Dinner's in an easy-to-assemble packet! Grill meat, potatoes and carrots for a satisfying meal.

1 1/2 lb lean (at least 80%) ground beef
1 package (1 oz) onion recipe and dip soup mix (from 2-oz box)
1 egg
3/4 cup milk
1/2 cup Progresso™ plain bread crumbs
1/3 cup ketchup
1 bag (1 lb 4 oz) refrigerated new potato wedges
3 cups ready-to-eat baby-cut carrots
Fresh parsley, if desired

Steps:

  • Heat gas or charcoal grill. Cut 6 (18x10-inch) sheets of heavy-duty foil; spray with cooking spray. In medium bowl, mix beef, dry soup mix, egg, milk and bread crumbs. Shape into 6 loaves, 4x2 1/2x1 inch. Place 1 loaf on each foil sheet; top each with about 1 tablespoon of the ketchup. Place about 1/2 cup potatoes and 1/2 cup carrots around each loaf.
  • Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packets on grill. Cover grill; cook over medium heat 25 to 30 minutes, rotating packets 1/2 turn after 15 minutes, until vegetables are tender and meat thermometer inserted in center of loaves reads 165°F. To serve, cut large X across top of each packet; carefully fold back foil to allow steam to escape. Garnish with parsley.

1/2 cup purchased teriyaki baste and glaze
1/4 cup Progresso™ Plain Bread Crumbs
1/2 teaspoon garlic-pepper blend
1 lb. extra-lean (at least 90%) ground beef
2 cups ready-to-eat baby-cut carrots
1 (15-oz.) can baby corn nuggets, drained

Steps:

  • Heat gas or charcoal grill. Cut four 18x12-inch sheets of heavy-duty foil; spray foil with nonstick cooking spray.
  • In medium bowl, beat egg. Stir in 2 tablespoons of the baste and glaze, the bread crumbs, garlic-pepper blend and ground beef. Shape mixture into four 4x2-inch oblong loaves, about 1 inch thick.
  • Place 1 loaf on sprayed side of each foil sheet; place 1/2 cup of the carrots and 1/4 of the corn around each loaf. Drizzle with remaining baste and glaze. Wrap each packet securely using double-fold seals, allowing room for heat expansion.
  • When grill is heated, place packets on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cover grill; cook 25 to 35 minutes or until loaves are thoroughly cooked and carrots are tender, turning packets over once halfway through cooking. Carefully open packets to allow steam to escape; meat thermometer inserted into center of loaves should read 160°F.

6 russet potatoes, scrubbed clean and diced (not peeled)
1/2 yellow onion, diced
1 1/2 sticks (12 tablespoons) butter
1/2 cup heavy cream
Paprika, to taste
Kosher salt and freshly ground black pepper
2 tablespoons minced fresh parsley

Steps:

  • Preheat a grill to medium-high heat.
  • Pile the potatoes and onions evenly on 6 squares of foil. Add 2 tablespoons butter to each and splash on some cream. Sprinkle on some paprika, salt and black pepper, then finish with a sprinkle of minced parsley on top. Fold the foil pieces to wrap into bundles.
  • Place the potato bundles on the hottest spot on the grill for 30 minutes. Serve the bundles right on the dinner plates.

Foil-Packet Mini Meatloaves with Root Vegetables image

1 1/4 pounds ground beef (85% lean)
1 large egg
1/2 cup panko
1/4 cup plus 2 tablespoons barbecue sauce
Kosher salt and freshly ground pepper
2 scallions, thinly sliced
Cooking spray
3/4 pound small red-skinned potatoes, cut into small cubes
2 carrots, thinly sliced
2 parsnips, thinly sliced
1 tablespoon extra-virgin olive oil
1 teaspoon fresh thyme, roughly chopped

Steps:

  • Preheat a grill to medium high. Combine the beef, egg, panko, 2 tablespoons barbecue sauce, 3/4 teaspoon salt and a few grinds of pepper in a large bowl. Add the scallions, reserving 2 tablespoons of the greens for topping. Mix well with your hands.
  • Tear off four 20-inch-long sheets of foil and lightly coat with cooking spray. Toss the potatoes, carrots and parsnips with the olive oil, thyme and a big pinch each of salt and pepper in a large bowl. Divide the vegetables evenly among the prepared foil sheets, piling them on one side of the foil. Clear a spot in the middle of the vegetables for the meatloaf.
  • Divide the meat mixture into 4 pieces and shape each into a 3-by-4-inch mini meatloaf on the foil. Fold the foil over the meatloaf and vegetables; fold in the edges to form a packet.
  • Grill the foil packets, 10 minutes, then flip and continue grilling until the vegetables are tender and the meatloaves are cooked through, 5 to 8 more minutes. Carefully open the packets and brush the tops and sides of the meatloaves with the remaining 1/4 cup barbecue sauce. Sprinkle with the reserved scallion greens.

4 pounds baking potatoes
2 pounds carrots
1 onion
seasoning salt to taste
½ cup butter
1 ¼ cups sour cream

Steps:

  • Peel and cut up the potatoes and carrots into bite-size chunks. Chop up onion.
  • Combine all veggies in tin foil or foil baking bag. Season with desired amount of seasoning salt and top with butter. Seal foil well (you may need more than one bag, so the vegetables are done evenly).
  • Grill until potatoes and carrots are soft, about 40 minutes (flip bags at least 3-4 times during grilling). Remove from grill and place the veggies in a large bowl and add the sour cream, mixing well.

Steps:

  • Preheat an outdoor grill for medium heat.
  • Place carrots on a large sheet of foil, approximately 18 inches long. Sprinkle with salt, garlic powder, onion powder, and pepper, then drizzle evenly with olive oil. Toss to coat. Fold edges together and securely close to form a foil packet, leaving room for heat circulation inside.

2 carrots, cut into cubes
1 tablespoon butter
1 (1 ounce) package dry onion soup mix (such as Lipton®)

Steps:

  • Place a grill grate over your campfire.
  • Lay a thick piece of aluminum foil onto a flat work surface. Pile potatoes and carrots into the middle of the foil. Put butter on the vegetables and sprinkle onion soup mix over the top.
  • Fold opposite ends of the foil so they meet; roll together to form a seam. Roll remaining ends together to seal contents into a packet.
