Make a Niçoise salad featuring pan-seared potatoes, tuna, green beans, olives, and hard-boiled egg, along with a garlicky vinaigrette.

For the Salad:
1/2 pound white potatoes (scrubbed)
1/4 pound fresh green beans (trimmed)
4 cups salad greens (either baby greens or larger greens torn into bite-sized pieces)
1 large (12-oz.) can tuna (drained)
4 hard boiled eggs (peeled and quartered)
2/3 cup brine-cured pitted black olives (e.g. Kalamata)
10 to 12 cherry tomatoes, cut in half
For the Dressing:
1/2 cup extra virgin olive oil
1/4 cup aged red wine vinegar
1 tablespoon Dijon mustard
2 cloves fresh garlic (peeled)
3-4 anchovy fillets
Kosher salt to taste
Freshly ground pepper to taste

Steps:

  • Gather the ingredients.
  • Bring a pot of salted water to boil. Boil the potatoes for about 4 minutes.
  • Remove with a slotted spoon, drain, then slice them in half. (Leave the water in the pot, though; you'll use it for blanching the green beans in a few moments.)
  • Heat a skillet over medium-high heat, with a bit of olive oil until it's quite hot, then place the sliced potatoes in the pan, cut-side down.
  • Sear for a minute or two until the potatoes are lightly browned, then remove them from the pan and transfer to a bowl. Toss with kosher salt and set aside.
  • Bring the water back to a boil, and add the green beans. Blanch for 2 minutes.
  • Remove with tongs to a bowl of ice water to shock them and keep them from cooking further. Drain and dry them with paper towels and set aside.
  • Combine the oil, vinegar, mustard, garlic, and anchovies in a blender or food processor. Process until smooth. Season to taste with kosher salt and freshly ground black pepper. (The anchovies are salty, so you might not need much additional salt.)
  • Place the salad greens in a bowl. Drizzle 2 tablespoons of the dressing and toss to coat. Arrange the greens on 4 serving plates or 1 large platter. Distribute the potato halves equally, with the browned sides facing up.
  • Toss the green beans, olives, and tomatoes with enough additional dressing to lightly coat them, and arrange them on the salad.
  • Divide the tuna and place it in the center of plates. Arrange the hard-boiled egg quarters, then garnish with the fresh parsley and serve. Note: Instead of the vinaigrette, you could serve a Niçoise salad with garlic aioli .

1 pound green beans, ends trimmed
1 pound yellow wax beans, ends trimmed
12 cloves Roasted Garlic, recipe follows
20 grape or cherry tomatoes, halved
1/4 cup Sun-Dried Tomato and Basil Vinaigrette, recipe follows
1 1/2 teaspoons sea salt
Freshly ground black pepper
2 whole heads garlic
2 tablespoons extra-virgin olive oil
1/2 cup sun-dried tomato halves, coarsely chopped (see note)
1 cup boiling water
1/2 cup basil leaves (packed)
1 garlic clove
2 tablespoons plus 1 teaspoon red wine vinegar or balsamic vinegar
1 cup extra-virgin olive oil
1/2 teaspoon sea salt
Freshly ground black pepper

Steps:

  • Make an ice-water bath.
  • Bring a large pot of salted water to a boil. Add both kinds of beans, reduce the heat to medium, and cook for 3 to 4 minutes, until the beans are just tender. Drain and place in the bowl of ice water for a few minutes.
  • When the beans are cool, drain immediately and place them in a large bowl. Add the garlic, tomatoes, and vinaigrette and toss until mixed. Season with the salt and pepper.
  • Preheat the oven to 400 degrees F.
  • Cut off the top 1/3 of the garlic heads crosswise to expose the cloves. Drizzle each head with 1 tablespoon of the oil and wrap in aluminum foil. Place the garlic on a baking sheet and roast in the oven for about 40 minutes, or until soft. Allow to cool, then squeeze garlic cloves out of their skins.
  • Store the garlic in plastic wrap or covered with olive oil in a glass jar. The roasted garlic will keep for about 2 weeks in the refrigerator.
  • Place the sun-dried tomatoes in a small bowl. Pour the boiling water over the dried tomatoes to soften, 10 to 15 minutes. Remove the tomatoes, reserving the tomato water.
  • In a blender or food processor, combine the tomatoes, basil, garlic, vinegar, and 6 tablespoons of the tomato water or plain water and pulse until smooth. With the motor on low, slowly add the oil and blend until the dressing is well blended. Season with the salt and pepper.

3/4 pound small new potatoes
Kosher salt
1 1/2 pounds green beans, trimmed
4 large eggs
1 small shallot, finely chopped
1 teaspoon finely grated lemon zest
1 tablespoon plus 2 teaspoons fresh lemon juice
2 teaspoons Dijon mustard
1 teaspoon honey
1/8 teaspoon freshly ground black pepper
5 tablespoons olive oil, divided
2 tablespoons coarsely chopped dill, divided
1/4 cup drained capers, patted dry
1 bunch breakfast radishes (about 3/4 pound), trimmed, quartered
1/4 cup Niçoise or Kalamata olives, pitted, halved

Steps:

  • Place potatoes in a medium pot; add cold water to cover by 1". Season with salt, bring to a boil, and cook until potatoes are fork-tender, 12-15 minutes. Transfer to a large bowl of ice water and chill until cold, about 3 minutes. Transfer to paper towels and pat dry, reserving bowl of ice water.
  • Meanwhile, bring another medium pot of salted water to a boil. Add green beans and cook until crisp-tender, 2-4 minutes. Using a slotted spoon, transfer to ice water; reserve hot water in pot. Chill beans until cold, about 3 minutes. Transfer to paper towels and pat dry, reserving bowl of ice water.
  • Return water in green bean pot to a boil, carefully add eggs, and cook 8 minutes. Transfer eggs to ice water and chill until cold, about 5 minutes. Peel; set aside.
  • Combine shallot, lemon zest, lemon juice, Dijon, honey, pepper, and 1/4 tsp. salt in a medium bowl. Whisk in 3 Tbsp. oil in a slow, steady stream, then whisk in 1 Tbsp. dill.
  • Heat remaining 2 Tbsp. oil in a small saucepan over medium-high. Add capers and cook, swirling pan occasionally, until capers burst and are crisp, about 5 minutes. Transfer capers with slotted spoon to paper towels. Let oil cool.
  • Toss green beans in a large bowl with half of the dressing. Arrange on a platter. Transfer potatoes to same bowl and toss with 1 Tbsp. dressing; arrange in a section on top of green beans. Toss radishes with 1 Tbsp. dressing in same bowl; arrange in another section on top of green beans. Cut eggs into quarters and place eggs and olives in sections on top of green beans, letting some beans show through. Just before serving, drizzle salad with remaining dressing, then top with fried capers and remaining 1 Tbsp. dill.

Niçoise salad is a classic composed French salad. Hearty enough for a main course, it's filled with olive oil-packed tuna, runny eggs, tender potatoes and green beans, briny olives, crisp cucumber, and crunchy radishes and drizzled with a tangy Dijon vinaigrette.

3 large eggs
kosher salt, to taste
12 oz new potato
6 oz green beans
½ head boston lettuce, leaves separated
⅓ english cucumber, thinly sliced
½ cup kalamata olive, pitted
1 can olive oil-packed tuna, flaked
½ cup radish, trimmed and halved
2 cloves garlic, minced
2 teaspoons dijon mustard
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
2 teaspoons champagne vinegar
3 tablespoons olive oil

Steps:

  • Make the salad: Prepare an ice bath by filling a large bowl with ice and cold water. Set aside.
  • Fill a small pot with water and bring to a boil over high heat. Reduce the heat to low and carefully submerge the eggs in the water. Cook for 7 minutes, then transfer to the ice bath. Let the eggs cool for 5 minutes, then peel. Slice the eggs in half lengthwise.
  • Add the potatoes to a medium pot and cover with cold water. Add a large pinch of salt. Bring the water to a boil and cook until the potatoes are fork-tender, about 15 minutes. Drain the potatoes in a colander. Cut the potatoes in half.
  • Fill a medium pot with water and a large pinch of salt. Once the water begins to boil, add the green beans and cook until bright green and just fork-tender, about 3 minutes. Drain the beans in a colander and rinse with cold water.
  • Make the vinaigrette: In a small bowl or glass measuring cup, whisk together the garlic, mustard, salt, pepper, and vinegar. Add the olive oil and whisk until smooth.
  • Lay the Boston lettuce leaves on a serving platter. Arrange the potatoes, cucumber, eggs, olives, tuna, green beans, and radishes on top.
  • Drizzle the vinaigrette over the salad and serve immediately.
