¼ cup fresh orange juice
1 teaspoon orange zest
1 tablespoon olive oil
1 tablespoon fresh lime juice
1 teaspoon minced fresh ginger root
2 cloves garlic, minced
¼ teaspoon hot pepper sauce
½ teaspoon chopped fresh oregano
1 ½ skinless, boneless chicken breasts

Steps:

  • In a blender, combine the orange juice, orange peel, olive oil, lime juice, ginger, garlic, hot pepper sauce and oregano. Blend into a marinade.
  • Place chicken breasts in a nonporous glass dish or bowl. Pour marinade over chicken, cover dish or bowl and refrigerate to marinate for at least 2 hours, or up to 24 hours.
  • Preheat oven to broil OR preheat grill to medium high heat and lightly oil grate.
  • Remove chicken from marinade (disposing of any leftover marinade) and grill or broil 6 inches from the heat source for about 7 minutes per side, or until chicken is cooked through and no longer pink inside.

This Caribbean marinade is rich, complex, and yet refreshing-a spicy-savory-sweet flavor reminiscent of jerk seasoning, with very little hassle and no hard-to-find ingredients.

2 scallions
2 garlic cloves peeled
1 tsp ground allspice
1 tbsp 1 tablespoon dried thyme
.75 tsp salt
2 tbsp brown sugar
1 jalapeño pepper, (stemmed and seeds removed)
1 tbsp vegetable oil
2 tbsp fresh lime juice
2 lbs boneless, skinless chicken breasts
1 lime, cut into wedges (for serving)

Steps:

  • In a food processor, puree the scallions, garlic, allspice, thyme, salt, brown sugar, jalapeño, oil, and lime juice until smooth, scraping down the sides halfway. Place the chicken in a gallon-sized plastic bag.
  • Pour the mixture over the chicken and seal the bag, pressing as much air out as you can. Turn the bag a few times to move the marinade around, coating the chicken.
  • Refrigerate for at least 1 hour or up to 24 hours, flipping the bag halfway through to make sure the chicken marinates evenly.
  • Preheat your gas grill with all burners on high and close the lid. When the grill is hot (after about 15 minutes), turn the 2 burners closest to the front to low, keeping the back burner on high.
  • Remove the chicken from the bag and arrange on the grates over the low heat burners. Cover and cook until the underside of the chicken is just beginning to develop light grill marks, 6 to 9 minutes. Flip the chicken, cover, and continue to cook until the chicken is firm to touch, 6 to 9 minutes longer.
  • To get a nice char on the chicken, now move the chicken to the part of the grill over high flames and cook uncovered until each side has solid grill marks, 5 to 6 minutes, flipping halfway.
  • The chicken should be completely firm to the touch and register 160 degrees F on an instant-read thermometer. Transfer the chicken to a plate, tent with foil, and let it rest for 5 minutes before serving.

1 lb Just BARE Natural Boneless Skinless Chicken Breast Fillets
¼ cup olive oil
1 tablespoon honey
1 teaspoon pepper
1/2 teaspoon salt
1 teaspoon garlic powder
1 teaspoon paprika
2 tablespoons lime juice
1 tablespoon lime zest
1 cup pineapple (chopped finely)
1/2 cup tomatoes (chopped finely)
1/4 cup chopped onion (chopped finely)
2 tablespoons cilantro (chopped finely)
1 tablespoon jalapeno (chopped finely)
1 teaspoon black pepper
1/2 tablespoon olive oil
2 tablespoons lime juice

Steps:

  • In a bowl, whisk together all ingredients for the marinade. Add marinade and Just BARE chicken breasts to a plastic bag or glass container + allow it to marinate for at least 10 minutes (the longer the better!)
  • While chicken is marinating, prepare the salsa. Chop all vegetables/fruit in very small pieces. Stir together in a bowl and set aside
  • Heat the grill to medium-high heat. Grill chicken for 5-7 minutes on each side over medium-high heat or until internal temp is 165 degrees
  • Serve grilled chicken with salsa on top over a salad or alongside roasted veggies + enjoy!

5 tablespoons light soy sauce
¼ cup lime juice
¼ cup brown sugar
12 cloves garlic, minced
2 ½ tablespoons finely minced fresh ginger root

7 drops hot pepper sauce (e.g. Tabasco™) to taste
1 serrano pepper, finely chopped
4 pounds skinless, boneless chicken breast halves

Steps:

  • In a bowl, mix the rum, soy sauce, lime juice, brown sugar, garlic, ginger, thyme, salt, pepper, hot pepper sauce, and serrano pepper. Pierce the chicken on all sides with a fork. Place chicken in a shallow container, and cover with the marinade. Seal container, and marinate chicken in the refrigerator 8 hours or overnight.
  • Preheat grill for high heat.
  • Lightly oil grill grate. Discard marinade and place chicken on the grill. Cook 8 minutes on each side, or until juices run clear.

1 (16 ounce) bottle Italian dressing, use fat-free to cut calories
3 fresh jalapeno peppers, halved lengthwise and seeded

Steps:

  • Place chicken breasts in a dish with the Italian dressing. Cover, and marinate in the refrigerator at least 2 hours.

1/4 cup red onion (chopped)
1/2 cup green onion (chopped)

1/2 cup soy sauce, low sodium preferred
1/2 teaspoon mustard powder

2 teaspoons garlic, minced (You can use garlic powder but be careful as many brands are salty. )

  • Use less cayenne- or none- to reduce heat!

1 1/2 lbs chicken pieces (4-6 pieces)
8 ounces pineapple chunks in juice
1/4 cup brown sugar
1/2 teaspoon ground nutmeg
1/3 cup orange juice
1/2 cup raisins

Steps:

  • For immediate cooking: Pre-heat oven to 350°F Place all ingredients into a large baking dish, turn chicken to coat.
  • Bake until chicken juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).
  • For freezing: Place all ingredients into a 1 Gallon freezer bag.
  • Lay flat in freezer.
  • To thaw and cook: Take the bag out of the freezer the night before, make sure the baggie is completely closed.
  • Place the bag in the refrigerator to thaw.
  • Preheat the oven to 350°F Empty the contents of the bag into a large baking dish and bake until the juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).

This is a great recipe from Crisco (slightly modified). The recipe should be started about 45 minutes to an hour before the grill is ready to allow enough marinade time (not included in prep time).

1 (8 ounce) can pineapple tidbits
1/4 cup vegetable oil
2 tablespoons lime juice
1 teaspoon garlic, minced
1/4 teaspoon crushed red pepper flakes
1 teaspoon sugar
4 chicken breast halves (boneless, skinless)
1/4 cup red pepper, diced
1/4 cup red onion, minced
1 small jalapeno pepper, minced
2 tablespoons cilantro, chopped
salt and pepper, to taste

Steps:

  • Drain pineapple juice into a 1-cup measuring cup. Add oil, lime juice, garlic, red pepper flakes and sugar. Mix well to make the marinade. Place chicken in a large resealable food storage bag. Pour all but 1 tablespoon of marinade over the chicken. Seal bag. Refrigerate 30 to 45 minutes.
  • To make salsa, combine pineapple, red pepper, red onion, jalapeño pepper, cilantro and reserved 1 tablespoon marinade in a medium-sized serving bowl. Toss well. Season with salt and pepper to taste.
  • Heat grill to medium. Remove chicken from marinade. Discard marinade. Season chicken with salt and pepper. Grill, turning once, for 10 to 15 minutes or until cooked through and juices run clear. Serve with pineapple salsa.
