GRILLED GINGER LIME SHRIMP

Grilled Ginger Lime Shrimp image

This can be served as a main dish or a side dish. We usually have it as the prelude to our main course. Be sure to soak your wooden skewers in warm water for at least 20 min to 1 hour before you throw them on the grill or they will burn. I learned this the hard way...

Categories     < 30 Mins

Time 29m

Yield 31-40 shrimp

Number Of Ingredients 13

1 lb large shrimp, uncooked, deveined, shelled, tails on

1/2 tablespoon of fresh lime Thai basil, chopped (standard basil will do too)
1/2 tablespoon fresh cilantro, chopped

Steps:

  • Start by getting your grill to about a medium heat. Brush the hot grill rack with olive oil to prevent sticking.
  • Whisk together all the marinade ingredients. Reserve half for basting during grilling process. add rinsed shrimp to a large Ziploc baggie and add remaining marinade. Only let set for about 10-15 minutes Discard marinade.
  • Skewer about 4 shrimp on each pre soaked wooden skewers. Arrange on grill so they do not overlap. Brush with reserved marinade occasionally while cooking. Grill about 7 min on each side, or until shrimp curl tail to head and turn pink.

Provided by Tayo Ola

Categories     Dinner

Yield 6 servings

Number Of Ingredients 20

⅓ cup olive oil
3 tablespoons lime juice
1 bunch fresh cilantro, stems chopped off
2 teaspoons chipotle pepper in adobo sauce
¼ teaspoon salt
1 tablespoon olive oil
2 tablespoons honey
1 teaspoon Mccormick® ground cumin
1 teaspoon McCormick® Paprika
1 teaspoon garlic powder
1 lime, zested
¾ teaspoon salt
½ teaspoon pepper
1 lb shrimp, peeled and deveined
1 corn, cob
5 oz baby greens, mixed
1 cup grape tomato
½ cup radish, quatered
avocado, half, cubed
1 scallion, thinly sliced

Steps:

  • Dressing: Place all the ingredients in a food processor. Process for about 1 minute until emulsified. Set aside.
  • In a large bowl, mix together olive oil, honey, McCormick® ground cumin, paprika, garlic powder, lime zest, salt, and pepper. Add shrimp and toss to coat. Thread shrimp onto soaked bamboo skewers.
  • Heat grill or grill pan to medium-high heat. Place shrimp skewers and the corn on the grill and close the lid. Grill for 4 minutes, then flip skewers. Grill for 3 minutes on the second side, then take the skewers off the grill. Rotate corn to get light grill marks. (Corn will take about 5 minutes longer than the shrimp.) Take the corn off the grill.
  • Pull the shrimp off the skewers. Slice corn off the cob.

GRILLED CHILE-LIME SHRIMP

Make and share this Grilled Chile-Lime Shrimp recipe from Food.com.

Provided by kitty.rock

Categories     < 60 Mins

Time 50m

Yield 6 shrimp per serving, 4 serving(s)

Number Of Ingredients 11

1 teaspoon finely shredded lime peel
1/4 tablespoon lime juice (about 1 1/2 limes)
1 jalapeno pepper, seeded and finely minced
1 tablespoon garlic, minced
2 tablespoons low sodium soy sauce
3 tablespoons olive oil
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
2 tablespoons cilantro
1 tablespoon honey
1 1/2 lbs medium shrimp (about 6 per person)

Steps:

  • Preheat grill to medium-high.
  • In medium bowl, combine all ingredients except shrimp and stir well.
  • Peel shrimp except for tail, and devein. Rinse and pat dry with paper towels.
  • Place shrimp in large resealable bag. Add marinade. Through bag, rub marinade into shrimp. Place in refrigerator for 20 minutes. Halfway through, turn bag and give shrimp another marinade massage. (Do not marinate longer than 20 minutes, or the acidic lime juice will cook the shrimp).
  • Place shrimp on cutting board and nestle them together in groups of six. Using 2 bamboo skewers for each group, skewer the shrimp together (this is for nice presentation, keeps shrimp from falling into the grill and makes them easier to turn). NOTE: Soak bamboo skewers in water for 15 minutes prior to use, to keep them from burning.
  • Grill shrimp on an oiled grill rack 2 minutes per side, or until opaque.
  • (Serve with Toasted Couscous with Grilled Mango and Zucchini).
