1 fresh pineapple, skinned, cored and cut into 1-inch slices
2 red onions, sliced thickly
3 tablespoons olive oil
salt and pepper
1 lemon, juice and zest of
1 cup fresh mint leaves

Steps:

  • Preheat a gas barbeque or indoor grill.
  • Brush pineapple and onion with olive oil and season with salt and pepper.
  • Grill pineapple for about 5 minutes per side, until golden grill marks appear and the fruit softens.
  • Grill onion until soft.
  • Cut pineapple slices into quarters and chop the red onions.
  • Toss with lemon zest and juice, mint and adjust seasoning.

2 green onions
2 tablespoons olive oil, divided
Salt and freshly ground pepper
1 small ripe pineapple, peeled and diced
1 small jalapeno, finely chopped
2 tablespoons fresh lime juice
2 tablespoons coarsely chopped cilantro

Steps:

  • Preheat grill. Brush the green onions with 1 tablespoon of olive oil and season with salt and pepper. Grill the onions until almost cooked though and finely slice. Place the onions, pineapple, jalapeno in a medium bowl and stir to combine. Add the lime juice, the remaining tablespoon of olive oil and cilantro. Serve at room temperature.

1 can (8 ounces) unsweetened sliced pineapple
3 tablespoons canola oil
2 tablespoons light soy sauce
1 tablespoon white vinegar
1 tablespoon honey
1/4 teaspoon ground ginger
1/4 teaspoon cayenne pepper
4 boneless skinless chicken breast halves (1 pound)
1/2 to 1 teaspoon black pepper
5 cups torn salad greens
1 small green pepper, julienned
1 small sweet red pepper, julienned
1 cup sliced fresh mushrooms
1 small onion, sliced into rings

Steps:

  • Drain pineapple, reserving 2 tablespoons juice. In a small bowl, combine the juice; oil, soy sauce, vinegar, honey, ginger and cayenne. Brush some over pineapple slices; set aside. , Sprinkle both sides of chicken with pepper; grill or broil for 4-5 minutes on each side or until a thermometer reads 170°. Slice into strips. , Grill or broil pineapple, turning to brown both sides, for 2-3 minutes or until heated through. In a large bowl, toss the greens, peppers, mushrooms and onion. Top with chicken and pineapple; or arrange on four plates. Drizzle with remaining dressing.

1 pineapple
1 sweet red pepper, diced
1/3 cup red onion, diced
1 tablespoon coriander, chopped
1 tablespoon mint, chopped
2 tablespoons granulated sugar
2 tablespoons vegetable oil
2 tablespoons lime juice
1 tablespoon fish sauce or 1 tablespoon soy sauce
1 garlic clove, minced
1 dash hot pepper sauce

Steps:

  • DRESSING: In a small saucepan, heat sugar, oil, lime juice, fish sauce, garlic and hot pepper sauce over medium heat, stirring occasionally, just until sugar is dissolved. Let cool completely.
  • With a sharp knife, cut off crown and base of pineapple; cut off skin. With tip of knife, remove pineapple eyes; cut pineapple crosswise into 1/2-inch thick slices. Place on greased grill over medium heat; close lid and cook, turning once for 20 to 30 minutes or until tender and browned. Let cool.
  • Cut each slice into quarters, trimming off core; place in large bowl. Add dressing, red pepper, onion, coriander and mint; toss to coat well. (Salad can be covered and refrigerated for up to 8 hours; let stand at room temperature for 30 minutes).
  • If you wish to make this for a vegetarian or vegan simply use the soy sauce option.
