SESAME SHRIMP SKEWERS



Sesame Shrimp Skewers image

These Sesame Shrimp Skewers are the perfect gluten-free dish for busy nights. They only require 5 ingredients and a few minutes to make!

1/2 pound shrimp, peeled and deveined with tails removed
2 tablespoons toasted sesame oil
2 tablespoons gluten-free soy sauce
1 tablespoon chili garlic sauce
1 clove of garlic, minced

Steps:

  • Make marinade by combining the sesame oil, soy sauce, chili garlic sauce and minced garlic.
  • Place shrimp and half of the marinade in a ziplock bag for at least 15 minutes to let flavors blend.
  • Thread shrimp onto skewers (discard any marinade left in bag).
  • Grill 2-3 minutes on each side, or until shrimp is cooked through.
  • Brush with remaining marinade and garnish with sesame seeds if desired.

1 pound Shrimp
1 zucchini (sliced)
1 red onion (sliced)
1 red bell pepper (sliced)
1 lemon (sliced)
1 shrimp marinade

Steps:

  • Add the shrimp, zucchini, red onion, red bell pepper, and lemon to a medium sized bowl.
  • Prepare the shrimp marinade and add to the bowl of shrimp and veggies. Let marinate 30 minutes or over night.
  • Thread skewers with the shrimp and veggies.
  • Preheat grill to medium high heat. Thread the shrimp on the skewers. Place on the grill. Grill on each side for about two minutes or until no longer pink.

Wooden skewers (4-inch)
24 large shrimp
1/2 cup light soy sauce
2 cloves garlic, finely chopped
1 tablespoon grated fresh ginger
1 tablespoon toasted sesame oil
2 tablespoons white wine vinegar
1 tablespoon fresh lime juice
1/4 cup peanut oil, plus extra for drizzling
Salt and pepper
2 tablespoons toasted sesame seeds

Steps:

  • Soak 4-inch wooden skewers in cold water for 1 hour. Thread 1 shrimp onto each skewer so that the shrimp lie flat.
  • Whisk together the soy, garlic, ginger, sesame oil, white wine vinegar, lime juice and peanut oil together in a small bowl. Place shrimp skewers onto a plate and drizzle with peanut oil to lightly coat. Season with salt and pepper.
  • Heat grill. Grill shrimp 2 minutes per side or until just cooked through. Place shrimp on a platter, drizzle with vinaigrette and sprinkle with sesame seeds.

2 pounds large shrimp, shells on (heads, too, if possible)
2 tablespoons coarse salt
2 tablespoons freshly ground pepper
2 tablespoons peanut oil
2 cloves garlic, minced
1 tablespoon ginger, minced
1 teaspoon red pepper flakes
2 tablespoons sesame oil

Steps:

  • Rinse the shrimp, pat them dry (leaving the shells on) and toss them in a mixture of salt, pepper, peanut oil, garlic, ginger and red pepper. Preheat grill or broiler.
  • Place the shrimp on an oiled rack and grill for two to three minutes on each side. Be careful not to overcook them. Remove them from the grill, place them in a bowl and toss them with sesame oil. Serve immediately.

1 can (8 ounces) tomato sauce
1 cup chopped onion
1/2 cup water
1/4 cup packed brown sugar
1/4 cup lemon juice
3 tablespoons Worcestershire sauce
2 tablespoons canola oil
2 tablespoons prepared mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (20 ounces) unsweetened pineapple chunks
1 pound uncooked medium shrimp, peeled and deveined (about 32)
1 medium green pepper, cut into chunks
1 medium onion, cut into chunks
3 cups hot cooked rice

Steps:

  • In a large saucepan, combine the first 10 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes., Drain pineapple, reserving 2 tablespoons juice (save remaining juice for another use); set pineapple aside. Stir reserved juice into sauce. Pour half into a small bowl for basting; cover and refrigerate. Pour remaining sauce into a large resealable plastic bag; add shrimp. Seal bag and turn to coat; refrigerate for 2-3 hours., Drain and discard marinade. Alternately thread the shrimp, pineapple, green pepper and onion on eight metal or soaked wooden skewers., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack.
