GREEK STYLE SHRIMP SCAMPI AND LINGUINI

Steps:
- Place a large pot of water on the stove to boil. Salt water and cook pasta to al dente.
- Season the shrimp with salt and pepper.
- While the pasta water comes to a boil, heat extra-virgin olive oil in a deep skillet with garlic. When garlic is brown, remove and reserve. Add shrimp and cook 3 to 4 minutes. Add red pepper flakes, lemon zest, oregano, olives, and wine and cook together a couple of minutes more. Remove from heat. Add a ladle of starchy pasta cooking water to sauce and some lemon juice. Remove the sauce from the heat. Drain pasta and add to the skillet. Let pasta soak in juices for a minute then toss with parsley and feta. Use tongs to pull pasta from skillet, giving it a turn to twist in as many ingredients as possible. Then, use the tongs to remove and arrange the shrimp and ingredients that may remain in the pan, distributing them evenly among the portions.

- Peel and devein shrimp, removing tails. Cut each shrimp lengthwise in half. Cook pasta according to package directions. , In a large nonstick skillet, heat butter and oil over medium-high heat. Add shrimp, green onions and garlic; cook and stir until shrimp turn pink, 2-3 minutes. Remove from pan with a slotted spoon., Add broth, lemon zest, lemon juice, pepper, salt and red pepper flakes to same pan. Bring to a boil; cook until liquid is slightly reduced, about 1 minute. Return shrimp to pan; heat through. Remove from heat., Drain pasta; divide among 4 bowls. Top with shrimp mixture; sprinkle with parsley. If desired, serve with cheese.

- Preheat the oven to 350 degrees F (175 degrees C). Place shrimp in a shallow baking dish.
- Melt butter in a small saucepan over medium heat. Add garlic, shallot, and olive oil and cook until fragrant, about 1 minute. Stir in chicken stock, lemon juice, red pepper flakes, paprika, salt, and pepper. Pour this mixture over shrimp and sprinkle with crushed croutons.
- Bake in the preheated oven until shrimp are bright pink on the outside and the meat is opaque, 9 to 11 minutes; do not overcook.

- Melt the butter in a saucepan over medium heat. Stir in the garlic, chopped parsley, tomatoes, and wine. Bring to a simmer, then reduce heat to medium-low, and cook for 1 hour, stirring occasionally, until the sauce has slightly thickened.

- Peel shrimp, leaving tails intact. Starting at tail end, butterly underside of each shrimp, cutting to, but not through, back of shrimp. Arrange 8 shrimp, cut sides up, in each of 6 gratin dishes; set aside.

This is a very easy and delicious dish I got from Moosewood Restaurant: Cooks at Home. It can be served over couscous (my choice), rice, or orzo. Goes great with a side of cooked broccoli or asparagus. If you are serving more than two I suggest doubling the recipe! ENJOY!

- Prepare ingredients - Have all the ingredients prepared and at hand before beginning to sauté.
- Sauté the garlic in the oil briefly, and then add the shrimp. Cook on medium heat for a minute.

- Grease a 13 x 9-inch baking pan, or a casserole dish.
- Heat olive oil in a large Dutch oven over medium heat.
- Add in the garlic, onion and chili flakes; saute for 1-2 minutes.
