3 quarts green tomatoes, chopped
1 1/2 quarts tart apples , peeled and chopped
2 cups raisins
1 cup currants
1/2 cup diced candied citron , lemon or orange peel
2 teaspoons ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1 1/2 to 2 teaspoons salt
3 cups brown sugar, firmly packed
3/4 cup vinegar
1/4 cup lemon juice

Steps:

  • Gather the ingredients.
  • Combine all ingredients-green tomatoes, apples, raisins, currants, candied citron or peel, cinnamon, allspice, cloves, salt, brown sugar, vinegar, and lemon juice-in a large heavy pan. (Omit cloves if you plan to freeze the mincemeat.)
  • Cook the mixture slowly until it is tender and thick, about 1 hour or more. Stir frequently to prevent sticking.
  • To can, pour boiling mixture into hot, sterile jars , leaving 1/2-inch headspace; seal promptly .
  • Process in a boiling water bath for 20 minutes. Store in a cool dry place.
  • To freeze, pack cold mincemeat into freezer jars or containers, leaving about an inch headspace for expansion. Seal and freeze promptly.

This makes about 30 pints of mincemeat. Have on hand 30 pint canning jars with brand-new rings and lids. Reusing old lids is not recommended. A delicious way to use green tomatoes. The recipe came from my grandfather, and our family has been making it forever! Use straight from the jar for pies, cookies, muffins, or cake.

8 quarts green tomatoes, minced
8 quarts minced, cored apples
½ pound beef suet
6 pounds brown sugar
1 cup distilled white vinegar
2 tablespoons salt
2 tablespoons ground cinnamon
2 tablespoons ground cloves
2 tablespoons ground allspice
2 pounds raisins
32 ounces candied mixed citrus peel
7 large orange, peeled, sectioned, and cut into bite-size
2 lemons, finely chopped

Steps:

  • In a very large stock pot, combine green tomatoes, apples, suet (or oil), brown sugar, vinegar, chopped oranges, chopped lemons, raisins, and candied peel. Season with salt, cinnamon, cloves and allspice. Cover, and cook over low heat for 3 hours.
  • Sterilize 30 (1 pint) canning jars and lids according to manufacturer's instructions.
  • Ladle filling into the sterilized jars, leaving 1/2 inch head space. Wipe the jar with a clean, damp cloth. Cover with jars with lids, and screw on jar rings.
  • Heat water in a hot water canner. Place jars in rack, and slowly lower jars into canner. The water should cover the jars completely, and should be hot but not boiling. Bring water to a boil, and process for 10 minutes.

Crust:
2 12-inch round Pie Crusts
Filling:
1 1/2 pounds Granny Smith apples (about 3 large), peeled, quartered, cored, cut into 1/2-inch cubes
1 cup dried currants
3/4 cup golden raisins
3/4 cup sweetened dried cranberries
3/4 cup diced dried apricots
1/2 cup dried tart or sweet cherries
1 cup sugar
2 tablespoons mild-flavored (light) molasses
2 tablespoons dark rum
2 tablespoons brandy
2 tablespoons cornstarch
2 tablespoons (1/4 stick) unsalted butter
1 teaspoon finely grated orange peel
3/4 teaspoon finely grated lemon peel
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
Large pinch of ground cloves
Large pinch of fine sea salt
1 tablespoon heavy whipping cream
1 tablespoon sugar

Steps:

  • For crust:
  • Place crusts on 2 rimless baking sheets and chill while preparing filling.
  • For filling:
  • Place 1/3 of apples in processor. Using on/off turns, chop into small pieces. Transfer chopped apples to large saucepan. Repeat chopping remaining apples in 2 more batches in processor; add to saucepan. Place all dried fruit in processor. Using on/off turns, chop until beginning to stick together. Add dried fruits to saucepan with apples. Add sugar, molasses, rum, brandy, cornstarch, butter, orange peel, lemon peel, spices, and sea salt; stir to blend. Simmer over medium-low heat until mixture is very thick, stirring often to prevent scorching, 10 to 12 minutes. Remove from heat. Transfer pie filling to large bowl and cool completely, about 1 hour.
  • Position rack in bottom third of oven; preheat to 375°F. Transfer 1 crust to 9-inch glass pie dish, leaving dough overhang. Spread cooled filling in crust. Cut second crust into 1/2-inch-wide strips. Arrange 6 dough strips atop filling, spacing 1 inch apart. Place 6 dough strips at 45-degree angle to first strips, forming diamond lattice pattern. Trim strip ends even with bottom crust. Fold crust edge and strips in; press edge with tines of fork to seal. (Feeling ambitious? Click here for tips on making a woven lattice crust.) Whisk cream and sugar in small bowl to blend for glaze. Brush glaze over lattice.
  • Bake pie 15 minutes. Reduce oven temperature to 350°F and continue to bake until crust is golden brown and filling is bubbling, 50 to 60 minutes. Transfer pie to rack and cool completely for filling to set. DO AHEAD: Can be made 1 day ahead. Cover and refrigerate. Let stand at room temperature 2 hours before serving. If desired, rewarm pie in 325°F oven 10 to 15 minutes before serving.
  • Serve pie warm or at room temperature.

1-1/2 cups sugar
5 tablespoons all-purpose flour
1 teaspoon ground cinnamon
Pinch salt
3 cups thinly sliced green tomatoes (4 to 5 medium)
1 tablespoon cider vinegar
Dough for double-crust pie
1 tablespoon butter

Steps:

  • Preheat oven to 350°. In a bowl, combine sugar, flour, cinnamon and salt. Add tomatoes and vinegar; toss to coat. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate. Add filling; dot with butter., Roll remaining dough to a 1/8-in.-thick circle; cut into 1-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom crust; flute edge., Bake until tomatoes are tender, about 1 hour. Cool on a wire rack to room temperature. Store in the refrigerator.

My mother made this pie at Thanksgiving, and it's a great variation on apples and raisins with a hint of orange and cinnamon and cloves. She called it 'mock' because there is no meat involved. The filling mixture will keep for several days. Before using the filling, it's optional to stir in 1 to 2 tablespoons of brandy.

1 ½ cups seedless raisins
4 Granny Smith apples - peeled, cored and sliced
1 tablespoon orange zest
⅓ cup orange juice
½ cup apple cider
¾ cup white sugar
½ teaspoon ground cinnamon
½ teaspoon ground cloves
2 soda crackers, finely crushed
1 pastry for a 9 inch double crust pie

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Stir the raisins, apples, orange zest, orange juice, and apple cider together in a pan. Simmer over medium heat, stirring occasionally, until apples are very soft, about 20 minutes. Stir in the sugar, cinnamon, cloves, and soda crackers until well blended. Refrigerate until ready to use, or pour apple mixture into the prepared pie crust. Top with the second crust. Pinch and crimp edges to seal the crusts. Pierce the top crust in several places with a fork.
  • Bake in preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and bake until top is golden brown, about 30 minutes more. Cool before serving.

6 green tomatoes
6 tart apples
1/4 lb seedless raisin (4 oz)
1/4 lb raisins (4 oz)
1 tablespoon cinnamon
1/4 cup fruit juice
1/4 cup apple cider vinegar
1/2 cup candied orange peel (you can use citron)
2 tablespoons orange rind
1 teaspoon salt
1 teaspoon clove
1/2 teaspoon allspice
1/2 teaspoon ginger
1/4 teaspoon nutmeg

Steps:

  • Force tomatoes and cored apples through a food chopper or chop in food processor.
  • Place into dutch oven. Add remaining ingredients, bring to boil. Reduce heat and cook until thickened. .
  • If you are not using right away, you can can it: Fill sterilized jars with 1/2" headspace and process in hot water bath 20 minutes.
  • PS The original recipe calls for candied citron, but the ingredient list did not recognize the ingredient "citron" so I wrote orange peel. Your choice!

  • Prepare the Mincemeat Filling: Bring apples, tomatoes, cranberries, bourbon, zest, apple pie spice, 1 1/2 cups sugar, and 1/2 teaspoon salt to a boil in a 4-quart heavy saucepan over medium-high, stirring often. Reduce heat to medium, and cook, stirring often, until thickened, 30 to 35 minutes. Remove from heat, and cool completely, about 1 hour. Stir in pecans. (Mixture can be made and chilled up to 3 days ahead without pecans. Stir in toasted pecans just before spooning mincemeat into piecrust.)
  • Prepare the Crust: Stir together flour, 1 tablespoon sugar, and 1 teaspoon salt in a large bowl. Using a pastry blender, cut butter and shortening cubes into flour mixture until mixture resembles small peas. Using a fork, gradually stir in 8 tablespoons ice water, stirring until dry ingredients are moistened and dough begins to form a ball and pulls away from sides of bowl, adding up to 2 tablespoons more water, 1 tablespoon at a time, if necessary. Turn dough out onto a work surface; divide in half. Shape and flatten each dough half into a disk. Wrap each in plastic wrap, and chill 1 to 24 hours.
  • Preheat oven to 350°F. Unwrap 1 chilled dough disk, and place on a lightly floured surface. Let dough stand at room temperature until slightly softened, about 5 minutes. Sprinkle dough with flour, and roll into a 13-inch circle. Fit dough into a 9-inch glass pie plate. Spoon Mincemeat Filling into piecrust. Brush edge of piecrust with some of the beaten egg.
  • Unwrap remaining chilled dough disk, and place on a lightly floured surface. Sprinkle dough with flour, and roll into a 12-inch circle. Leaving a 3-inch border around edges, cut out and remove leaf shapes from middle of dough circle using a small (about 1 1/2-inch) maple leaf-shaped cutter. Brush top crust with some of the beaten egg, and carefully place over Mincemeat Filling. Press edges of bottom and top crusts together to seal, and trim excess even with rim of pie plate. Make small diagonal cuts into dough around piecrust edge at 1/2-inch intervals, making small tabs. Gently place every other tab on adjacent tab so that it slightly overlaps. Brush leaf cut-outs with remaining beaten egg, and place decoratively on top of piecrust. Place pie on a rimmed baking sheet.
