PASTRAMI SANDWICHES WITH ONION RINGS AND QUICK PICKLES

Pastrami Sandwiches with Onion Rings and Quick Pickles image

Pastrami on rye is the ultimate classic Jewish deli sandwich that I loved eating late at night at Katz's when I lived in New York. Pastrami is made from either the deckel, navel, or brisket cut of beef, and is brined, smoked, and steamed, which infuses it with sooo much addictive flavor. In this version I topped mine with onion rings because YOLO. They add crunch and sweetness too.

Yield 6 servings

Number Of Ingredients 31

1 cup kosher salt
1/2 cup granulated sugar
1/4 cup light brown sugar
2 tablespoons pickling spice
1 tablespoon mustard seeds
1 tablespoon pink curing salt (not pink Himalayan salt)
4 cloves garlic, crushed and peeled
1/4 cup plus 1 tablespoon coriander seeds
One 3- to 3 1/2-pound piece brisket, with the fat cap (ask for the flat cut of the brisket, not the point cut)
1/4 cup black peppercorns
2 tablespoons smoked paprika
Sliced rye bread, for serving
Deli mustard, for serving
Onion Rings, recipe follows
Pickles, recipe follows
Canola oil, for frying
1 cup all-purpose flour
2 large eggs, whisked
1/2 cup panko breadcrumbs
1/2 cup regular breadcrumbs
1 large onion, sliced into 1/4-inch rings
Kosher salt
1 cup distilled white vinegar
1 tablespoon kosher salt
2 teaspoons mustard seeds
1 teaspoon granulated sugar
1 teaspoon black peppercorns
1 clove garlic, crushed and peeled
3 Persian or small kirby cucumbers, sliced about 1/4-inch thick
2 red chiles, thinly sliced
1/4 cup fresh dill sprigs

Steps:

  • Combine the salt, granulated sugar, brown sugar, pickling spice, mustard seeds, pink curing salt, garlic and 1 tablespoon coriander in a large pot. Add 3 quarts water. Bring to a simmer and cook to dissolve the sugar and salt. Add 3 quarts cold water. Let cool to room temperature. Add the brisket, then weigh down with a plate and cover the pot. Refrigerate for 3 days. (If your refrigerator is too small to hold the pot, you can cut the brisket in half and refrigerate in 2 smaller containers as well.)
  • When you are ready to cook the brisket, preheat the oven to 300 degrees F.
  • Arrange a rack in a roasting pan. Bring a kettle of water to a boil. Coarsely crush the peppercorns and the remaining 1/4 cup coriander seeds in a spice grinder. Pour into a small bowl and stir in the smoked paprika. Remove the meat from the brine and rinse briefly. Pat dry. Pat the spice mixture all over and set the meat in the roasting pan, fat side up. Pour the boiling water in the bottom of the pan (don't let it touch the meat). Cover the roasting pan tightly with foil. Roast until the meat is very tender, about 3 hours. Carefully remove the foil and roast 10 more minutes to dry out the crust slightly.
  • Slice the warm pastrami. Serve on rye bread with deli mustard and Onion Rings and Pickles on the side. (This pastrami can also be made ahead. To reheat, thinly slice and set over a steamer, or microwave covered with a damp paper towel.)
  • Heat 1 inch oil in a pan to 350 degrees F.
  • Set the flour in a bowl, eggs in a second bowl, and combine the panko and regular breadcrumbs in a third. Dredge the onions in the flour first, followed by the eggs and finally the breadcrumbs, then pan-fry until golden brown, a few minutes on each side. Remove to a rack to drain and stay crispy and season with salt.
  • Combine the vinegar, salt, mustard seeds, granulated sugar, peppercorns, garlic and 1/2 cup water in a small saucepan. Layer the cucumbers, chiles and dill sprigs in a jar or other lidded container. Bring the vinegar mixture to a simmer and stir to dissolve the salt and sugar. Pour over the cucumbers. Let cool to room temperature. Refrigerate until chilled, at least 2 hours. (The pickles will keep a week or more in the refrigerator.)

GRIDDLE BURGER WITH 18000 ISLAND DRESSING AND QUICK PICKLES

Griddle Burger with 18000 Island Dressing and Quick Pickles image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 21

2 cups champagne vinegar
1/4 cup granulated sugar
1 tablespoon yellow mustard seeds
1 tablespoon kosher salt
2 cloves garlic, lightly smashed
1 bay leaf
1 English cucumber, cut into 1/8-inch slices
1 tablespoon chopped fresh dill
1 cup mayo
1/4 cup ketchup
2 tablespoons sliced pickled jalapenos
1 teaspoon Dijon mustard
1/4 teaspoon granulated garlic
Kosher salt
1 1/2 pounds ground chuck
8 ounces ground brisket
1 to 2 tablespoons canola oil
4 sesame seed buns
4 to 8 slices white American cheese
Tomato slices, for serving
Iceberg lettuce, for serving

Steps:

  • For the quick pickles: Add the vinegar, 1/2 cup water, sugar, mustard seeds, salt, garlic and bay leaf to a saucepan and bring to a simmer. Once the sugar has dissolved in the simmering liquid, add the cucumbers and dill to a heat-proof container and pour over the pickling liquid. Let sit for at least 10 minutes. Chop 2 tablespoons for the dressing, and reserve the rest for serving.
  • For the 18000 island dressing: In a food processor add the mayonnaise, ketchup, jalapenos, chopped quick pickles, Dijon, garlic and some salt. Puree, taste and adjust seasonings if necessary.
  • For the burgers: Heat a cast-iron skillet or large heavy griddle pan over medium-high heat.
  • Combine the chuck and brisket and form into 4 balls with your hands.
  • Add the canola oil to the heated griddle. Place the burger balls on the griddle and sear for 1 to 2 minutes per side. Then, using a spatula, press the balls down, flattening them down as you spread them out. You want a thin, crusty burger and that's all about creating surface area, so press away. Let the burger get a nice char on one side, and then flip so they get nice and crusty brown, 4 to 5 minutes per side.
  • Butter and toast, or griddle, the sesame seed buns. Once toasted, add 1 to 2 slices cheese to each bottom bun. Place the burger on the bottom bun with the cheese. Top the burger with some tomato slices, quick pickles and iceberg lettuce. Spread some of the 18000 island dressing on the top bun and top the burger. Appreciate the old school classic.

GYOB GRIDDLE BURGER WITH DIJOLI

GYOB Griddle Burger with DijOli image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 55m

Yield 6 burgers

Number Of Ingredients 13

2 pounds English-cut short ribs, boned and meat cut into 1-inch chunks
Kosher salt and freshly ground black pepper
12 slices white American cheese
Unsalted butter, at room temperature, for buttering the buns
6 fresh pretzel buns, split
Sliced pickled jalapenos, for topping
DijOli, recipe follows
1/2 cup mayonnaise
1/2 cup Dijon mustard
2 tablespoons stone-ground mustard
1 tablespoon honey
1/2 clove garlic, grated on a rasp grater
Kosher salt and freshly ground black pepper

Steps:

  • Put the beef chunks on a baking sheet in a single layer, leaving 1/2 inch of space around each chunk. Freeze the meat until very firm and starting to harden around the edges but still pliable, 15 to 25 minutes.
  • Place half of the meat in a food processor and pulse, stopping and redistributing the meat around the bowl as necessary to ensure even grinding, until coarsely ground, 10 to 15 one-second pulses. Transfer the meat back to the baking sheet, overturning the bowl and without directly touching the meat. Repeat the grinding process with the remaining meat. Spread the ground meat over the baking sheet and inspect carefully, discarding any long strands of gristle or large chunks of hard meat or fat.
  • Heat a cast-iron skillet or large heavy griddle pan over high heat. Divide the meat into 6 portions, then form each into a large, thin patty with your hands; focus on loosely packed meat and a larger circumference than thickness. Season with salt and pepper.
  • In 2 batches, cook the patties. Press them down once with a spatula as soon as you put them in the skillet. Do not smoosh them again. Cook until crusty brown, 4 to 5 minutes. Flip once and drape 2 pieces of cheese on top of each so it melts down the side while the other side cooks. Cook to the desired temperature.
  • Set a nonstick pan over medium heat. Butter the pretzel buns and toast until golden brown, about 2 minutes.
  • Arrange the burgers on the pretzel buns, top with pickled jalapenos and serve with a side of DijOli.
  • Mix the mayonnaise, Dijon, stone-ground mustard, honey and garlic together in a small bowl. Season to taste.

TRIPLE CHEESE GRIDDLE BURGERS WITH CRISPY CHERRY PEPPERS

Triple Cheese Griddle Burgers with Crispy Cherry Peppers image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 18

1 1/2 pounds boneless short ribs, cut into 1-inch cubes
1 1/2 pounds sirloin steak tips, cut into 1-inch cubes
Kosher salt and freshly ground black pepper
12 slices white American cheese
Butter, for buttering the buns
4 fresh brioche buns
Crispy Pickled Cherry Peppers, recipe follows
18,000 Island Dressing, recipe follows
2 cups vegetable oil
1/2 cup rice flour
1 teaspoon seasoned salt
1 cup sliced pickled red cherry peppers
1 cup mayonnaise
2 tablespoons diced pickled jalapenos
2 tablespoons ketchup
1 teaspoon Dijon mustard
1/4 teaspoon granulated garlic
Kosher salt and freshly ground black pepper

Steps:

  • Place the short rib and steak tip cubes on a baking sheet in a single layer, leaving a 1/2-inch space around each chunk. Freeze the meat until very firm and starting to harden around the edges, but still pliable, 15 to 25 minutes.
  • Place half of the meat in a food processor and pulse until coarsely ground, ten to fifteen 1-second pulses, stopping and redistributing the meat around the bowl as necessary to ensure it is evenly ground. Transfer the meat to a baking sheet, overturning the bowl and without directly touching the meat. Repeat the grinding process with the remaining meat cubes. Spread the meat over the baking sheet and inspect carefully, discarding any long strands of gristle or large chunks of hard meat or fat. Evenly divide the meat into 12 balls and season aggressively with salt and pepper.
  • Heat a cast-iron skillet over high heat. Working in batches, cook the patties. As soon as you put the balls in the skillet, press each one down once with a strong metal spatula into a 1/2-inch patty or until just larger than your bun (size up your bun-to-meat ratios people!). Do not smoosh them again. Cook until the patties are crusty brown on the bottom, 4 to 5 minutes, then flip once and finish the other side while a piece of cheese melts on top, 4 to 5 minutes more. Stack into 3 patties and set aside to rest. Repeat with the remaining patties.
  • On a nonstick flat-bottomed pan (preferably square), butter and toast the buns until golden brown, keeping an eye on them so they don't burn, about 5 minutes.
  • Build each burger on a bun with 3 patties, Crispy Pickled Cherry Peppers and a schmear of the 18,000 Island Dressing. Serve!
  • Heat the oil in a heavy-bottomed pot to 350 degrees F. Combine the rice flour and seasoned salt in a shallow dish. Dredge the wet cherry peppers in the flour mixture and fry in the oil until golden brown, 2 to 3 minutes.
  • Mix the mayonnaise, jalapenos, ketchup, mustard and garlic together in a bowl. Season with salt and pepper.
