GRILLED LEMON CHICKEN

- In a bowl, mix the lemon juice, olive oil, Dijon mustard, garlic, red bell pepper, salt, and pepper. Set aside 1/4 cup of the mixture to use for basting. Place chicken in the bowl, and marinate at least 20 minutes in the refrigerator.
- Preheat grill for high heat.
- Lightly oil grill grate. Drain and discard marinade from the bowl, and place chicken on the grill. Cook 6 to 8 minutes on each side, until juices run clear, basting occasionally with the reserved marinade.

GRILLED GREEK CHICKEN
The secret to this simple grilled chicken is a very powerful marinade and 'roasting' it slowly over semi-indirect heat on the grill.

- Whisk garlic, oregano, red pepper flakes, black pepper, lemon juice, olive oil, and vinegar together in a large bowl.
- Make 2 slashes on the skin side down to the bone in the thigh section and 1 in the leg section of each leg quarter. This will help infuse pieces with marinade and allow faster cooking on the grill. Season both sides of chicken generously with kosher salt. Transfer to bowl with marinade and thoroughly coat all sides. Cover and marinate in refrigerator 4 to 12 hours.
- Transfer chicken to paper-towel-lined sheet pan to drain slightly.
- Place leg quarters on grill skin side down over semi-direct heat (avoid intense direct heat so chicken cooks evenly and skin doesn't burn). Cook 6 or 7 minutes. Turn chicken and cook another 6 to 7 minutes. Continue cooking and turning until internal temperature reaches 165 degrees F (74 degrees C), 8 to 10 more minutes. Serve with lemon wedges.

GRILLED GREEK LEMON CHICKEN
I adapted this recipe from Jeff Smith, Frugal Gourmet. It is easy to prepare and relatively simple to cook. Just be careful for flare ups on the grill.

- Combine olive oil, lemon juice, and oregano; pour over halved chicken in a large glass baking dish. Sprinkle chicken on both sides with sea salt and black pepper. Place in refrigerator and marinate for 2 or so hours. Turn chicken at least once during marinating process.
- Preheat gas grill on medium high for five minutes. Place chicken skin side down on middle of grill and turn off inner burners so that heat is indirect. Turn chicken when skin is nicely browned and continue to cook for 1-2 hours or until meat thermometer registers 170 deg F. Remove from heat, cover loosely with foil and let sit for 5 minutes before serving.

GRILLED GREEK LEMON OREGANO CHICKEN WINGS
I adapted an old recipe for whole grilled chickens into a wing version for tailgating parties. You can marinade the chicken pieces ahead of time and transport to cooking site.

- Place thawed chicken wings into gallon size zip top bag.
- Combine olive oil, lemon juice, oregano, garlic, salt and pepper in a small mixing bowl. Pour over chicken pieces and seal bag. Refrigerate chicken pieces for at least two hours, turning over at least once during this time.
- Preheat gas grill on high for five minutes.
- Remove chicken pieces from marinade and place onto baking sheet lined with paper towels. Discard excess marinade.
- Turn inside burners to medium low while leaving outside burners on high. Place chicken pieces on middle of grill skin side up. Cover and cook for 7 minutes. Turn pieces over and cook for another 5-7 minutes or until meat thermometer indicates 170 degrees F.
- Serve while hot and juicy! Enjoy!

- First, prepare Greek marinade by mixing together olive oil, vinegar, garlic, honey, lemon juice, mustard, oregano, and salt. Then, transfer it into a large gallon-size bag or container and then add chicken breast. Make sure chicken is fully submerged in the marinade and let sit for 30 minutes to 2 hours.
- Next, preheat grill to 400ºF. Once hot, spray the grill grates with nonstick cooking spray and place the marinated chicken breast over direct heat. Then, place a lemon slice on top of each breast. Close the grill and cook for around 7 to 8 minutes.
