SALSA ROJA CHICKEN



Salsa Roja Chicken image

Quick pan-seared chicken breasts served with salsa, cotija cheese, and cilantro for a wonderful south-of-the-border taste. The whole family loves this! Easy and quick. Garnish with chopped avocado and sour cream if you like. Serve with Mexican rice and a tossed green salad.

1 ½ pounds skinless, boneless chicken breasts, cut into six 4-ounce portions
¼ cup all-purpose flour, or more as needed
1 pinch salt and ground black pepper to taste
1 tablespoon olive oil, or as needed
1 (15 ounce) can diced tomatoes
1 cup tomato salsa
1 tablespoon chili powder
½ teaspoon ground cumin
½ cup chicken stock
2 tablespoons freshly squeezed lime juice
4 ounces crumbled cotija cheese, divided
1 (6 inch) corn tortilla, cut into 1/2-inch squares
1 cup stemmed and chopped fresh cilantro leaves

Steps:

  • Place chicken between 2 sheets of heavy plastic on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to 1/2-inch thickness.
  • Combine flour, salt, and ground black pepper in a shallow dish. Dredge chicken in flour mixture.
  • Coat a large skillet with olive oil; heat over medium-high heat. Reduce heat to medium and add chicken; cook until golden brown, 5 to 6 minutes. Flip chicken and continue cooking until second side is golden brown, about 4 minutes more.
  • Stir diced tomatoes, salsa, chili powder, and cumin into the skillet. Cook until flavors combine, 2 to 3 minutes. Add chicken stock and lime juice; stir to blend. Transfer chicken to a serving platter. Add 3 ounces cotija cheese and tortilla pieces to the sauce; simmer, about 1 minute. Spoon sauce over chicken on the platter.
  • Garnish chicken with remaining 1 ounce cotija cheese and fresh cilantro.

  • Preheat grill to high heat. Place 12 of the tomatoes, stem side down, directly on the grill. Roast the tomatoes over the flame for 10 to 20 minutes or until they are very charred and blackened. Flip over and continue to grill until this side is also charred and blackened. Add jalapenos to grill after you flip the tomatoes for the first time. These will also blacken but make sure to turn them to get all sides charred.
  • Take the tomatoes and peppers off the grill and place in a large zip lock. Let cool for about 10-15 minutes. When cooled dump tomatoes, peppers, and any liquid into a blender.
  • Add the water and lime juice and blend again until mixed. The salsa darkens as it is chopped finer!

  • Fire up. Preheat the grill to medium high, about 325°F in one single hot zone. When it is hot, clean the grates really well. You don't want any rancid meat grease in your salsa.
  • Prep. Slice the tomatoes in half lengthwise. Slice the jalapeño lengthwise and scoop out the seeds, the white ribs, and the stem end with a spoon. Peel the onion, cut off the ends, and slice into 1/2" thick rings. Peel the garlic cloves and cut off the stem end.
  • Cook. Put the tomato, onion, lime, and jalapeño on the grill cut side down. To keep the garlic cloves from falling through you can put them on a grill topper or a piece of foil or a frying pan. Turn the tomato, onion, and pepper when they start to get grill marks. Let the jalapeño and tomato skins blister and blacken so they will be easy to peel. Remove the lime when the cut side gets grill marks. Remove onion when it gets marked on the second side.
  • Prep again. Let everything cool and peel the tomatoes and jalapeños (you may want to wear gloves when handling the jalapeños). Chop the tomato, onion, jalapeño, garlic, and cilantro in a bowl, squeeze in the lime juice through a strainer or your fingers to catch the seeds (some limes have seeds), and add salt and pepper to taste. Rub the lime skin on a zester to get about 1 teaspoon of lime zest into the bowl. Stir and chill. If you barehanded the pepper, wash thoroughly with soap or you can burn your eyes or other moist parts (use your imagination).
