Green beans lightly seasoned with tarragon and garlic.

Steps:
- Fill a 3 quart sauce pan approximately ½ full with salted water and bring to a boil.
- Drop trimmed green beans into the water and bring back up to a boil. Cook gently for 5-6 minutes or until tender.
- Drain the green beans and return to the pan, adding butter, chopped tarragon, garlic powder, salt and pepper. Stir to melt the butter and combine. Serve immediately.

- Add beans to boiling water, cook till desired doneness.
- Drain beans in colander.
- While beans cook, whisk togehter the shallot, vinegar, mustard, tarragon, 1/4 tsp salt and black pepper.

- Put beans in a serving bowl and toss with the vinaigrette.
- serve immediately.

- Melt butter in a large, high-sided skillet over medium heat. Add shallot; cook, stirring constantly, until soft and translucent, 2 to 3 minutes. Add beans, and gently toss to coat with shallot mixture. Cook, stirring occasionally, 2 minutes.
- Add wine. Raise heat to medium-high; cook, stirring often, 12 minutes. Reduce heat to medium, and cook until beans are tender, 3 to 5 minutes more. Stir in tarragon, and season with salt and pepper. Garnish with tarragon sprigs.

- In a mixing bowl, whisk together the vinegar, mustard, shallots, and salt and pepper. Slowly add the oil in a stream and whisk to mix well. Add the tarragon and gently stir. Adjust seasonings and tarragon, to taste.
- Heat a flat nonstick pan over medium heat. Toast the almond slices in the pan, stirring occasionally, until slightly toasted. They should take 3 to 4 minutes. Spread the toasted nuts out on a dry towel to cool. Chop the nuts into smaller pieces, once cooled, if desired.
- Cut the green beans into approximately 2 inch pieces. Place in a vegetable steamer over boiling water and steam them until al dente (about 5 minutes, more or less). Time will vary based on the freshness of the beans and your preferences as to firmness. Alternatively, you can boil them gently until al dente (which should take less time).
- Drain the beans in a colander and immediately place in a serving bowl. Toss with the dressing while still warm. Top with the toasted almond pieces and serve.
