- Preheat grill for high heat.
- Lightly coat the asparagus spears with olive oil. Season with salt and pepper to taste.

GREAT GRILLED ASPARAGUS
Steps:
- In a small pan, over medium heat, add the vinegar, zest and juice of the lemon and a pinch of salt. Bring to a simmer and let the mixture reduce until it becomes syrupy, about 10 minutes.
- Meanwhile, warm a grill pan over medium-high heat. Wash and trim the ends of the asparagus. Toss the asparagus lightly with olive oil, and season with salt and pepper, to taste. Grill asparagus 5 minutes, then flip and grill until slightly blackened on both sides, about 4 minutes more. Transfer the asparagus to a serving platter, drizzle with balsamic syrup and serve.
BALSAMIC GRILLED ASPARAGUS
Steps:
- Stir together the olive oil, balsamic vinegar, shallots, garlic and oregano in a medium bowl. Pour the marinade into a 1-gallon resealable plastic storage bag, add the asparagus and seal the bag closed. Place the bag in a bowl or on a plate (just in case it leaks) and marinate in the refrigerator for 8 to 24 hours, flipping a couple of times.
- Preheat an outdoor grill to medium heat. While the grill heats up, remove the asparagus from the marinade, allowing any excess marinade to drip off. Season liberally on all sides with salt and pepper.
- Place the asparagus on the hot grill and cook, flipping as needed, until crisp-tender and charred in spots, about 8 minutes. Transfer to a platter, garnish with the chopped parsley and serve immediately.
GRILLED BALSAMIC ASPARAGUS

- Snap off tough ends of asparagus and wash well through 2-3 changes of cold water.
- Combine all ingredients in a large zip-top plastic bag, seal and marinate for 30-60 minutes.
- Preheat grill on high heat.
- Remove asparagus from bag (discard marinade) and place on preheated oiled grill rack.
- Grill 5 minutes on each side or until asparagus is done.

- Light the grill, using only hardwood or lump charcoal. The fire is ready in approximately 20 minutes or when the coals glow red and white ash begins to appear on the coals. Spread the charcoal in a single layer to evenly distribute the heat. If you need to add additional coals at any time, arrange them around the rim and they will catch quickly without disturbing the glowing center coals. Set the grill rack 4 inches above the fire and let it heat for 5 minutes. The fire is ready for grilling when you can barely hold your hand 4 inches above the coals for 4 seconds. This is the test for a medium-hot fire.
- Trim about 1 inch off the thick woody end of each asparagus spear; the younger and fresher the asparagus, the less you will need to trim from the bottom. Strip away the hard and stringy outer portion of the stalks with a sharp vegetable peeler. Arrange the asparagus in a shallow dish. Drizzle with the olive oil and turn to coat.
- Sprinkle salt and a heavier portion of pepper on a plate and mix well. Roll each spear of asparagus in the salt mixture until lightly coated.
- Arrange the spears on the grill rack. Grill for 10 minutes or until light brown and of the desired degree of tenderness, turning frequently. Place the asparagus in a shallow serving dish. - 1. Pre heat your indoor grill pan and coat with olive oil before preheating.(can use outdoor grill as well) Use Med high heat
- 2. Pat dry Ham Steak with paper towel and place on grill for 7 to 8 minutes per side depending on thickness
- 3. Place pineapple on grill with steak and turn same timing as ham steak. Preheat oven on broil
- 4. The last 8 minutes of the ham cooking in a small saute pan place balsamic vinegar and cook on med high heat for several minutes to cook down. Add Maple syrup and dijon mustard and mix in mustard well cook another 3 min to thicken a bit
- 5. Take ham and pineaple off grill put in serving dish and cover ham with glaze and let rest while asparagus is cooking

GRILLED ASPARAGUS WITH BALSAMIC SYRUP
I made this tonight for dinner and it was wonderful. Original recipe is from my Webber Cookbook and I've changed it up for us.

- In a small saucepan bring the vinegar to a simmer over medium heat.
- Reduce the heat until just a few bubbles break through the surface.
- Add the smashed garlic.
- Cook at a slow simmer until about 1/4 cup of vinegar remains (about 20 minutes).
- If you cook too quickly or it reduces too much, it will turn bitter rather than sweet.
- Remove the sauce pan from the heat and let cool to room temperature (The syrup will continue to thicken as it cools).
- Heat grill to medium heat.
- Remove and discard all tough, woody ends from the asparagus spears.
- Wash and pat dry.
- Lightly coat the asparagus with the Hot Pepper Oil.
- Season evenly with the salt and pepper.
- Brush the cooking grate clean.
- Lay the asparagus perpendicular to the bars on the grate.
- Grill over direct medium heat with the lid closed as much as possible, until lightly charred and crisp-tender, 4-6 minutes, rolling the spears a couple of times and swapping their positions as needed for even cooking.
- Arrange the asparagus on a platter or individual plates.
- Remove the garlic from the syrup.
- If the syrup is stiff, warm it briefly over medium heat.
- Drizzle some of the syrup over the spears (you may not need all of it.).
- Season with more salt, if desired.
- Serve warm or at room temperature.
