While you can't go wrong with the classic cantaloupe and prosciutto pairing, feel free use any melon and cured meat you like. All the skewers need is a quick turn on the grill, and appetizers are served!

Honeydew, cantaloupe, or watermelon, cut into wedges
Cured meat, such as salami, bresaola, or prosciutto, sliced paper-thin
Lime wedges, for serving

Steps:

  • Skewer melon wedges; wrap each with a slice of cured meat; and grill, flipping once, 1 to 2 minutes. Spritz with lime juice; serve.

This brings the typical Prosciutto-Wrapped Cantaloupe to the next level!!! Crisping the prosciutto and juicy tender warm cantaloupe. Almost as easy as none cooked version. This is wonderful along or add finely minced mint or basil No need to oil or skewer.

16 slices prosciutto (thinly sliced)
1 cantaloupe, peeled and seeded
freshly cracked pepper, to taste
1 teaspoon fresh basil, chopped (optional)

Steps:

  • Heat grill to high.
  • Cut cantaloupe into 16 slices. Season with pepper and basil.
  • Wrap each with a slice of prosciutto.
  • Grill each of the 3 sides for 1-2 minutes.

3 ingredients that will impress your grilling buddies OR simple, elegant wedges that are a fabulous hors d'oeuvre to pass at a cocktail party. It's up to you! Make these ahead of time to save you valuable party time! If you don't have the cantaloupe, that's OK. Just use some lightly grilled baguette slices or nothing at all. Please note that you will only use HALF of a wheel of brie - it's explained in the directions. You can also put the brie in the freezer for 5 minutes to make it easier to cut. Enjoy!

8 slices naturally dry cured prosciutto ham, sliced very thin (about 4 oz)
1 lb wheel double cream brie cheese, chilled (you will only use half of it but need that size to get the right shaped wedges)
1/4 cantaloupe, peeled, seeded and cut in 8 slices

Steps:

  • Preheat barbecue to medium-high heat.
  • Cut Brie in half to make two half-moons. Wrap one half and save for another use. Cut other half into eight equal, pie-shaped wedges. Wrap one piece of prosciutto around each wedge of Brie, covering as much of Brie as possible. Place cantaloupe on serving platter.
  • Place prosciutto-wrapped Brie wedges on greased grill. Grill for 30 seconds to 1 minute on each side, or until grill-marked and cheese is starting to melt. Place on top of cantaloupe slices and serve immediately.
  • **** To prepare this ahead of time, prepare the prosciutto and brie packages. Wrap well with plastic wrap and refrigerate until grilling time. ****.

I like this way better than with bacon. Infact I entered this in our local contest for appetizers and it won.

2 (3 ounce) packages prosciutto
1 lb sausage
1 (8 ounce) package cream cheese, softened
1 cup shredded parmesan cheese
15 -20 jalapeno peppers
toothpick

Steps:

  • Cut peppers, lengthwise, and remove seeds.(Wear gloves).
  • Cook and drain the sausage, til there is no longer any pink.
  • Combine the cream cheese and Parmesan cheese, real good.
  • Fold in the sausage.
  • Place mixture of the sausage into each halve of the peppers. (about a teaspoon full-use your own judgement).
  • Wrap the Prosciutto around each pepper, and secure with a tooth pick.
  • Prepare your grill for indirect heat, using a drip pan.
  • Place jalepnos over pan, and grill covered over indirect heat for about 10 minutes.
  • (If you like the Prosciutto more crunchier cook longer.)
  • Serve with spicy ranch dressing if you would like.

I saw this on Licence to Grill on Food Network Canada. We love veal and are always looking for new ways to cook it. I have not yet tried this recipe but if you do please let me know.

Number Of Ingredients 11

1 medium onion, roughly chopped
2 sprigs fresh sage
1 cup white wine
3 garlic cloves
2 teaspoons ground pepper
3 tablespoons olive oil
3 lbs veal loin, slightly flattened
10 ounces prosciutto, thinly sliced
dripping, pan
2 cups white wine (475ml)
3 sprigs fresh rosemary

Steps:

  • Marinade.
  • Combine marinade ingredients in blender, pour in oil as blending and puree until smooth. In a large sealable bag, add marinade and veal. Refrigerate 12-24 hours.
  • Veal.
  • Remove veal from marinade, lay flat and pat dry. Place the veal on a large piece of plastic wrap, cover with another piece of plastic wrap. Lightly tenderize the veal.
  • On a large piece of plastic wrap place slices of proscuitto. Place the unwrapped piece of veal in centre of proscuitto, drizzle with oil and season with pepper. While lifting the plastic wrap gently, encase the veal. Wrap again tightly with more plastic and let it set up in the fridge for 15 minutes.
  • Bring veal to room temperature before grilling. Remove the plastic wrap.
  • Place a drip pan under the grill rack and add rosemary and white wine. Prepare grill for indirect heat by heating only one side of the grill to high and close lid.
  • Preheat grill to 350ºF/175ºC.
  • Place veal on the grill side with no direct heat and grill for one hour, until the internal temperature reads 150ºF on a meat thermometer. Remove from grill and cover with foil. Let rest for 15 minutes before slicing.
