PAN-FRIED CAMEMBERT SANDWICH
A toasted cheese sandwich that is anything but ordinary - oozing with camembert and topped with cranberry sauce to give it a Christmas kick

Steps:
- Butter the bread. Put a wedge of camembert or brie on the unbuttered side of one slice of bread. Top with a spoonful of cranberry sauce. Drizzle with a few drops of balsamic vinegar, if you have some.
- Put the second slice of bread on top, buttered side out. Fry in a hot non-stick pan, pressing down with a fish slice, for a minute or two on each side, until golden brown and melting. Cut in half and eat straightaway.

Quick lunch treat for unexpected guests or just a reason to spoil ones self! Use brie cheese if you do not find the Camembert at your store. Use a really nice rustic bread for best results.

- Spread the Camembert cheese evenly onto one slice of bread. Spread a thin layer of cranberry sauce over the cheese. Drizzle with a few drops of balsamic vinegar, and top with the remaining slice of bread. Spread butter on the outer sides of each slice of bread.
- Heat a skillet over medium heat. Fry the sandwich for a few minutes on each side, just until golden brown. Slice in half, and eat straight away!

- Heat olive oil and cracked pepper over low heat. Turn off heat and let infuse for 10 minutes.
- Place sliced cheese on half of the bread slices (making sure the cheese comes to the edge of the crust). Place top slice on each sandwich and put them together so they are crust to crust. Cover all the sandwiches with a layer of plastic wrap and place a medium cutting board on top of sandwiches to gently weigh them down for 15 minutes.
- Using a pastry brush, thoroughly brush surface of both faces of the sandwich with the pepper oil.
- Preheat a Panini griddle on low or a medium saute pan over low heat. Wipe surface with a little oil. Place sandwiches in griddle or pan and cook until lightly browned, 2-3 minutes per side until cheese is melted. Keep heat low so bread doesn't burn.
- Serve with tomato soup.

- For the rosemary honey: Heat honey and rosemary in a small saucepan (or in a glass bowl in the microwave, just until it starts to boil. Remove from heat and allow to stand with the rosemary sprig in it until cooled.
- Cut your bread slices and lay out on a cutting board. Cut the rind off one of the long sides of the slices. Top bread with Camembert slices, laying side-by-side in an even layer, cutting the slices in half or as needed to fit the bread. Scatter the balsamic onions over-top, then top with shredded Gruyere cheese. Top with other slice of bread.
- Melt a 1 Tbsp pat of butter in a skillet over medium heat, trying to keep it in just the area that the sandwich will cover. Add sandwich and immediately reduce the heat to medium low. Cook, pressing down on the top lightly several times until golden underneath. Life sandwich with a spatula and add another 1 Tbsp pat of butter to the skillet. Once melted, return the sandwich to the skillet with the un-grilled side down. Continue cooking until golden underneath. Check cheese. If not completely melted, reduce heat to low and continue cooking, flipping once or twice again, until cheese is fully melted. Remove sandwich to a cutting board and cut in half. Serve with a drizzle of your rosemary honey and side of watercress.
