PERFECT CRAB-STUFFED MUSHROOMS
These little goodies are the perfect addition to your next holiday gathering or even the perfect appetizer to serve before a cozy dinner at home. Everyone will be dazzled by every delicious bite (they won't be able to keep their hands off of them!) You can smile while you think of how easy they were to toss together! And the best part - I usually end up with leftover stuffing, which freezes beautifully until the next carry-in!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Melt 2 tablespoons butter in a skillet; cook and stir green onion until softened, about 2 minutes. Transfer green onion to a bowl. Stir in crabmeat, bread crumbs, 1/4 cup Monterey Jack cheese, egg, lemon juice, and dill weed until well mixed.
- Pour 1/2 cup melted butter in a 9x13-inch baking dish; turn mushroom caps in butter to coat. Fill mushroom caps with the crab mixture and sprinkle with remaining 1/2 cup Monterey Jack cheese. Pour white wine into baking dish.
- Bake in preheated oven until cheese is melted and lightly brown, 15 to 20 minutes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Prepare a baking sheet with cooking spray.
- Clean mushrooms with a damp paper towel. Carefully break stems from mushrooms. Chop stems extremely fine.
- Heat oil in a large skillet over medium heat. Fry chopped mushroom stems and garlic in hot oil until any moisture has disappeared, taking care not to burn the garlic, 3 to 5 minutes. Spread mushroom mixture into a bowl to cool completely, about 10 minutes.
- Stir cream cheese, Parmesan cheese, black pepper, onion powder, and cayenne pepper with the mushroom stems and garlic until very thick and completely mixed. Use a small spoon fill each mushroom cap with a generous amount of stuffing. Arrange stuffed mushrooms onto the prepared cookie sheet.
- Bake in preheated oven until piping hot and liquid starts to form under the caps, about 20 minutes.

- Clean mushrooms.
- Remove stems and insides and chop.
- Melt butter and add onions and chopped mushroom pieces and saute until tender.
- Add breadcrumbs, cheese, Worcestershire sauce and crabmeat (if using).
- Spoon mixture into mushrooms.
- Sprinkle with paprika and parsley.
- Bake at 400 degrees for 20 minutes.
- You can adjust the amounts of bread crumbs, cheese and Worcestershire sauce to your personal preferences.

I discovered this recipe in Better Homes and Gardens several years ago. It can be served as an appetizer or vegetable. I make it as an appetizer for holidays, and use portobello mushrooms when served as a side dish.

- Preheat the broiler.
- Brush the mushrooms with oil, season and place gill side down under the broiler for 5 minutes.

- Finely chop mushrooms in processor. Melt 2 tablespoons butter in medium skillet over medium-high heat.
- Add mushrooms and 3 tablespoons onions; sauté 3 minutes. Add vermouth and boil until evaporated, about 1 1/2 minutes. Season with salt and pepper.
- Whisk eggs, 1 tablespoon water, salt, and pepper in medium bowl to blend. Melt 1 teaspoon butter in small nonstick skillet over medium heat.
- Add half of egg mixture. Stir with back of fork until edges begin to set.
- Cook until omelet is set, lifting edges with spatula to let uncooked egg flow underneath, about 2 minutes.
- Spoon half of mushroom mixture down center of omelet. Fold both sides of omelet over filling and transfer to plate.
- Repeat with remaining butter, egg mixture, and mushroom mixture. Sprinkle omelets with remaining onions.
OVEN ROASTED TROUT WITH LEMON DILL STUFFING

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Toss bread crumbs with onion, dill, lemon zest, garlic, and half of the olive oil. Season with salt and pepper to taste. Press stuffing into the trout, then brush the trout with the remaining olive oil, and season with salt and pepper. Place trout onto prepared baking sheet.
- Roast in the preheated oven until the skin of the fish begins to brown, and the flesh flakes easily with a fork, about 20 minutes.
