1 red snapper fillet (3/4 pound), cut in half
3/4 teaspoon lemon-pepper seasoning
1/8 teaspoon salt
1/2 cup canned diced tomatoes and green chiles
2 tablespoons chopped onion
2 tablespoons chopped celery
1 tablespoon minced fresh parsley
1/8 teaspoon celery seed

Steps:

  • Sprinkle both sides of red snapper with lemon-pepper and salt. Place in a greased 11x7-in. baking dish. , Combine the tomatoes, onion, celery, parsley and celery seed; spoon over snapper. , Cover and bake at 350° for 25-30 minutes or until fish flakes easily with a fork.

1 medium onion, coarsely chopped (2/3 cup)
1/2 medium green bell pepper, coarsely chopped (1/2 cup)
2 medium tomatoes, coarsely chopped (1 1/2 cups)
4 medium green onions, thinly sliced (1/4 cup)
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/2 teaspoon dried thyme leaves
1/4 teaspoon red pepper sauce
1 cup uncooked instant brown rice
2 cups water
1 1/2 lb red snapper, sole or flounder fillets (about 1/2 inch thick)
Cooking spray
2 tablespoons chopped fresh parsley

Steps:

  • Heat gas or charcoal grill. Cut 1 (24x18-inch) sheet of heavy-duty foil; spray with cooking spray. Layer coarsely chopped onion, bell pepper and tomatoes on center of sheet. Bring up 2 sides of foil over vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place vegetable packet on grill over medium heat. Cover grill; cook 6 minutes, turning once. Meanwhile, in large bowl, mix onions, vinegar, salt, thyme and pepper sauce; set aside. Cook rice in water as directed on package.
  • Spray fish and grill basket that has locking top with cooking spray. Place fish in basket. Place on grill with vegetable packet. Rotate vegetable packet 1/2 turn. Cover grill; cook 8 to 12 minutes, turning fish once, until fish flakes easily with fork.
  • Place fish on serving platter; keep warm. Cut large X across top of packet; carefully fold back foil to allow steam to escape. Add grilled vegetables and parsley to green onion mixture; toss. Spoon over fish. Serve with rice.

2 green bell peppers, seeded and cut into 1 1/2-inch dice
3 vine-ripe tomatoes, seeded and diced
1 small onion, chopped
1 large clove garlic, finely chopped
1/2 cup flat-leaf parsley leaves, coarsely chopped
1/2 lemon, juiced (1 tablespoon)
1 tablespoon red wine vinegar
3 tablespoons extra-virgin olive oil
Coarse salt and black pepper
1 teaspoon ground cumin, 1/2 a palm full

Steps:

  • Combine peppers, tomatoes, onions, garlic, parsley in a bowl with your fingertips. Squeeze the juice of the lemon with the lemon half sitting upright. This will help prevent the seeds from falling into the bowl. The lemon juice will spill down over the sides of the lemon and the seeds will remain with the fruit. Squeeze the juice evenly over the salad. If the lemon is under-ripe, microwave it for 10 seconds before you cut into it. Next, sprinkle a tablespoon of vinegar over the salad -- just eyeball it. Drizzle the extra-virgin olive oil over the salad, add the salt, pepper and cumin. Toss again. Taste to adjust seasonings and serve.

2 red snapper fillets (about 8 to 10 ounces total)
2 tablespoons olive oil
3/4 cup (generous) drained canned diced tomatoes
1 large tangerine, peeled, seeded, cut into 1/2-inch pieces
1/3 cup chopped green onions
3 tablespoons chopped fresh cilantro
1 teaspoon minced jalapeño chili with seeds

Steps:

  • Preheat oven to 475°F. Rub red snapper fillets on both sides with some of olive oil and sprinkle with salt and pepper. Place snapper in 9-inch glass pie dish. Mix remaining oil, tomatoes, tangerine pieces, green onions, cilantro and jalapeño in small bowl. Season topping to taste with salt and pepper. Spoon topping over snapper. Bake until snapper is just opaque in center, about 12 minutes.

1 celery rib, thinly sliced
1/2 cup chopped red onion

1 1/2 green bell peppers
300 g ripe tomatoes (or cheat and use tinned)
1 teaspoon sunflower oil
1 teaspoon cumin seed
1/4 teaspoon salt
1 1/2 teaspoons mild chili powder
1/4 teaspoon turmeric powder
1/2 teaspoon garam masala
1 teaspoon brown sugar

Steps:

  • Peel the tomatoes if you can be bothered- I don’t as I think they add a little extra flavour!
  • Cut the green pepper and tomatoes into large chunks- peppers about 1 inch squares and tomatoes into quarters.
  • Or open tin if cheating!
  • Heat the oil in a wide pan and add the cumin seeds.
  • Stir about, then add the green pepper and sauté for 2-3 minutes.
  • Add the tomatoes and cook, stirring, for 5 minutes, mashing them down as they soften.
  • Add the salt, chilli powder, turmeric, garam masala and brown sugar.
  • Stir well, then simmer, covered, for 7 minutes, or until the pepper are cooked to your liking.
  • Best served at once.

3 large garlic cloves, pressed
1/2 cup dry white wine
1 1/2 cups purchased marinara sauce
3/4 cup chopped roasted jar-packed red bell peppers
1/4 cup sliced fresh basil
2 6- to 8-ounce red snapper fillets

Steps:

  • Preheat oven to 400°F. Heat 1 tablespoon oil in heavy medium skillet over medium heat. Add garlic and sauté 1 minute. Add wine and bring to boil. Add marinara sauce, roasted peppers and half of basil and cook until reduced to thick sauce, stirring occasionally, about 5 minutes. Season to taste with salt and pepper. (Sauce can be prepared 1 day ahead. Cover and refrigerate. Reheat before continuing.)
  • Pour remaining 1 tablespoon oil into small baking dish. Add fish; turn to coat. Season with salt and pepper. Spoon sauce over fish. Bake just until cooked through, about 20 minutes. Sprinkle remaining basil over and serve.
