ROSA MARINA PASTA SALAD
I got this recipe from a co-worker who brings it to every pot luck dinner. It is really so very good and makes a large batch. If you're making it just for family I'd suggest halving the recipe. Nice change in pasta salads and makes the occasion seem special. Note that you must start making this the day before you plan to serve it.

Steps:
- Put pasta in a large bowl.
- Beat eggs in small bowl.
- Drain the pineapple, saving juice.
- Refrigerate drained pineapple.
- In a saucepan, put saved pineapple juice, beaten eggs, sugar, flour and salt.
- Cook over low heat, stirring till thickened.
- Pour thickened juice mixture through a strainer over the cooked pasta.
- Mix well then and refrigerate overnight.
- The next day, drain all of the fruits very well.
- Fold the fruits (including the chilled pineapple) and Cool Whip into the pasta.
- Mix well.
- Chill for at least an hour.

- Heat the olive oil in a large (12-inch) skillet. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. - Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until cooked through but firm to the bite, about 11 minutes. Drain and transfer to a large bowl. Add mandarin oranges, pineapple chunks, crushed pineapple, and maraschino cherries to orzo.
- Combine juice from mandarin oranges, juice from pineapple chunks, juice from crushed pineapple, sugar, eggs, and flour in a saucepan over low heat; cook, stirring often, until sauce is thickened, 5 to 7 minutes. Remove sauce from heat and cool, about 30 minutes.
- Pour cooled sauce over orzo mixture and toss to coat. Refrigerate until flavors blend, 8 hours to overnight. Fold whipped topping into orzo mixture before serving.

- In a large saucepan, heat 1 tablespoon oil over medium-high heat. Add chicken; cook and stir 6-8 minutes or until no longer pink. LAMB WITH ORZO PASTA (GREEK)

Steps:
- In a stove-top Dutch oven brown the boneless lamb shoulder in the olive oil.
- Salt and pepper to taste.
- Add enough stock to come halfway up the side of the meat and simmer, covered, until very tender, about two hours.
- Remove the meat from the pot and set aside, covered, to keep warm.
- Remove the fat from the stock in the pan and add more stock if necessary to make up four cups.
- Remove the stock from the pan and set aside.
- Heat the Dutch oven again and add half cup olive oil.
- Add the orzo pasta and toss for a minute.
- Add the chopped onion and garlic sautee until the onion is clear.
- Stir in the tomatoes, dillweed and parsley.
- Return the meat to the pot along with the 4 cups of stock.
- Cover and simmer until the broth is absorbed and the pasta is tender, about 30 minutes.
- NOTE: if the dish is too wet when the pasta is tender continue to cook for a few more minutes with the lid off to reduce the sauce.
