BAKED HUEVOS RANCHEROS
Steps:
- Preheat oven to 375° Farenheit.
- Lightly spray a 10" oven-safe skillet or baking dish with cooking spray.
- Add salsa and beans and spinach to the skillet, stirring together.
- Sprinkle evenly with the cheese.
- Make four depressions, evenly spaced, with the back of a spoon, then add an egg to each depression.
- Wrap tortillas in foil and put them in the oven.
- Bake eggs 15-20 minutes, until egg whites are cooked but yolks are still jiggly.
- Serve immediately on hot tortillas with cilantro, avocado, lime wedges and hot sauce.

- Spread bacon jam on the bottom half of each deli roll. Then layer on some shredded Pop Pulled Pork and a slice of country ham and pepper jack. Add bread and butter pickles, top with the other half of the roll and wrap in paper.
- Place the onion slices in the bottom of a slow cooker. Sprinkle the pork with the salt, pepper and garlic powder, then place it on top of the onions. Crack open the can of pop and pour it over the whole thing. Add the whole bottle of BBQ sauce and the hot sauce, then add the brown sugar to the liquid and stir.
- Put on the lid, set the slow cooker to high and cook for 6 hours. When it's done, the pork will be dark and weird and wonderful. It'll also be fork-tender. That's when you know it's done.
- Remove the meat from the slow cooker and shred completely. Spoon the fat from the sauce. Return the meat to the slow cooker and keep in the sauce until ready to serve. Divine!

- Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.
- Cut the eggs in half lengthwise and carefully remove the yolks to a bowl. Mash the yolks with the mayonnaise and mustard and season with pepper and ranch dressing mix, blending until smooth. Spoon the mixture into the egg white halves and garnish with a sprinkle of paprika.

- Place the red cabbage in a microwave-safe bowl with 1/3 cup water. Microwave for a couple of minutes until the water turns purple.
- Separate the egg into 2 small bowls. Add 2 tablespoons of the purple water to the egg white, whisking vigorously to combine for a uniform color.
- Heat a little oil to coat the bottom of a small nonstick skillet over medium heat. Add the green egg white and top with the egg yolk (so it resembles a fried egg). Cook until the white (green) is set. Plate and enjoy!

- Butter 4 individual 1-cup shallow baking dishes or one medium-size baking dish.
- Cook bacon in a large frypan, until crisp; drain.
- Reserve about 3-4 tablespoons bacon drippings.
- Fry hash brown potatoes in the bacon drippings until browned, about 10 minutes.
- Divide potatoes evenly in the bottom of the prepared baking dishes or dish.
