GRILLED CHEESE AND PEAR SANDWICH
Grilled Cheese and Pear Sandwich ~ together offer savory and sweet flavors that will exceed anyone's expectations. Sliced pears along with a thin slice of blue cheese, fresh arugula, and a dash of Dijon creates a grilled cheese sandwich that becomes insanely delicious!

Steps:
- Brush one side of each slice of bread with butter or olive oil.
- Form sandwiches with buttered-side out. Spread a thin layer of Dijon mustard on one side onto each sandwich, then add a few slices of pear and pile on some fresh arugula.
- Top with a thin slice of blue cheese and close the sandwiches.
- Heat a large nonstick skillet over low heat. Spray lightly with cooking spray. Grill the sandwiches, on low heat until the bread is golden brown, crispy, and the cheese is melted, about 2 to 3 minutes per side.
- Remove and cut sandwiches in half or diagonally and serve immediately.
- Serves 2
GRILLED CHEESE AND PEAR SANDWICH

Steps:
- Soften the cheese a little with a sandwich spreader or knife so that the cheese will spread easily on the bread.
- Spread a thin layer of cheese on one side of each slice of bread. Place several slices of pear on 2 pieces of the bread (on top of the cheese). Finish with another piece of bread on top (cheese on the inside of the sandwich).
- Add butter to a large non-stick sauté pan on medium-low heat. Bruise the sprig of rosemary with the back of a knife. Add to the pan. Cook the rosemary for 1 to 2 minutes to infuse the butter. Carefully remove the rosemary and discard.
- Add the sandwiches to the same pan. Press lightly with a spatula. Cook sandwiches until bread is golden on the outside and cheese starts melting, about 2 to 3 minutes per side. Remove from heat. Keep warm.
- In the same pan over medium high, add the port. Reduce by half, about 4 to 5 minutes. Cut each sandwich in half. Drizzle evenly with the port reduction. Serve.
GRILLED CHEESE WITH PEARS

- Toast bread lightly and spread butter evenly on one side of each slice of bread.
- On the unbuttered sides of 4 slices of bread, layer one slice muensterand four pear slices.
- Spread lightly with equal amounts of raspberry preserves.
- Top each with 3 slices of brie and another slice of bread, buttered side out.
- Preheat a large skillet or griddle over low heat.
- Cover and cook the sandwiches in batches, if necessary, for 2-3 minutes, uncover and turn sandwiches over, grilling until golden and cheeses are melted.
- Serve immediately.

- Generously butter one side of each slice of bread.
- Heat a skillet over medium heat.
- Place bread slices butter-side down into hot skillet. Arrange Brie cheese slices on top of each piece of bread. Sprinkle thyme and cracked black pepper over the top.
- Spread pear slices in a single layer over the Brie cheese on one slice of bread and top with a pinch of salt.
- Flip the slice of bread without pears onto the slice of bread with the pear slices. Continue cooking sandwich until cheese and pear are heated through and cheese is melted, 2 to 3 minutes per side. Transfer to a plate and cut into halves.

- In a small bowl, combine mascarpone, 3/4 cup crushed cookies and lemon zest; refrigerate until serving. Place pears, cut side down, on a greased grill rack. - Make the balsamic onions: Melt 1 Tbsp butter in a skillet. Add onions and cook, stirring, until soft and golden, about 5 minutes. Add balsamic vinegar, sugar and a pinch of salt. Cook, stirring, until syrupy, about 2 minutes more. Set aside.
- In a skillet, melt 1/2 Tbsp of the butter over medium heat. Spread one slice of the bread with 1/2 of the mayonnaise. Place mayonnaise side down on top of the butter. Quickly top bread with 1/2 the cheese, a single layer of the pear slices (you may not need all), a grind of pepper, the balsamic onions, then the rest of the cheese. Top with second bread slice. Reduce heat to medium-low. Place a plate on top of the sandwich, concave side down, to act as a weight (a dinner plate works well here). Allow to cook a few minutes, checking the underside of the sandwich regularly. When golden, remove plate from top. Spread the top of the sandwich with the remaining mayonnaise. Lift sandwich with a spatula. Add the remaining 1/2 Tbsp butter to the pan and allow to melt. Return sandwich to skillet, mayonnaise spread side down and cook as before with a plate over-top, until golden on the underside. Remove to a cutting board. Cut in half and enjoy!
