FIREMEN'S FIELD DAY BARBECUE CHICKEN

Chicken parboiled in the marinade and grilled to perfection!

Number Of Ingredients 6

4 chicken leg quarters
1 cup oil
2 cups apple cider vinegar
1 tablespoon salt
1 tablespoon poultry seasoning
1 large egg

Steps:

  • In a large bowl, whisk together oil, apple cider vinegar, salt, poultry seasoning and egg.
  • Place leg quarters in large dutch oven. Pour marinade over chicken.
  • Refrigerate at least 24 hours.
  • When ready to cook, remove chicken from refrigerator. Keep in the dutch oven and just place on your stove top. Bring to a boil over medium high heat. Turn heat down to medium and continue cooking for 10 minutes.
  • Remove from heat. Let sit for 10 minutes to cool. Meanwhile, pre-heat your grill for the final cook.
  • When grill is hot, remove chicken from marinade and discard marinade. Place chicken on grate. Cook for about 10 minutes on each side until chicken is no longer pink inside.

A simple, sweet barbecue sauce will please even finicky eaters.

2 cups ketchup
1 cup packed light-brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons cider vinegar
Coarse salt and ground pepper
6 pounds chicken drumettes, patted dry

Steps:

  • In a medium bowl, whisk together ketchup, sugar, Worcestershire, and vinegar; season with salt and pepper. Set aside 1 cup sauce for tossing raw chicken; use rest for baked chicken.
  • Preheat oven to 450 degrees, with racks in upper and lower thirds; line 2 rimmed baking sheets with aluminum foil.
  • Divide drumettes between baking sheets, and toss with reserved 1 cup sauce.
  • Bake chicken until opaque throughout, 30 to 35 minutes, rotating sheets and tossing chicken halfway through. Toss baked drumettes with 1/2 cup sauce, and serve with remaining sauce on the side.

  • If using boneless skinless chicken breasts, place the chicken breasts one at a time in a 1-gallon zip-lock bag; using a meat mallet, pound the breasts to an even ½-inch thickness. (Skip this step if using tenderloins.)
  • In a large bowl, whisk together the oil, garlic, salt, brown sugar, smoked paprika, cumin, chili powder, and cayenne. Place the chicken in the bowl and, using tongs, toss until the chicken is evenly coated with the marinade. Cover the bowl and place in the refrigerator to marinate for at least 6 hours or up to 24 hours.
  • Preheat the grill to high and oil the grates. Grill the chicken, covered, for 2 to 3 minutes. Flip the chicken, and then brush with some of the barbecue sauce. Cook for 2 to 3 minutes more. (Note that tenderloins will cook faster than breasts.)
  • Transfer the chicken to a serving platter and serve with the remaining barbecue sauce alongside.
