This classic casserole is a staple dish found at meat-and-three diners and church covered-dish suppers across the South.

6 tablespoons unsalted butter, divided
3 pounds yellow squash, sliced ¼-inch thick (from 5 medium squash)
1 medium-size yellow onion, chopped (about 1 ½ cups)
2 teaspoons kosher salt, divided
2 large eggs, lightly beaten
1 (8-oz.) container sour cream
4 ounces sharp Cheddar cheese, shredded (about 1 cup)
2 ounces Swiss cheese, shredded (about ½ cup)
½ cup mayonnaise
2 teaspoons chopped fresh thyme
½ teaspoon black pepper
2 sleeves round buttery crackers (such as Ritz), coarsely crushed
1 ounce Parmesan cheese, shredded (about ¼ cup)

Steps:

  • Preheat oven to 350°F. Melt 3 tablespoons of the butter in a large skillet over medium-high. Add squash, onion, and 1 teaspoon of the salt; cook, stirring often, until center of squash is just tender and liquid has evaporated, about 10 minutes. Transfer mixture to a colander set over a bowl. Drain 5 minutes; discard any liquid.
  • Stir together eggs, sour cream, Cheddar and Swiss cheeses, mayonnaise, thyme, pepper, and remaining 1 teaspoon salt in a large bowl. Gently fold in squash mixture. Spoon into a lightly greased 11- x 7-inch (2-quart) baking dish.
  • Microwave remaining 3 tablespoons butter in a medium-size microwavable bowl on HIGH until melted, about 25 seconds. Toss together crackers, Parmesan cheese, and melted butter until combined; sprinkle over casserole. Bake in preheated oven until golden brown, about 20 minutes.

A classic Southern Squash Casserole is the perfect way to enjoy the bounty from your summer garden! The cheesy filling is topped with a buttery crumb topping for the ultimate family-friendly side dish recipe!

2 tablespoons butter, divided
4 small yellow squash (about 2 lbs.), sliced ( (about 6 cups total))
1 small onion, diced
1 red bell pepper, diced
½ teaspoon salt
¼ teaspoon pepper
2 eggs
1 cup grated cheddar cheese
¼ cup sour cream
¼ cup mayonnaise
¾ cup crushed butter crackers ((I used 18 Ritz crackers))

Steps:

  • Preheat oven to 350°F. Spray an 8-inch or 9-inch square baking dish with cooking spray and set aside.
  • Melt 1 tablespoon butter in a large skillet over medium heat. Add squash, onion, and bell pepper to the skillet, cooking and stirring for about 10 minutes (or until vegetables are tender). Remove from heat and season with salt and pepper.
  • Meanwhile, in a separate bowl, whisk together eggs, cheese, sour cream, and mayonnaise.
  • Stir the egg mixture into the squash mixture.
  • Transfer the squash mixture into the prepared baking dish.
  • In a separate bowl, combine crushed crackers with remaining 1 tablespoon of melted butter. Sprinkle buttered cracker crumbs over top of casserole.
  • Bake for 30-35 minutes, or until casserole is set and topping is golden brown.

I believe this recipe started out as one my mother got from a church friend. It quickly became a holiday family favorite, as well as an easy to prepare pot-luck dish that our family lovingly refers to as "Squish Casserole". Over the years, the recipe has evolved into what I've posted here... a pinch of this... a dollop of that....

6-to-8 medium yellow squash (sliced ~1/2" thick)
1 medium white onion (chopped)
1 pkg shredded carrots (8-10 ounces)
1 can(s) cream of chicken soup
1 c sour cream
1 pkg shredded sharp cheddar (16 ounces or more)
1 bag(s) herb seasoned stuffing (not cubed!)
1 stick unsalted butter

Steps:

  • 1. Using a large pot with enough salted water to cover, bring squash, onion, & carrots to a boil. Simmer until squash is tender. (Don't let squash get mushy.) Drain all very well using a large colander.
  • 2. Transfer squash mixture either back to empty pot or a large mixing bowl. Add cream of chicken soup, sour cream, & shredded cheese, and stir until well combined. You cheese lovers out there can add more shredded cheese here. I like sharp cheddar, but you can vary here as you desire.
  • 3. Squash can get watery when cooked, so I like to stir in about a heaping cup (or so) of the herb stuffing to absorb some of the "juiciness". It also adds flavor to the mixture. (My sister sometimes adds a beaten egg to hold it all together, but I haven't found it necessary.)
  • 4. Melt your stick of butter in a saucepan and add the remainder of the bag of stuffing mix. Stir until the butter evenly coats the stuffing.
  • 5. Spread squash mixture into a greased 2-Qt. casserole dish and top with buttered stuffing mix. Bake at 350 degrees for 25-30 minutes, until bubbly and top is lightly browned. Remove from oven and enjoy! Serves a crowd--especially if you added larger amounts of squash, cheese, or stuffing.

nonstick cooking spray
10 medium yellow squash, sliced, or more to taste
1 medium onion, thinly sliced
2 large eggs
2 cups shredded sharp Cheddar cheese, or more to taste
1 (6 ounce) package stuffing mix (such as Kraft® Stove Top®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Add squash and onion, reduce heat to medium, and cook until tender, 8 to 10 minutes. Drain all but 1 inch of the liquid and set the pot aside to cool for 20 minutes.
  • Add eggs to the squash-onion mixture and beat with an electric mixer until well combined. Stir in 1/2 of the Cheddar cheese and all but 1/4 cup of the stuffing mix. Transfer mixture to the prepared casserole. Top with remaining cheese and stuffing.
  • Bake in the preheated oven until bubbly, 30 to 45 minutes.

8-10 c sliced yellow squash
1-2 onions, diced (amount depends on taste preference)
1 can(s) cream of mushroom soup
8 oz evaporated milk
1 box ritz crackers
8-10 slice american cheese
salt and pepper to taste

Steps:

  • 1. Cook squash and onions till squash is cooked down and done. (For those unfamiliar with how to cook the squash.....place it in a pot with the onion and salt and pepper, and just do cover with water and bring to a boil, then cut down the heat to simmer until squash is tender, not mushy.) Strain off excess water.
  • 2. Using 9 x 11 casserole dish, butter sides and bottom of dish. Start layering ingredients, beginning with Squash, (add a little salt and pepper to squash prior to placing in casserole dish, if needed) add a layer of cheese, mix together the milk and cream of mushroom soup, and spread it evenly over the cheese, repeat these layers again, then crumble a pack of the Ritz crackers and generously cover top of soup mixture. Dab top of crackers with a few pats of butter.
  • 3. Place in a 350 degree oven for about 15-20 minutes, until golden brown or until it starts to bubble and boil a little around the edges. (You just really want to melt the cheese, and heat it through and maybe brown the top a little) Serve warm or let stand for a few minutes before serving with your favorite meal.

1 onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
4 tablespoons butter
1 cup grated carrots
1 cup shredded Cheddar cheese
2 tablespoons chopped pimento peppers
salt and pepper to taste
1 (.7 ounce) package dry Italian-style salad dressing mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a pot of salted water to a boil. Add squash and onion; cook until tender but still firm. Drain.
  • In a large bowl, mix the squash, onion, cream of chicken soup, sour cream, butter, grated carrots, Cheddar cheese, pimento peppers, salt and pepper.
  • Pour mixture into a medium baking dish and sprinkle the top with the Italian-style salad dressing mix.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes.

3 lbs yellow squash, sliced
1 teaspoon salt
1 teaspoon pepper
1/2 cup butter, melted
1 -8 ounce sour cream
1 (10 1/2 ounce) can cream of mushroom soup
1 cup onion, chopped
1 (8 ounce) package cornbread herb stuffing mix, divided in half
1/2 cup carrot, shredded
1 1/2 cups chicken broth

Steps:

  • Place chicken broth, squash and onions in saucepan.
  • Simmer until veggies are tender, about 15 minutes.
  • Add remaining ingredients except ½ of stuffing mix.
  • Pour into 2 or 3 quart greased casserole dish.
  • Top with remaining stuffing mix.
  • Bake at 350 degrees for 30-40 minutes until bubbly and light brown.

  • Boil squash & onion, then drain & mash in collander to get rid of water. Mix with remainder of ingredients. Top w/crushed Ritz cracker & butter mixture. Bake in greased casserole dish 30 minutes at 350 degrees.
