GREEK MEAT-FILLED TRIANGLES
A Greek Festival appetizer. Try them for your next party or get-together or with your favorite Greek meal.

Steps:
- 1. Saute onion in a little butter until golden. Add the meat and stir until browned . Dilute tomato paste with a little water and add to meat. Add wine, cover and simmer for about 30 minutes, until meat is done and sauce is thick.
- 2. Remove from heat, allow to cool. Once cool, mix in grated cheese, egg, blending well.
- 3. Cut filo into strips of desired width. Brush each strip with melted butter using a pastry brush. Place one heaping teaspoon of filling on end of strip. Turn strip over filling to form a triangle. Continue folding from side to side until end of strip is reached. Continue to make triangles until all filling and strips are used. Place triangles close together, seam side down, on a greased cookie sheet.
- 4. Bake in a preheated 350 degree oven until golden brown. To bake frozen meat filled triangles, place immediately in a preheated 400 degree oven and bake until golden brown.
ALMOND TRIANGLES
Shortbread + almonds = delicious! This recipe came from the newspaper a few years ago, says it was submitted by Charlotte Midthun of Granite Falls, Minn.

Steps:
- Line a 10x15 jelly roll pan with foil (shiny side up). In bowl of electric mixer on medium/high speed, beat 2 sticks of butter until creamy (approx. 1 min.). Gradually add 1/2 cup sugar, beat until light and fluffy (approx. 2 min.). Add egg, extract, and salt, beat until throughly combined. Reduce speed to low, add flour and mix until just incorporated.
- Press dough evenly into pan and push up sides. Cover with plastic wrap and refrigerate for 30 minutes.
- Preheat oven to 375. Using a fork, prick dough in several places across pan. Bake for 10 minutes. Remove and allow to cool.
- In a large saucepan over med/high heat combine remaining butter, remaining sugar, brown sugar, and honey. Heat, stirring occasionally until the sugar dissolves. Increase heat, and allow mixture to boil for about 3 minutes undisturbed (No stirring). Then remove from heat and stir in cream and almonds. Spread mixture evenly across the cooled dough, return to oven and heat until bubbly. Cut into triangles while slightly warm.

GREEK SPINACH TRIANGLES

- * To cut calories, you can use butter-flavored cooking spray in place of the butter.
- Cook spinach according to directions; drain well.
- Mix spinach, eggs, onion, cream cheese, pepper and feta cheese together.
- Refrigerate mixture at least 1 hour.
- Open package of phyllo pastry; cut a strip 2" wide, cutting through all layers.
- Cover remaining dough with a damp cloth to prevent cracking.
- Separate dough so that you have 2 sheets for each triangle.
- Brush the dough with melted butter.
- Put 1 rounded teaspoon of spinach mixture at the top of the strip.
- Fold pastry over like folding a flag.
- Place on well-buttered baking sheet; brush top with butter.
- Bake at 375 degrees Fahrenheit for 20 minutes.
- Serve warm.
- To freeze the triangles before cooking, butter both sides of triangle and wrap well.
- Bake when needed.
POLENTA TRIANGLES

- Combine grits and 1/2 cup broth; mix well and set aside.
- Pour remaining 1 cup broth into heavy, large saucepan; bring to a boil.
- Add garlic and moistened grits; mix well and return to a boil. Reduce heat to low; cover and cook 20 minutes.
- Remove from heat; add feta cheese. Stir until cheese is completely melted.
- Add red pepper; mix well.
- Spray 8-inch square pan with cooking spray. Spoon grits mixture into prepared pan. Press grits evenly into pan with wet fingertips.
- Refrigerate until cold.
- Preheat broiler. Spray baking sheet with cooking spray.
- Turn polenta out onto cutting board and cut into 2-inch squares. Cut each square diagonally into 2 triangles.
- Place polenta triangles on prepared baking sheet and spray tops lightly with cooking spray. Place under broiler until lightly browned and crisp.
- Serve warm or at room temperature. Garnish with fresh oregano and chives if desired.
- Exchanges 1 starch/bread.

- Heat oven to 375°F.
- In small bowl, mix feta cheese, green onions and 3 tablespoons of the beaten egg.
- Do not unroll dough; separate long roll into 2 shorter rolls at center perforations.
- Unroll 1 roll until 1 rectangle can be separated from the roll.
- Refrigerate remaining dough.
- Press dough into 7 1/2 x 5 inch rectangle, pressing diagonal perforations to seal.
- Cut rectangle into 6 (2 1/2 inch) squares.
- Top each dough square with slightly rounded measuring teaspoon of feta cheese mixture.
- Fold dough over filling, forming triangle; press edges to seal.
- On ungreased cookie sheets, place triangles 2 inches apart.

- In a saucepan add oil and saute onion. Add mince and brown add tomato paste with about 2 cups water, marsala spices,cook on medium heat until mince is cooked and not much sauce remaining in pan.
- Remove from stove, add grated feta cheese, beaten eggs stir; put aside.
- Remove phyllo pastry from packet (there are about 22-24 sheets) cut down lengthwise.
- Keep covered with a moist tea towel as they dry out quickly if uncovered.
- Take one cut sheet brush with melted butter, fold lengthwise again now you have a long strip doubled.
- At bottom place a spoonful of mixture.
- Pick phyllo from bottom and fold upwards about 3cm enclosing the meat mixture press sides, then start folding to make a triangle making sure the corners are not sticking outside the fold.
- You go right, right, bring that point to the left side and left again and so on until you reach the top.
- Brush top of triangle with melted butter and place on baking greased baking tray, when tray is full bake in oven at 200°C until golden brown.
- These triangles can be frozen uncooked.
- When cooking from frozen stage don't defrost first.
- Have a hot over and bake on 200°C.
- Sometimes you may have to flip them over in the oven.
