BOUNESCHLUPP (GREEN BEAN SOUP FROM LUXEMBOURG)

This hearty bean soup is typical for the regions of Luxembourg and Lorraine. There is no category "Benelux", so I placed the recipe under "German" recipes because the cuisines of Luxembourg and Lorraine are close to the bordering German cuisines. The smoked bacon which is used should be dry.

500 g green pole beans
1 leek
4 slice smoked bacon
400 g potatoes
200 g carrots
500 g celeriac
1 l broth
salt, to taste
pepper, to taste
4 smoked sausages

Steps:

  • 1. Wash beans and cut in 1/2 inch pieces
  • 2. Wash leek, peel carrots and celeriac
  • 3. Dice leek, carrots and celeriac
  • 4. Put beans, diced leek, carrots and celeriac into the broth and bring to a boil
  • 5. Peel and dice potatoes
  • 6. After 30 minutes, add potatoes, bacon and sausages to the soup and cook until potatoes are soft
  • 7. Season with salt and pepper to taste (if at all necessary since the bacon and sausages already are salty)
  • 8. Serve hot, you can also serve it with a dollop of sour cream

This is my grandmother's recipe. She was a Transylvanian Saxon! This is a great soup and worth the experiment!

2 pounds fresh green beans
1 clove garlic, minced
1 sprig fresh parsley
1 pinch salt
2 slices bacon
3 tablespoons all-purpose flour
1 onion, chopped
1 cup sour cream
3 tablespoons vinegar

Steps:

  • In a large pot over medium heat, combine green beans, garlic, parsley, salt and water to cover and cook until beans are tender.
  • Fry bacon until crisp, set aside. Add onion and flour to bacon grease, stirring until smooth and brown. Add some water from the beans, stirring slowly and constantly to prevent lumps.
  • Cook to thicken a bit, then add it to the bean soup and bring to a boil. Stir crisp bacon, sour cream and vinegar.

2 cups green beans or 2 cups wax beans, sliced
1 cup diced potato
1 cup diced onion
water, to cover
4 slices bacon
1/2 pint cream or 1/2 pint sour cream
mettwurscht sausage (optional)
salt & pepper

Steps:

  • Put 2c sliced green or wax beans and 1c diced potatoes and chopped onion into a soup pot.
  • Cover with water and boil until soft.
  • Fry 4 slices of bacon and add bacon bits and fat to soup.
  • Add about ½ pint of cream and simmer (sour cream is even more delicious).
  • Some people like to add a "Mettwurscht" (sausage) to their "Bou'neschlupp"
  • Add salt & pepper to taste.

I recently posted a recipe for this traditional and authentic Luxembough dish - and since I'm trying to make it WW friendly, lightened it up for this! As written here, a serving has 3 WW points - with or without using fat free yogurt. We liked it - hope you do, too!

1/2 lb green beans (or yellow beans)
1 medium red potato
1 medium russet potato (baking potato)
1 leek or 1/2 medium onion
cooking spray
4-6 oz smoked turkey or chicken sausage
1 qt water
4 tsp beef or vegetable bouillon
1 bay leaf
1/2 tsp whole cloves
1 tsp dried summer savory
salt, pepper, nutmeg to taste
1/4 c light sour cream or fat free plain yogurt (optional)

Steps:

  • 1. Clean beans and leeks, if using, and wash well, peel and wash potatoes, slice sausage. If using onion, peel.
  • 2. Halve the leek lengthwise and cut the white part into fine strips or quarter onion and cut into fine slices. Cut the beans into approximately 1 inch pieces. Finely grate or mince the russet potato.
  • 3. Spray and heat a large stock pot at medium temperature and lightly sauté the leek/ onion for a few minutes.
  • 4. Add the water, bouillon, bay leaf and cloves (in a tea ball or similar to make it easier to remove later), add the beans and the finely grated or minced russet potato. Simmer for 15-20 minutes until beans are tender.
  • 5. Then add the diced potatoes, cut into 1/2 inch cubes, the sausages and summer savory to the soup and simmer for another 10 minutes. Gently, stir in the light sour cream or yogurt, if using. Finally, season with salt, pepper and fresh grated nutmeg.
  • 6. Remove bay leaf and cloves before serving.

  • Clean the vegetables. Cut the beans into two or three acording to their size. The pieces should be small enough to fit onto a tablespoon. Dice the potatoes, celery and carrots.
  • Heat the oil in a large pot. Cut the tofu into slices and fry them on high heat. Remove from pot and set aside.
  • Sauté the onion, celery and carrot in the same pot. Add the green beans and seasonings and heat briefly. Then pour over the vegetable stock and potatoes. Cook everything until the vegetable are done.
  • Sprinkle with fresh parsley and season with salt and pepper. Remove the bay leaf before serving and garnish with soya cream and tofu.
