½ cup olive oil
½ cup ranch dressing
3 tablespoons Worcestershire sauce
1 tablespoon minced fresh rosemary
2 teaspoons salt
1 teaspoon lemon juice
1 teaspoon white vinegar
¼ teaspoon ground black pepper, or to taste
1 tablespoon white sugar, or to taste
5 skinless, boneless chicken breast halves - cut into 1 inch cubes

Steps:

  • In a medium bowl, stir together the olive oil, ranch dressing, Worcestershire sauce, rosemary, salt, lemon juice, white vinegar, pepper, and sugar. Let stand for 5 minutes. Place chicken in the bowl, and stir to coat with the marinade. Cover and refrigerate for 30 minutes.
  • Preheat the grill for medium-high heat. Thread chicken onto skewers and discard marinade.
  • Lightly oil the grill grate. Grill skewers for 8 to 12 minutes, or until the chicken is no longer pink in the center, and the juices run clear.

1/4 cup extra virgin olive oil
2 cloves garlic, fresh minced
1/2 teaspoon red chili flakes, crushed
1 tablespoon oregano, fresh minced
1 tablespoon rosemary, fresh minced
1 teaspoon lemon zest
1 lb. wt. chicken breast, boneless and skinless
1 3/4 cups California green seedless grapes, picked from stem and rinsed
1/2 tsp. salt
2 tablespoon extra virgin olive oil
1 tablespoon lemon juice, fresh

Steps:

  • In small bowl combine olive oil, garlic, chili flakes, oregano, rosemary and lemon zest. Whisk together marinade. Cut chicken into 3/4 inch cubes. Alternate chicken and grapes and thread onto 12 skewers. Place skewers into a baking dish or pan large enough to hold them. Pour marinade over skewers, coating each one. Marinate for 4-24 hours. Remove skewers from marinade and let excess oil drip off. Season with salt. Grill on barbecue until chicken is cooked through, about 3-5 minutes on each side. Arrange on serving platter and drizzle with additional olive oil and lemon juice.

½ cup La Choy® Teriyaki Stir-Fry Sauce and Marinade
2 tablespoons La Choy® Soy Sauce
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 medium zucchini, halved lengthwise, cut into 1/2-inch-thick slices
1 cup cherry tomatoes
½ medium red onion, cut into 1-inch pieces
8 (6 inch) bamboo skewers
2 (8.5 ounce) packages UNCLE BEN'S® READY RICE® Jasmine

Steps:

  • Spray cold grate of gas grill with cooking spray. Preheat to medium-high heat. Meanwhile, combine teriyaki sauce and soy sauce in small bowl.
  • Thread pieces of chicken and vegetables on each skewer. Grill 5 minutes; turn over and brush with sauce mixture. Grill 5 minutes more or until chicken is no longer pink in center and vegetables are tender. Turn again and brush second side with remaining sauce; grill until sauce is hot, being careful not to burn.
  • Heat rice according to package directions. Serve kabobs with rice.

2 teaspoons ground mustard
1 tablespoon Worcestershire sauce
1/2 cup water
1/2 cup soy sauce
1 tablespoon canola oil
4 boneless skinless chicken breast halves
2 medium zucchini, cut into 1-1/2-inch slices
1 medium onion, cut into wedges
1 medium green pepper, cut into chunks
8 to 12 medium fresh mushrooms

Steps:

  • In a resealable plastic bag, combine the mustard and Worcestershire sauce and water, soy sauce and oil; remove 1/3 cup and set aside for basting. Cut chicken into 1-1/2-in. pieces; add to bag. Seal and refrigerate for 1-1/2 to 2 hours. Drain, discarding marinade. , Thread chicken and vegetables alternately on skewers. Baste with reserved marinade. Grill over hot heat for 10 minutes. This is my FAVORITE recipe that I snagged from AllRecipes. I've changed things a bit...but the flavor is incredible! I've cooked this on the grill (in a grill basket lined with foil so as not to lose any of the incredible sauce!), on the stovetop and in the oven. Oven and grill are by far the best methods. I serve this over white rice and the flavor is super!! I usually use dried rosemary, but fresh is best! I also cut the sugar in half and use low fat ranch. I also completely omit the salt since I don't feel it needs it. My kids have been eating this since they were 19 months old! When I bake these in the oven I bake them on 450 degrees for about 20-30 minutes. Lean toward 20 so as not to overcook. YUM!

This dish is great grilled or broiled. It is equally good with pork or chicken. If you have an abundance of big stocks of rosemary, use them for the skewers. Just remove the leaves from the stocks and soak the stocks for about an hour in water so they don't catch on fire while grilling or broiling the lamb. The prep time allows for 2 hours of marinating. The longer this marinates, the better it is. If you have the time, let it sit overnight.

1 lb boneless leg of lamb, cubed into two inch squares
3 tablespoons garlic, chopped
3 tablespoons fresh rosemary leaves, very finely chopped
2 tablespoons of fresh mint, chopped
1 teaspoon salt
1 teaspoon black pepper
1/8 teaspoon red pepper flakes
1/4 cup olive oil
1/3 cup balsamic vinegar
1 teaspoon sugar
1/2 lb seedless grapes, any color is fine

Steps:

  • Place the meat in a large zip-lock bag.
  • Process the rest of the ingredients (except the sugar and grapes) in a food processor. Pour over the meat and marinate for at least 2 hours - overnight is best.
  • Preheat the oven to broil or heat the grill to med-high.
  • Drain the marinade from the meat and place into a small sauce pan.
  • Add the sugar to the marinade and cook at medium heat for about 20 minutes to reduce to a thick sauce.
  • Place the meat on long metal or rosemary skewers, separated by two grapes.
  • One piece of meat, two grapes, one piece of meat two grapes... I like to make them about 9 inches long.
  • Grill or broil for 3 minutes per side, or to your liking, turning once.
  • Serve with reduced sauce drizzled over the skewers.
  • This is so pretty served over a bed of couscous on a large platter.
  • Enjoy.
