2 tablespoons olive oil
3 tablespoons nonfat greek yogurt
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 teaspoon honey
1 teaspoon poppy seed
½ teaspoon dijon mustard
¼ teaspoon salt
¼ teaspoon ground black pepper
1 boneless, skinless chicken breast, sliced into 1/2-inch (1-cm) pieces
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon paprika
2 teaspoons olive oil
2 cups baby spinach
½ cup strawberry, hulled and sliced
½ avocado, sliced
1 tablespoon sliced almond, toasted

Steps:

  • In a bowl, add the olive oil, Greek yogurt, red wine vinegar, lemon juice, honey, poppy seeds, mustard, salt, and pepper in a small bowl and whisk until emulsified.
  • Season the chicken with salt, pepper, and paprika.
  • Heat olive oil in a pan over medium heat. Once the oil begins to shimmer, add the chicken and cook until browned on both sides, about 4 minutes per side.
  • Once cooled, slice the chicken on a cutting board.
  • Toss spinach, strawberries, avocado, almonds, and sliced chicken together in a large bowl and drizzle with poppy seed dressing.

1 cup diced cooked chicken
4 large strawberries, hulled and sliced
1 ounce goat cheese, crumbled (1/4 cup)

1 tablespoon poppyseeds
1 small sweet onion (finely diced)
1/2 cup white wine vinegar
1/3 cup honey
3/4 cup mayonnaise with Olive Oil
1/4 cup extra light tasting olive oil
1 tablespoon Dijon mustard
1 teaspoon salt
1/2 teaspoon ground pepper
1 1/2 lbs boneless skinless chicken breasts
10 ounces Romaine lettuce (chopped)
1 lb fresh strawberries (quartered)
1 avocado (peeled, pitted and sliced)
1/2 small red onion (thinly sliced)
1/2 cup sliced almonds

Steps:

  • In a medium saucepan, toast poppy seeds over medium heat for 2-3 minutes. Cook and stir until poppy seeds are fragrant. Add diced onion, vinegar and honey. Cook for 4-5 minutes or until onion is soft.
  • Transfer to a blender. (I used my Vitamix). Add remaining ingredients and blend until smooth.
  • Place chicken in a large zip-top bag.Add 1/3 cup of dressing and toss to coat. Refrigerate for 1 hour or up to 4 hours for marinating.
  • Using a griddle or grill, set the temperature to medium.
  • Place chicken or rack or griddle and cook for 10-12 minutes, turning once halfway through. Cook until chicken reaches 165. Place chicken on a plate. Cover with foil to keep warm.
  • Using a large salad bowl, arrange lettuce in the bowl. Top with strawberries, avocado slices, and red onion. Sprinkle with almonds. Serve with poppy seed dressing.

Steps:

  • Place chicken on a double thickness of heavy-duty foil (about 18 in. x 15 in.). Combine broth and 1 tablespoon poppy seed dressing; spoon over chicken. Fold edges of foil around chicken mixture, leaving center open. Grill, covered, over medium heat until chicken is no longer pink, 10-12 minutes., In a large salad bowl, combine the spinach, romaine and strawberries.
