thinly sliced sirloin steak that has been generously rubbed with chili powder, sandwiched between melting Havarti cheese and slathered with a spicy poblano-cranberry chutney. Oh yum! Developed for Craze-E Contest.

- Cut the poblano pepper in half, remove the seeds and place under broiler until charred. Put the pepper in a bowl, cover and allow to stand while preparing the remaining ingredients.
- In a medium size saucepan lightly saute the red onion in a small amount of olive oil. Stir in the cranberries, water, orange juice, orange zest, brown sugar, ginger and cinnamon. Bring to a boil and cook until cranberries pop and juice thickens. Remove from heat. When the poblano is cool enough to handle, remove the charred skin, finely dice and add to the cooked cranberries along with the raisins and pistachios. Cover and refrigerate. The finished chutney should be thick about the consistency of jam.
- Mix together the chili powder, salt and cumin. Rub into the steaks and allow to rest at room temperature for 30 to 45 minutes or can be prepared several hours ahead and refrigerated. Prior to cooking the meat, remove from refrigerate and allow to come to room temperature. The chutney should be removed from the refrigerate and allow to come to room temperature.
- Grill meat on indoor grill until medium. Weather permitting the meat can be cooked on an outdoor grill. Tent with foil and allow meat to rest for 10 minutes then thinly slice.
- To assemble the sandwiches, lightly butter 1 side of each slice of bread as for grilled cheese sandwiches. Turn the plain sides up, top each with a thin slice of cheese, spread each bread slice with cranberry chutney. On 4 of the bread slices, layer the sliced steak and then top with second bread-cheese slice.
- Place bread buttered side down on heated grill or heavy skillet. Grill until golden, flip and cook the other side. Serve and enjoy.
- Please note: Canned poblanos may be used. There may be extra chutney that is delicious served alongside the sandwich.
