Another wonderful recipe from the Kahlua website. We alway grill out in the summer, we love eating outside. Whenever I find a recipe for grilling, I will try it out to see if we like it and then keep it in my files for future meals.

1/4 cup cooking sherry
1/4 cup molasses
2 tablespoons Kahlua
2 tablespoons soy sauce
4 pork chops, 1 inch thick

Steps:

  • Combine first 3 ingredients and pour over pork chops.
  • Cover and regrigerate for 30-60 minutes.
  • Drain pork chops and reserve the marinade for later.
  • Grill pork chops over medium-high heat about 20-30 minutes, until inside is no longer pink.
  • Turning once and brush frequently with the reserved marinade.
  • Serve with your favorite potato and vegetable dish.
  • Enjoy.

4 pork chops, double-thick
2 Tbsp olive oil
3/4 Tbsp garlic, minced (i used jarred)
1/2 c white wine, dry
1/2 c cooking sherry
3/4 Tbsp garlic, minced (i used jarred)
1 Tbsp butter, unsalted (olive oil will do in a pinch)
salt and pepper

Steps:

  • 1. Heat a skillet that you have a lid for on med-high for 2-3 minutes, add the olive oil. When you see the first bit of smoke put the chops in and turn the heat to high. Brown chops on both sides, no more than 2 min per side. Moving them in the pan helps to brown them better, I was busy making our side and didn't bounce them around enough.
  • 2. Add garlic and wine, reduce heat to medium. Cook until wine is almost gone, turning once, another few minutes. Add stock, cover, and cook (turning a couple of times )on low for 10-15 minutes.
  • 3. I cook my chops as he describes--when I cut into them they are slighly pink but turn pale quickly. If you prefer them more done cook to your liking; either way remove chops when done and set aside.
  • 4. Add sherry, scrape bottom of pan to deglaze, and cook on medium for a minute or so until slightly reduced. Add butter (or oil) and garlic and cook, on med-high, until syrupy. Pour some of the sauce over chops, pour the rest in a gravy boat. My eldest pours the sauce over the potatoes and will sometimes dip her green beans in it as well.

Adapted from Bon Appetit magazine. If possible, get a helper to grill the meat while you are preparing the cherry sauce - if you time it right, then by the time the grill is preheated and the meat os cooked, your sauce will be ready to go and nice & warm. Cook time for the will vary depending upon the weight of your chops and whether or not they have bones. You may also broil these instead, if desired.

4 pork loin chops (1/2" thick)
1/4 cup low sodium soy sauce
1 teaspoon canola oil
1/2 cup onion, chopped
1 tablespoon fresh ginger, chopped
1 teaspoon garlic, minced
1 cup fresh sweet cherries, pitted and coarsely chopped (measure after pitting & chopping)
salt and pepper, to taste

Steps:

  • Season pork with salt and pepper to taste.
  • Then place into a zip-top baggie with soy sauce and let marinate in the fridge for 1 hour, turning bag over occasionally.
  • Set a small skillet over medium heat and add oil.
  • Saute onions, garlic, and ginger in oil until tender, about 5 minutes.
  • Add cherries and saute until the cherries start to soften- approximately 5-10 minutes.
  • Remove from heat and season to taste with salt.
  • Remove pork from marinade (discard marinade) and grill over medium high heat about 4 minutes per side, or until cooked through.
  • Serve with cherry sauce on top.

3 tablespoons balsamic vinegar
3 tablespoons sugar
3/4 cup dry red wine
1/4 cup minced shallot
a 3-inch cinnamon stick
1 cup chicken broth
1 pound sour cherries (about 3 cups), pitted
1 tablespoon cornstarch dissolved in 1 tablespoon cold water
2 teaspoons fresh lime juice, or to taste
eight 1-inch-thick boneless pork chops
vegetable oil for rubbing chops

Steps:

  • In a heavy saucepan boil the vinegar with the sugar over moderate heat until the mixture is reduced to a glaze. Add the wine, the shallot, and the cinnamon stick and boil the mixture until it is reduced to about 1/4 cup. Add the broth and the cherries and simmer the sauce for 5 minutes. Stir the cornstarch mixture, add enough of it to the sauce, stirring, to thicken the sauce to the desired consistency, and simmer the sauce for 2 minutes. Discard the cinnamon stick, stir in the lime juice and salt and pepper to taste, and keep the sauce warm, covered.
  • Pat the chops dry with paper towels, rub both sides of each chop with the oil, and season the chops with salt and pepper. Grill the chops on an oiled rack set 5 to 6 inches over glowing coals for 6 to 8 minutes on each side, or until they are just cooked through. Transfer the pork chops to a platter and spoon the sauce over them.
